Smoky and spicy 🌶
Mexican Grilled Chipotle Chicken

Bathed in the most flavorful marinade. Grill or Oven bake the chipotle chicken ahead and reheat on busy weeknights.Serve it up with Mexican Slaw or use in a healthy bowl, or salads, tacos, or pasta.

Chipotle Marinade:
(4 chicken breast)

¼ cup olive oil
2 chipotle peppers (canned) plus 2 tablespoons adobo sauce ( juice from can)
4 garlic cloves
1 green onion (2 shallot)
1 ½  tablespoons cumin
1 tablespoon coriander
2 teaspoons chili powder
1 teaspoon dried oregano
1 teaspoon paprika
2 teaspoons salt
Garnish: lime juice and cilantro

- Place marinade ingredients in a food processor and process into a paste ( see pic for reference) Place the chicken and marinade in a ziplock bag and massage well to mix and coat all sides well. (Or brush all sides well with marinade.
Marinate in fridge for a min 20 mins or up to 2 days.

- Preheat oven to 425F
Bake a total of 30 min. Flipping it half way through.
-Broil on high an additional 3 min. For extra crispness and colour.

☀️Can’t wait for Spring? ❄️ Winter is just dragging on? Mango Lover?? Me Too!! 🥭

Here’s a quick Mango salad recipe that always brightens up my day and table!

👇
2 mangoes (firm but ripe. I used red)
Half red onion. Half red bell pepper. Julienne or however you like.

Chopped cilantro, parsley about 1/2 cup. chilli pepper flakes, brown sugar, garlic powder 1/2 tbsp each. Salt & blk pepper to taste.
Mix in a bowl W/ splash of lime juice and drizzle of olive oil.

Enjoy with a salad, tacos, as a side, it’s a tasty and colourful addition to any meal.

One sheet pan Salmon and veggie
With an Apricot marmalade glaze

Pre heat oven to 425f

Glaze - Apricot marmalade (orange, plum can be used as long as it’s sweet) Tbs ginger powder. Chilli pepper flakes. Rosemary, salt & pepper, drizzle olive oil. Set aside.

👉 On a pan sheet add your salmon fillets with veggies of choice (preferably that will cook in the same time frame as salmon) broccoli, mushrooms, baby carrots.
Sprinkle w/ salt & pepper, olive oil. Bake for 15 min.

Remove from oven brush glaze on fillets and broil on low for 5-8 min.

Serve with a side of rice, noodle of choice. Enjoy! 😋

Sweet & Spicy Shrimp

Shrimp (400g) deveined, she’ll on.

Season shrimp w/
Salt & Pepper
Paprika
Chilli powder
Green seasoning
Bay leaf
Garlic gloves minced
(Set aside about 5 min)

Veggies:
1/2 red onion. 1/2 red & green bell pepper. Green onion and parsley to garnish.

Method:
Sauté red onion, bay leaf, peppers in olive oil.
Add seasoned shrimp with 1/2 cup of white wine or broth of choice.
Bring it to a boil, add 1 tbs of butter.

Served over basmati rice. 😋

- 1/2 green & red pepper
- bay leaf.
- Salt/ Pepper

~ Spicy Thai Chilli Tuna Wraps ~

Friday Night!
Let’s “Wrap up the week 😊”

How I made these:

2 cans of tuna in water, drained.
1 cup of cold cooked jasmine rice
1/2 large carrot shredded
1/2 cup green onion
3 tbsp mayo
3 tbsp spicy Thai chilli sauce
1/2 tbsp soya sauce
Garlic powder & black pepper to taste. Mix it all together.
Spinach flour tortillas
Shredded cheese (marble)
Fill the tortillas wraps with tuna mixture, add cheese. Broil 3 min or until cheese is melted. Sprinkle chilli powder and it’s ready to eat!

~ Shrimp Cabbage Stir Fry ~

< Shrimp seasoned with fresh herbs, curry powder, all season salt, black pepper, chilli flakes.


< Stir fry shrimp in olive oil, set aside. Add your veggies, cook until tender crisp, stir your shrimp back in and enjoy! A quick easy delicious meal 😋

A delicious meal from my kitchen today ☺️

Quick, easy and so good!
Leftover rice and veggies. Sauté some shrimp and dinner is served!

Meatball dinner
With a mushroom, onion and peas gravy over mashed potatoes.

