Creamy Baked Spagetti
Ground meat or shredded chicken. Spaghetti cooked & drained
2 jars Pasta sauce.
1/2 block Cream cheese.
1/2 16oz container Sour cream.
1 bag Italian sprinkle cheese
Shaker Parmesan.
Microwave cream cheese 30 seconds or until soft. Mix 1/2 stick with 1/2 small container of sour cream, add half bag of sprinkle cheese & 1/2 cup shaker Parmesan. Mix all ingredients & put in baking dish. Top with sprinkle cheese, spray aluminum foil with oil or rub with oil to keep cheese from sticking. Cover. Bake 30 minutes at 350 covered. Uncover & cook at 375 for 15 minutes.
Christmas Breakfast Casserole
1-roll Sausage-cooked & drained
1- can whomp em biscuits- cut into 6s
6- eggs beaten
1-bag sprinkle cheese
1- pkg white gravy mix prepared
Layer cut up biscuits in bottom of 8x12 casserole pan. Sprinkle cooked sausage over, add 1/2 bag cheese, pour beat eggs, top with prepared gravy. Bake 30-45 minutes at 365. Check often.
Chicken & Dumplings
Two cartoons chicken broth
1 medium onion
1 bunch celery
1 bag shredded carrots
1 pack boneless chicken thighs (8)
1 can cream of chicken
1 can cream of celery
1pkt onion soup mix
3 cans Kroger southern style biscuits with butter.
1/2 stick butter
1/2 cup heavy whip cream
Salt/Pepper to taste
Cook chicken in broth with diced onion & celery, salt pepper. (30-40 minutes on low)
Take chicken out & let cool then dice & add back.
Add cream of chicken & celery , onion soup pot & two cans water.
Let simmer 30-45 minutes
Add carrots.
Roll out biscuits in a dusting of flour. Cut into squares.. maybe 12-15 per biscuit. Add to the pot one biscuit at a time ( this is the most time intensive part)
Push dumplings to the side when it gets close to full. No stirring… only pushing them down and to the side.
Add 1/2 stick butter & cream at the end. Salt & pepper to taste along the way.
It takes maybe 3 hours total ish. Once you add the dumplings they cook pretty fast. This is also a big pot.. you could halve it but I don’t know how to cook small 🤷🏼♀️
Chicken Enchiladas: in a 13x9 pan buttered pan
Ingredients:
cooked shredded chicken (4 breast or 1 rotisserie chicken)
2 cans enchilada sauce
2 pkts taco seasoning
1 large jar salsa
16 oz shredded taco cheese
1 onion chopped fine & lightly sautéed
1 bag frozen corn
1 can black beans drained
1 can refried beans
2 heat & eat pkts Spanish rice
20 tortillas
16 oz cheese dip
Cook & shred chicken add one cup water & taco seasoning pkts. Add onions cook until tender.
Combine ½ jar salsa, corn, black beans, rice in a bowl
Use tortillas 1 at a time & add layer of refried beans, spoon of salsa mixture, spoon of chicken mixture, shredded cheese, roll it up, and place seam down in the pan. Continue until finished, top with enchilada sauce, shredded cheese. Cover in foil and cook at 370 for 25 minutes.
Uncover, pour heated up cheese dip over top, and cook at 350 for 15 more minutes until golden & bubbly.
