LAUNCHING BEE A CHEF 🐝

KIDS COOKING SCHOOL TERM PROGRAM STARTING THIS FEBRUARY 2023 πŸ‘©β€πŸ³

It gives me great pleasure to announce πŸ“’ our new kids 9 week cooking program.

This is for all school aged children who want to learn the basics in cooking.

Location: Alstonville

Ages: 6-13yr olds

Dates: 7th February-4th April

In this program the kids will learn;

-Basic knife skills
-Weighing, measuring using scales, measuring jugs and measuring spoons
-To use a range of kitchen equipment
-Food health & safety
-Storage,labelling and dating food
-How to prepare nutrient dense foods
-Create healthy Lunchbox snacks
-Use food from our garden

We see the importance and impact of eating healthy food on the body and all dietary needs are catered for.

This will include a cook book of all meals prepared at the end of the 9 week course.

No skills required, this is our level 1 program designed for the basic to intermediate cook.

We would love to have your children learn new skills , work in groups, make new friends and master the kitchen.

CHRISTMAS QUINOA AND NUT LOAF πŸŽ„
HO HO HO πŸŽ…



Serves 5-10 with other dishes
(1 -2 slice per serve )

Recipe :

1 cup cooked quinoa
1 cup cashew nuts
2tsp sunflower seeds
6 tbs rice crumbs
5 dried dates
5 dried apple
2tbs raisins
1 tbs dried basil
2tsp sea salt
2tbs paprika
1tbs ground cumin
1tbs turmeric
2 shallots fine diced (white only)
1/2 tsp white pepper
2 garlic cloves
1tbs apple cider vinegar

20 Raw beans fine dice
20 fresh cherries sliced

Method:
Mix Put all ingredients together , (except beans and cherries ),
Blend in a few batches . Then fold through cherries and beans.

Spray with olive oil, then place into a bread loaf shaped tin, mould into shape and bake at 180 degrees Celsius for 1hr 15 . Check with skewers to see if dry enough before removing from oven.
Can be cooked and served cold or preheated and served hot.

Meet Daniel - Part Time Cookery Hospitality Teacher at Wollongbar TAFE NSW campus.
When did you decide to become a chef?
Ever since i was a kid I loved cooking so as soon as I could leave school I headed up to the big smoke and got a job at the Hilton Hotel in Sydney where I started my apprenticeship and before I knew it I had landed a job at Luke Magnan flagship restaurant Salt in Darlinghurst a two hatted restaurant, after my trial shift at Salt I got asked to come back the next day and we cooked with Jamie Oliver in the kitchen for a book launch and I got the job, ever since then I have Inspired others to follow their passions.
The other reason was I had food allergies as a child, so I was always experimenting with different flavours and foods to make them taste good.

What is your signature dish?
Vietnamese chicken roulade with pickled veg and Warringal green aioli
Spinach and Mushroom raviolis with grilled corn, field mushroom and cashew nut butter.
Maple syrup tart with whipped coconut and lime cream

What is your favourite cuisine to cook?
Spanish, Moroccan, Mediterranean and South East Asian,

Is there a chef you admire the most?
Rick Stien, Luke Magnan, Tetsuya's, David Forster

1997 -September the day I started in the kitchen the best decision ever

What is your favourite or least favourite dish to prepare?
Favourite dish - paella (I just love the process in a really big pan)
Least Favourite dish - Stinging nettles soup ( great flavours but they can be painful if you don't know what your doing)
What are 5 kitchen ingredients/tools you can’t live without? Mandolin, peeler, salt, olive oil, good fresh produce, herbs

One piece of advice you have for upcoming Chefs....
When you step in a kitchen don't lose yourself, instead be proud of who you are and always have a notepad in your back pocket. Turn up on time, with a smile and if you work hard you can achieve anything you set your mind too.
Find a mentor as a chef and someone you want to inspire to work with or learn from.
Keep finding things that keep you balanced outside of work like sports and hobbies.
Work hard, and find your true passion and it won't feel like work at all.

FEEDING THE HOMELESS

Helping hands project πŸ™Œ

It was such a blessings to be part of a community program to raise awareness and provide training in how to feed the homeless of Kyogle.

Homelessness has become a big problem in the region with the price of rent, food and covid causing people to become unemployed.

Other issues like mental health are a big factor too.

In Kyogle I helped train a group of volunteers to understand about food safety and how to run a kitchen to ensure food was nutritious.

It gives me hope to see community supporting each other & we need to see more of this in our region.

If you want to help support the homeless in your area;

1. you can donate your food to a local food bank.
2. Give extra clothes, sheets abd blankets to a local
3. Volunteer at a local soup kitchen
4. Raise money to support your local
soup kitchen
5. Offer your skills for free

Mental health awareness is so important in these times & ensuring our community stay together and support each other is essential, not divided.

Looking back to when domestic travel 🧳 was still possible & catering with my good friends who were voted best caterer of the year in Melbourne.

It’s hard to believe what has happened to the hospitality industry in the last 18 months with business forced to close due to the continuing changing laws of lockdown, many out of work, it has crippled our industry and many others.

It’s time we reunite to support local small business, to shop local and buy from your local restaurants, cafes, farmers markets and in the end supporting another small family like you.

To our cafes, restaurants, produce suppliers and small business it’s time to get creative and use your business through online channels to self your products and keep yourself afloat.

I do hope we can have a break from the continuing changing laws and restrictions in the near future like over in Europe and other parts of the world but untill then, keep the flame alive and be creative in your business, offer takeaway, delivery, meal Subscriptions , online cooking lessons, update your menus , or anything that is possible .

At a recent retreat I served this traditional Auyvedic dish after sunrise yoga.
It naturally detox’s the body & is used to balance’s the three dosha vata, pitta and kapha.
Helping to provide nourishment to the body and cleansing the body while providing wellbeing to the soul.

The effects of eating this gut healing dish are quite beautiful, while it delivers the probotics, it’s also full with minerals, rich in iron, protein and fibre.
