Hi all! I just wanted to let y’all know that I am officially open for the 2024 season. I’m available for catering for 50-1000 people. I can do birthdays, anniversaries, graduations, special occasions etc and my current menu consists of:

Other meats and sides are currently in RnD (1-7 year process) but I can do custom orders that are not above just lmk.

Last time I cooked it was 6 years ago, coz the Fiji imported Chili sauce is rare as hell.

Tomorrow is my last day BBQing for the hood until probably Thanksgiving, so I’ve decided to make it a special inflation busting, EXCLUSIVE pork rack of BABY BACK ribs day. You will get it at COST. $20 for a whole rack. +$5 if you want some sausages too.
And I know how expensive fuel still is, so I will deliver to your door for FREE. Delivery options are 12-1pm or 5.30-7pm only.
Again, this is for tomorrow WEDNESDAY 5th October, BUT YOU MUST PRE-ORDER by 8pm today. This is a pre-order sale only. If you don’t pre-order I won’t have any extras available.
Btw full racks will come uncarved, intact, and still wrapped in foil. No sides tomorrow though (sorry).
For anyone who cant handle a full rack, I can do 4 ribs + sausages for $15, just ask for the rib combo.

A common mistake among new backyard BBQers, when they see their brisket look like this, they think it’s done….. brah, you’re literally only half way there. You’ve still got a ways to go. Cook it low (temp), cook it slow (don’t rush it). There is a very tiny window where the meat goes from tough to soft to tough again. The only way to consistently and accurately identify that window is a temperature probe, inserted as late as possible, and only once.
Figure out what that pull out temp is and you’re
off to the races!

Absolutely without a doubt one of the best in Texas. I have been here a handful of times, and I have never had it this good, ever. Absolutely phenomenal BBQ and food. Flawless, from the meats to the sides, every single one of them a straight 10/10.
Line is long but the wait isn’t!!! Their serving system is second to none, with meat getting carved right in front of you at the registers being one of the best parts.
These guys are real masters of their craft, from the servers to the cooks, and quite frankly, a thousand miles better than Franklins. Very highly recommend.

Rudy’s brisket and pulled pork doesn’t even come close to the Scallywag’s, but hot damn, if their absolutely amazing green chili stew isn’t the best tasting thing this side of Texas. Thanks El Paso!
Daddy got another Pit…. Drove all the way to Houston for it. This baby gator is 1/3 the size of my current rig but can smoke 3x as much meat. I don’t think I will ever run out of pit real estate now with this bad boy.
Will clean it up and season it this week as I figure out how she blows.
It compliments my Warthog quite nicely too. The absolute perfect pit for those quick neighborhood plunders. Awww yeah, be in and out before your favorite Karen calls the HOA!

Stopped and had lunch here yesterday with the family. Great little BBQ joint with live music and even had a craw fish boil going on.
Brisket was good. Ribs were better. Excellent and friendly service, really good atmosphere.
Scallywag scores it 6.5/10 for the cue, 9/10 for atmosphere.
A’hoy there me fellow Liberty Hillians. Cooking for a big 150 mouth wedding Sunday, but smoking 3 days straight Saturday-Monday. Lookout for Pirate 🏴☠️ Plates all weekend.
Another successful cook for a very friendly group of people in Liberty Hill. 100+ people fed and happy.
We cleaned up 5 Briskets, 3 Pulled pork, 2 pork tenderloins, 10+ ribs, 40+ sausages, 1 pork belly, and double serving of potato salad. Also had mac and cheese and beans, the usual pirate flare.

Did our first wedding today. Congrats to Mr and Mrs Murray!
Had an awesome cook this weekend for an amazing event within the community of Santa Rita Ranch in aid of a fellow resident who lost her husband.
The blessed rig smoked 6 Briskets, 20 Pork ribs (baby backs, st louis and also some spare ribs), 4 pulled pork shoulders, 1 slab of pork belly, 1 pork tenderloin, 30 sausages. For sides I made potato salad (30 pounds of potatoes), huge tray of baked beans and 2 huge trays of creamy mac and cheese.
Hundreds of people fed and happy, and one very tired Pit Master.
Thank you all for coming out, waiting in line, and supporting Sarah.

The Scallywag 🏴☠️ Smoker will be making an appearance Christmas week as I smoke up some presents for friends and family.
This should be good news for some of you who are needing your Scallywag 🏴☠️ Fix™, because this means I have some space on the smoker for some Pre-orders for friends, family and Scallywag family only (you).
The available delivery slots are:
- December 24th Dinner 5-7pm.
- December 25th Lunch and Dinner 1-7pm.
- December 26th. I MAY open up the 26th based on what I have left, and how busy the previous days are, for anyone who missed out. This will be based on order demand and meat supply.
Weather permitting I will possibly also do the following days:
-December 30th. Dinner 5-7pm.
-December 31st. Lunch and Dinner, and News Years Celebration 1pm-12am.
Here are the order options/menu, and prices include delivery to your door:
1. The Ranch famous PIRATE PLATTER. This includes Brisket, Pork ribs, Pulled pork, sausages and or meat candy, based on supply. 3-4lbs of the BEST BBQ you will ever have and should comfortably feed a family of 4. $40.
2. Add Pork Ribs to any PLATTER $25 for a full rack. Specify Baby back, St Louis, or Chefs choice.
3. Add sides. You can choose any or all of the following: Baked Beans, Creamy Mac and Cheese (New and improved), Potato Salad (NEW - it's goood), Possibly some Coleslaw if I get time. $10
4. Special Orders (LIMITED): Whole USDA Prime Brisket 12-20lb $100-$120, Whole Pork Butt (Pulled Pork) $50, Pork Ribs $30.
Fyi, cook times are 24 hours for brisket and pulled pork, 7 hours for ribs. Smoked low and slow, like only a Scallywag 🏴☠️ Smoker can ;). Real wood. Real smoke. Real good BBQ.
FIRST COME FIRST SERVED. Limited to 20 Platters per calendar day. Special Orders 2-3 brisket slots, 2-3 pork shoulders per calendar day. This cook is for LIBERTY HILL and SRR only.

I have 8 briskets smoking right now. Will see if I can have 10 done before the full moon is over. Got some 20 pounders in there too.

Earlier this week I received a tour of the HUGE Fox Smokehouse BBQ joint in Boulder City, Nevada.
They had the biggest pit I’ve ever seen. It was a rotisserie pit the size of a small bedroom, and could probably cook a hundred ribs at a time.
It was heated by a huge gas powered blow torch in a separate compartment at the back, where you also throw in your wood. They smoked with Hickory.
I tried their Beef ribs that had just come out of the oven, brisket, pulled pork, and their poutin. Ironically the poutin was way better than their BBQ, and I would definitely go back for that.
Hands down one of the biggest BBQ restaurants I’ve ever been to and the service and hospitality was excellent. Definitely worth the stop.