How I made this delicious meal:

Lean ground beef
Seasoned with salt & pepper, oregano, Dijon mustard, chilli powder and Italian seasoned breadcrumbs.
Meatballs baked at 425 F for 20 min.
Gravy:
Sauté sliced mushrooms with onions in butter with salt pepper. Mix in flour then adding peas and beef broth. Bringing it to a simmer.
Add baked meatballs to gravy.
~ Served on a bed of mashed potatoes with a side of broccoli and green salad with raisins and nuts with balsamic dressing.

Spanish chorizo tortillas

Fun & Delicious meal for a sunny Friday

Recipe & ingredients

1 Spanish chorizo (I used mild)
Boil for 10 min & remove casing
Heat olive oil in skillet sauté chorizo breaking it into smaller pieces, 5 min or so
Add bell peppers, green, yellow, red.
Large yellow onion.
Salt& pepper, garlic powder, smoked paprika, cumin, brown sugar, red pepper flakes. Sauté all until veggies are crisp.

Served on tortillas topped with sour cream, cheese and salsa.

Thai chicken soup
Quick recipe for today

For this recipe:
1 box Campbells Thai chicken broth
1 cup Campbells chicken broth no salt added
4 chicken thighs boneless & skinless
Cut in small bite size
2 cups mushrooms
2 cups spinach
Half red onion diced finely
Tbsp ginger grated & 1 of garlic
vermicelli noodles
1 scotch bonnet seedless or chilli pepper and green onions to garnish

Method:
Season chicken w/ salt & pepper set aside
Heat olive oil in a stock pot, add red onions, mushrooms, ginger and garlic along with chicken.
Add your broth bring to a boil, simmer until chicken is cooked through. Add pre cooked noodles as per instructions.
Last add spinach, chilli pepper and green onions. Hot sauce to taste.

~ Chicken Dinner, always a hit at our house ~



Chicken; marinate for two hours or more. I like to leave it overnight. You can use any cut of your preference. I used a whole chicken cut in half’s then quartered.

Marinate/Seasoning:
1 cup white wine
Olive oil 1/2 cup
Tbsp smoked paprika
Tbsp brown sugar
Tbsp oregano
Tbsp piri piri hot sauce
2 tbsp pimento paste
Salt & pepper to taste

Braise the chicken on a hot skillet with a drizzle of olive oil until browned on both sides 8-10 min per side or so.
On a shallow roasting pan add olive oil, slice yellow onion, green onion and garlic gloves ( this will make a savoury sauce)
Place chicken on top of onion bed and bake at 425 F 45 min

Served with mashed potatoes and a green salad.

~ Panko - Crusted Salmon ~

Quick and delicious dinner tonight.

Check out my recipe👇

4 salmon fillets skin on
Season fish with salt & pepper
In the meantime Heat oven to 425F
Heat cast iron skillet (or oven safe pan) with 4 tbs of oil

Panko crumbs Mix:
2 cups of Panko, zest of a lemon, fresh thyme and parsley, salt & pepper, mix all in a bowl with olive oil as needed. Mixture should be moist.

Garnish salmon fillets skin side down, with Dijon mustard add breadcrumbs on top.

Sear salmon skin down on skillet for 3 min. Transfer to oven for an additional 7 min. And done!
You can leave it in the oven a little longer for additional crispiness of the crumbs topping.

I baked sweet potatoes at 400F drizzled in olive oil salt & cumin, chilli flakes for about 45 min. Adding chunks of pineapple in the last 5 min.
Served with coleslaw and sauté spinach.

~ Taco Tuesday... Stacked Tortillas 🤷🏻‍♀️ sounds good to me ~

Mexican beef & veggie tortilla stack.

Ingredients:

Lean ground beef
Flour Tortillas
Can black beans (refried)
Carrots (1 shredded)
Can of salsa
Sour cream
Lime
Shredded cheddar cheese

Recipe👇

Heat pan medium high heat w/ 2-3 tbs olive oil
Cook meat add carrots and seasoning: kosher salt, blck pepper, cumin, smoked paprika, onion powder, garlic powder cayenne pepper, brown sugar ( optional)

Tip: I use these ingredients for chicken fajitas, adding cornstarch and water to thicken 👌

Stir it all together adding a little warm water as needed or beef broth. Add beans last.

