Oats Puttu: A Nutritious Kerala Breakfast

Today, I made a healthy and simple dish: Oats Puttu, a popular breakfast item from Kerala, traditionally made with rice flour and coconut layers. This dish is filling, even in small portions.

Ingredients:

Oats Flour: 2 cups (grind and dry roast oats)
Grated Coconut: 1 cup
Salt: to taste
Water: as needed
Ghee: 2-3 spoons

Procedure:

Moistening the Flour:

In a large bowl, mix oats flour with salt and ghee.

Gradually sprinkle water and mix until the texture resembles wet sand, holding together when pressed.

Assembling the Puttu:

In a puttu maker (cylindrical steamer), layer grated coconut at the bottom.

Add a layer of moistened oats flour, then another coconut layer, continuing to alternate, ending with coconut.

If coconut is unavailable, this step can be skipped.

Alternatives: Use a clean coconut shell with a hole or a small cylindrical container over a steaming pot.

Steaming the Puttu:

Place the puttu maker on a steamer pot with boiling water.

Steam for 5-10 minutes, until steam escapes from the top and puttu is cooked through.

Remove the puttu using a skewer or spoon.

Serving:

Serve hot with side dishes like bananas, jaggery, sugar, or curries such as chickpea curry or lentil stew.

Tips:

Consistency is crucial: the mixture should be crumbly, not too wet or dry.

Alternative steaming methods: Use an idli steamer or regular steamer with small bowls or molds.

Puttu- A dish that brings warmth in your heart.

Hello everyone, This evening I made another dish; "Oats puttu". A healthy and simple dish taught by my mother in law. This is an extremely popular breakfast item and staple food of Kerala served with a side dish. A unique dish that can fill the stomach with a small portion.

Puttu, a beloved dish from Kerala, features steamed rice flour and coconut layers. It's typically enjoyed with bananas or curry, offering a delightful, wholesome meal. However, we choose oats instead of rice.

Ingredients:
Oats Flour: 2 cups (Grind oats and dry roast in a pan)
Grated Coconut: 1 cup
Salt: to taste
Water: as needed
Ghee- 2-3 spoons

Procedure:

Moistening the Flour: Take the oats flour in a large mixing bowl. Add a pinch of salt, 2-3 spoon of ghee and mix well. Gradually sprinkle water over the flour while mixing it with your fingers. The mixture should be crumbly but hold together when pressed (resembling wet sand).

Assembling Puttu:
Layering: In a puttu maker (a cylindrical steamer), start by adding a layer of grated coconut at the bottom. Next, add a layer of the moistened oats flour, followed by another layer of coconut. Continue alternating layers, finishing with a layer of coconut on top. I did not have coconut so I skipped that part.
If you don't have a puttu maker, you can use a clean coconut shell with a hole in the bottom or a small cylindrical container that fits over a steaming pot.

Steaming the Puttu:
Steaming: Place the puttu maker on the steamer pot filled with boiling water. Steam for about 5-10 minutes or until you see steam escaping from the top of the puttu maker and the puttu is cooked through. The cooking time may vary slightly depending on the size of the puttu maker.
Serving: Once done, gently push the puttu out of the cylindrical mold using a wooden skewer or the back of a spoon. Serve hot with side dishes like banana, jaggery, sugar, or curries such as chickpea curry or lentil stew.

Tips:
Consistency: The key to good puttu is the right consistency of the rice flour mixture. It should not be too wet or too dry.

Alternative Steaming Method: If you don't have a puttu maker, you can use an idli steamer or a regular steamer by placing the flour and coconut mixture in small bowls or molds and steaming them.

-Wash and soak these grams in water overnight.

-Drain the water and cover the grains in a strainer pot or tie them in a wet cloth for two days, sprinkling water occasionally until they sprout.

- In humid areas, no water sprinkling is needed, and sprouting occurs within a day or two. In non-humid areas, it may take more than three days or up to a week.

Hello Everyone,

I wanted to cook something simple for my maternal family and remembered upma, a dish often made by my in-laws. This South Indian staple is more than just breakfast; it’s a comforting bowl that brings back memories of home and warmth. Making upma connects me with tradition and the joy of creation, celebrating the love and effort in the cooking process. Ultimately, it brings people together, evokes cherished memories, and offers a profound sense of belonging.

It's an easy to make dish and the ingredients and procedure to it are:

Ingredients:
Semolina (rava)- 1 cup
Oil - 2 tbsp
Small mustard seeds - 1 tsp
Urad dal - 1 tsp (optional)
Curry leaves - 10 to 15 leaves or two thin stems full of curry leaves.
Chopped green chillies - 2 nos (optional)
Chopped small carrots - 2 nos
Peas - 1/4 cup
Water - 2 and 1/2 cups
Salt - to taste
Chopped coriander- for garnishing (optional)

-Dry roast 1 cup of semolina (rava) until it turns golden, then set aside.

-Heat 2 tbsp oil, splutter 1 tsp mustard seeds, and sautΓ© 1 tbsp urad dal, curry leaves, chopped green chilies, peas and carrots.

-Add 2 and 1/2 cups water, salt to taste, and bring to a boil; gradually add roasted semolina, stirring continuously.

-Cook until the semolina absorbs the water and reaches the desired consistency; garnish with chopped coriander and serve hot.

Hope you are doing well. I am posting this blog after 3 years. I was going through some difficult times in life, and the only thing that gave me some relief was cooking. Later, I found out from some books on cooking that it is a wonderful stress reliever, offering a break from daily pressures and providing a sense of relief from depression.

The process of preparing a meal engages the senses and focuses the mind, promoting mindfulness and relaxation, ultimately alleviating depressive symptoms. Whether following a recipe or improvising, the act of cooking provides a rewarding outlet for creativity and a delicious end result to enjoy, further enhancing one's mood and mental well-being.
