-Start with a base of Air fried potato rounds
-Layer on loads of seasoned water sautéed veggies (I did onion, peppers, mushrooms & zucchini with garlic & Italian seasoning)
-Then top it off with oil free marinara, cheeze sauce (I made my cashew cheeze from my vegan cheesesteak recipe on the blog) & sliced olives & basil

Still our favorite pancakes after all this time! My family is still obsessed with these banana oat pancakes! They’re light, fluffy and so easy to make.
Considering pancakes are one of the main sources of food for my 7 year old, I love that I can add a bit bit more nutrition into these than your basic pancake. 😍

It’s my favorite time of the year!!! Tomatoes are doing super well after a sad harvest last year and I’m SO happy.
My biggest tomato this year was 1lb15oz but i forgot to grab a pic before i ate it!
