Homemade English Muffins

We absolutely love these - I will be making my sourdough ones, once my starter is ready to go. (it's almost there!)

Recipe kudos to

-240 ml warm milk
-2 tbsp melted butter
-Tsp of honey or agave
-1.5 tsp dried instant yeast
*Mix the above and let sit ten minutes and then add:
-1 beaten egg

Add wet mixture to dry mixture

Dry mixture:
3 cups flour
1.5 tsp salt

Once well mixed, place on floured surface and knead for about 10 minutes. Stretch and roll into a ball and place in a lightly greased bowl, covered for 1.5 hours. Punch down dough, and place on floured surface. Roll out about 3/4" thick and cut circles with a mason jar lid/ring and place on a corn meal dusted pan - sprinkle more corn meal on top. Cover and let rest about ten more minutes. Preheat your oven to 375 degrees. On a skillet, cook your english muffins on each side, 2-3 min per side and then place back on baking sheet and put in oven for 8 minutes. Let rest for 15 minutes.

Smoked Salmon and Avocado
Tartine with Balsamic Glaze

I found a no knead ciabatta recipe - recipe credits to - it was fantastic. Toasted in a skillet with a little olive oil and topped with smashed avocado, sea salt, smoked salmon, balsamic glaze, and a little dill...

In conclusion, this brought me a bit of joy today.

Crispy Air-Fryer Roasted Chicken Thighs and a Garden Harvest Medley.

Chicken Thighs were seasoned with salt, pepper, onion powder, garlic powder, and chicken rubb - cooked in air-fryer at 380 for 25 minutes.

Garden Harvest Medley included all veggies from out garden: beats, radishes, asparagus, cherry tomatoes, kale, spinach, beet greens, and basil that I infused the olive oil with, along with just a pinch of red pepper flakes, and at the end crumbled over the side dish, and seasoned with salt and pepper.

Such a delicious and lovely win from Nuovo Pasta ♥️

Shrimp, Lemon, and Garlic Ravioli with a creamy shallot and dill sauce and topped with more Seared Shrimp. This was amazinggg. The ravioli was FILLED with the shrimp and flavored goodness. Thank you Nuovo Pasta ♥️

I really enjoyed this Victoria Park South Australian Shiraz made by Yalumba - Its a refreshing red to me. There are a few reds I would choose for the summer time during fire pit sessions, and this will definitely be one of them. I found this one at Total Wine & More in Lee's Summit, MO. - such a fun place to go! 🍷

Summer zucchini and corn chowder 🤝🏻zuppa toscano
Recipe:
Cook diced onion and jalapeño in a Dutch oven in a little olive oil over medium high head. Season with salt and pepper. Add 1 lb Italian sausage cook until browned. Add Italian seasoning and I used some of Penzy’s Shallot Powder. Stir to combine and add chicken broth (and a lil water if needed) and diced potatoes, diced zucchini, frozen corn, a little chicken flavored better than bouillon, and more salt and pepper if needed. Bring to boil and then down to simmer for 25 min. Take off heat and add a little dairy free cream or half and half and stir to combine. Enjoy!

ᴛᴇʀɪʏᴀᴋɪ ᴄʜɪᴄᴋᴇɴ ᴛʜɪɢʜꜱ & ᴅʀᴇꜱꜱᴇᴅ ʀɪᴄᴇ ɴᴏᴏᴅʟᴇꜱ

This was suprisingly a “use it up” meal, using some things we had mostly on hand. It turned out better than anticipated. ♥️

Boneless Chicken Thighs:
Preheat oven to 425 and spray a baking dish with cooking spray. Salt and pepper chicken and brush on teriyaki sauce of choice or soy paste. Bake for 30-35 minutes.

Noodles:
Cook rice noodles per package directions. Drain and rinse in cold water. Place in bowl and dress with tamari and a little sesame oil, and some diced green onion.

Plate your dish and garnish with more green onion, and black and white sesame seeds. Enjoy!

*Would be really good paired with some bok choy!

ᴄʜɪᴀ-ᴄᴏᴄᴏɴᴜᴛ & ꜱᴘɪɴᴀᴄʜ ᴘʀᴏᴛᴇɪɴ ꜱᴍᴏᴏᴛʜɪᴇ

This smoothie was very simple and refreshing. There isn't too much going on but sometimes it tastes good that way... definitely one for the coconut lovers and a good Summer go-to.

Spinach and Chia Seed Smoothie with Coconut Milk and Protein Powder

Ingredients:

- 120g coconut milk
- 20g chia seeds
- 20g frozen spinach
- 30g protein powder (of your choice)
- 1g vanilla extract (optional)
- Ice cubes (as needed)

Instructions:

1. Add all ingredients to a blender and blend until smooth and creamy.
2. Add ice cubes if you want a thicker consistency.
3. Blend again until the ice is fully incorporated.
4. Pour into a glass and serve immediately.

..We love oatmeal...just trying something different.