Tortillas:
Stack them in 3 or 2
Fill tortilla with meat filling. Salsa, cheese and repeat. Sprinkle cheese on top of the last on Heat in oven @ 425 F until cheese is melted.
Top it with sour cream salsa and juice of lemon , green onions, cilantro and Enjoy!

~ Oven baked chicken breast with
Gnocchi in a pesto sauce.

Check out my recipe below 👇

- Chicken breast
- Gnocchi (I used 500g) 1 package
- Green string beans
- Italian seasoning, salt & pepper, chilli power.
- Pesto sauce, Parmesan cheese for topping.
I made coleslaw as a side; with cabbage, zucchini and carrots, dry raisins and nuts.

- heat oven to 425 F
Season chicken with salt, pepper, chilli powder and Italian seasoning.
Sear chicken 2-3 min per side on a hot pan with olive oil (4 tbs)
Bake fo 13 min.

Gnocchi: same pan, sear until browned add more olive oil if needed or butter.
Simmer green beans, add to gnocchi with pesto sauce 2 tbs of butter, warm it through bringing it all together.

Serve with your chicken and coleslaw, drizzle Parmesan cheese and Enjoy!

Was in the mood for soup 🥣

~ Pumpkin seafood soup with a hint of curry ~

2 cans pure pumpkin
4 cups vegetable broth
1/2 lb shrimp peeled tails on
3 sole fish fillet

- Season shrimp and fillets w/ salt & pepper. Cumin, red pepper seeds.
Sauté in a little butter put it aside.

In a soup pot add olive oil, small onion 2 gloves of garlic sauté. Add curry powder to your liking (I used a medium heat)
Add the pumpkin pure, vegetable broth bring to a boil.
I added 1 cup of fresh spinach and 1/2 cup of Angel pasta. Add your shrimp and fish and simmer to bring everything together.

Served with crusty bread... Delicious!

~Pasta night ~

Spaghetti & meatballs
Check out the recipe 👇

Meatballs seasoning:
Lean ground beef
Oregano, basil, Italian seasoning, garlic powder Salt & Pepper
1 egg, bread crumbs (I used Italian seasoned)
Bake meatballs at 400 F fir 15-20 min.
Meanwhile for the sauce:
Sauté fresh parsley, fresh basil, garlic in olive oil. Add 2 cans of crushed roma tomatoes bring to a simmer to make your sauce. If it thickens too much I add a little chicken broth or water from cooked pasta.
Add your meatballs and bring it all together. Serve topped with grated Parmesan.
I paired it with a side salad using a yogurt dressing; savory dill.

~ Cod fillets & Shrimp ~

Broiled in the oven

marinate/seasoning:

1/2 cup of dry white wine. Olive oil.
Cumin, white pepper, red pepper sauce, half of a lemon juice.
Salt & Pepper.
Cherry tomatoes halved. 1 onion chopped roughly. Parley, green onions. Broil at Medium high heat for 25 min. Add a little butter or olive oil and broil for an additional 5 min.

( I didn’t peel the shrimp for this dish, but it will also work with peeled shrimp and any fish fillet of your choice)
I broiled pineapple slices separate.

Lamb burger ~
A tasty alternative to beef 👌

Check out this quick recipe 👇🏼

Ground lamb. Seasoned with fresh oregano, small shallot, garlic powder salt & pepper, cumin and chilli powder.

Pan fry your patties (6-8 min per side) longer or less depending on how you like your meat.

Dressing for the bun: mix feta cheese, mayo salt & pepper, chilli powder, honey mustard.

I added some oven baked fries and salad as a side 👌 Dinner is done!

Seafood night 🍽

Shrimp Scampi my way 👌

~ A family favourite that comes together in just 30 min. ~

Recipe:
About 1 lb of shrimp, peeled and deveined. Season with lemon juice (zest half for sauce) Red pepper flakes salt & pepper to taste.
Sauce:
Heat olive oil in pan. Add shallot, green onions, parsley, cherry tomatoes, zest of the lemon sauté.
Add: shrimp
1 cup of white wine ( drink half use the other half 😜)
Bring to a simmer. At this point I add 1/2 cup of the water I cooked the pasta in. Add your pasta to the pan and Enjoy ☺️

I used spaghettini but you can use any pasta of your choice.