Ingredients:

- 30g h**p seeds
- 20g flax seeds
- 20g chia seeds
- 120g coconut milk
- 1g vanilla extract
- 1g cinnamon powder

Instructions:

1. In a small saucepan, combine h**p seeds, flax seeds, chia seeds, coconut milk, vanilla extract, and cinnamon powder.
2. Whisk until well combined.
3. Cook over medium heat, stirring constantly, until the mixture thickens and the seeds are soft, about 5-7 minutes.
4. Serve hot and enjoy!

This made about 3 small servings!

Such a refreshing drink… in love with my coupe glassware…

2 oz
1.5 oz Freshly Squeezed Lemon Juice
3/4 oz Simple Syrup
Ice
Lemon Wheel and Mint Leaves for Garnish

Shake all ingredients and strain into chilled cocktail glass. Garnish with lemon wheel and mint leaf.

Ingredients:

- 3 large eggs (175g)
- 20 g spinach, chopped
- 50 g mushrooms, sliced
- 50 g bell peppers, sliced
- 50 g small onion, diced
- 6 g cloves garlic, minced
- 5 g teaspoon turmeric powder
- 5 g teaspoon grated ginger
- Pinch of Salt and pepper
- 15 g tablespoon olive oil
- 120 g mixed berries
- 150 g medium apple, sliced

Instructions:

1. Preheat the oven to 400°F (200°C).
2. In a bowl, whisk together eggs, spinach, turmeric, ginger, salt, and pepper.
3. Heat olive oil in a non-stick skillet over medium heat.
4. Add onion, garlic, mushrooms, and bell peppers. Cook until tender, about 5 minutes.
5. Pour in the egg mixture and cook until the eggs are set.
6. Transfer the skillet to the oven and bake for 10-12 minutes or until the eggs are cooked through.
7. Serve with mixed berries and sliced apple.

Macros (for whole omelette):

- Calories: 589.6
- Protein: 28g
- Fat: 31.7g
- Carbohydrates: 52.2g

For half of the omelette (My own serving)
-Calories: 294.7
-Protein: 14 g
-Fat: 15.9 g
-Carbs: 26.1 g

𝕎𝕖𝕖𝕜𝕝𝕪 𝕄𝕖𝕟𝕦

I used to make weekly menus and haven’t for awhile so here’s mine for next week - always subject to changed, some evenings I’m too tired and things get pushed up most of the time, and that’s okay. But it’s fun to come up with meals and try recipes from different cookbooks. This weeks menu consists of some of my own recipes, some from cookbooks I have filed on my account (my favorite website of all time maybe…) and the five ingredient cookbook by Jamie Oliver (one of my favorite cookbooks!) So many recipes so little time…

𝕊𝕖𝕖𝕕 "𝔹𝕣𝕖𝕒𝕕"... 𝕋𝕒𝕜𝕖 𝕋𝕨𝕠

This loaf turned out MUCH better than my last (the last one was a tad too crumbly. I just had to add a little more hot water this time around) Here is how I made the loaf! Topping options/ideas below as well!

Heat your oven to 375° and oil a loaf pan and place parchment in it.

Here is the recipe with the ingredients listed in grams instead of milliliters:

In a bowl mix:

· 120g Sliced Almonds
· 120g Chopped Pecans
· 60g H**p Hearts
· 60g Buckwheat
· 60g Raw Pumpkin Seeds
· 60g Raw Sunflower Seeds
· 40g Whole Flaxseeds
· 30g Chia Seeds
· 30g Ground Flaxseed
· 30g Psyllium Powder
· 30g Sesame Seeds
· 2.5g Sea Salt

In a measuring cup mix:

· 450g Hot Water
· 22.5g Pure Maple Syrup

Add the water and syrup mixture to seed mixture and mix until it’s a wet dough consistency. If it’s still too dry add just a little hot water at a time until it’s the right consistency. Put into loaf pan and press down so it’s even. Bake 75-80 minutes.

Topping Choices:
I like mashed Avocado and fried egg and also Tbsp Almond Butter, sliced banana, and drizzle of honey and chia seeds!

ℍ𝕦𝕞𝕞𝕦𝕤

2 cups chickpeas, liquid reserved
1.5 tsp kosher salt
4 cloves garlic
1/3 cup tahini
1 half of a lemon, juiced
2 Tbsp liquid from chickpeas (possibly more)
1 Tbsp Olive Oil
Paprika and Parsley for Garnish, if you wish

In a blender, blend everything except the olive oil and garnishments. Once smooth, put into a bowl or dish and drizzle olive oil and sprinkle on paprika and parsley, if you wish. Serve with toasted pita points or veggies of your choice!

I'm gonna have to try this another time or two to tweak a few things before sharing the recipe 😂 The flavor and fiber was there but it was a tad crumbly so gonna make another and play with the consistency better next time. I got a few good slices out of it - Avocado Nut Seed Bread "toast" with a fried egg!
