Multi Grain Dosa
Ingredients
Moong dal 1 cup
Rice 1 .5 cup
Urad dal 1 cup
Chana dal 1 cup
Curry leaves
Salt
Oil or ghee
Method:
Soak all the grains over night. Make fine dosa batter add water as per the required consistent.
Add salt as per the taste and finely chopped curry leaves . Prepare Dosa and serve with coconut chutney or tomato chutney.

Panner kolhapuri masala with Malabar roti
Ingredients
Panner
Cinnamon 2
Clove 8
Jeera 1spoon
Coriander seeds 2 spoon
Butter
Tomato 2
Onion 2
Chilly 2
Beans few
Carrot 1
Bay leaf 1
Ghee
Fenugreek seeds
Dry chilli
Poppy seeds
Cashews
Ginger
Garlic
For dry masala
Fry all the coriander seeds,jeera,clove, cinnamon, Fenugreek seeds, cardmom, cashews, poppy seeds, dry chilli. Fry till you get the fragrance. And make fine powder of it.
Wet masala
Fry the tomato, onion,green chilli ginger and garlic fry till it is transparent and grind n make fine paste
Final method
Take a pan, put ghee and butter, fry the panner till it become crisp. Then put all the dry n wet masala in the same pan . Put all the beans n carrot finely chopped.
Cook for about 15 min on medium flame.

Chicken dum biryani
Ingredients
For masala,
Cinnamon 3 big sticks
Clove 10 to 12
Cardamom 2
Pepper 1 t spoon
1 big onion
Handfull of coriander and mint leaves
Ginger 3inch
Garlic 2
Make a fine paste of it
3 tommato pure
Other ingredients.
2cup soaked rice
500 gram chicken
Lemon 1
1/4 cup curd
Kasuri methi
Garam masala 1 spoon
Biryani masala 2 spoon
Salt for taste

Method
Keep one big vessel, add 2 spoon oil and 2 spoon ghee. Next put 2 finely chopped onion, fry till transparent, next put kasuri methi, 500 gram chicken, salf and cook for 5 min
Next add tomato puree and cook again for 5 min
Next add the grinded masala, garam masala 1 t spoon and 2spoon of any biryani masala , one whole lemon juice, 1/4 cup of curd. Mix well for till it boils.
Once the water start boiling . Check the salt as required. Then pour the rice. Cook about 15 min on medium flame.
Meanwhile the rice is cooking. Place a pan on stove heat it on a low flame. Once the rice is half cooked(75%) then place a lid on the vessel and keep the vessel on the pan . Keep some weight on the lig so that it should air tight.
Cook it about 15 min on the dum.
Open the lid and mix it well
Chicken Dum Biryani is ready to eat.
Chilly Garlic Chicken
Ingredients
500 grams fresh chicken
Chilly 7 to 8
Garlic 1 while
Garam masala
Jeera powder
Pepper powder
2 big onion finely chopped
Coriander leaves
Curry leaves
Salt as per taste
2t spoon cooking oil
Pinch of turmeric powder
Procedure
Take a pan put 2 tspoon of oil. Fry the garlic n onion till it turns to golden n transperent
Next put all masala, salt, turmeric, chilly , coriander leaves, Curry leaves fry for 2 min. Then put the the chicken. Fry for 2 min and close the lid.
Cook the chicken in medium flame for about 25 to 30 min.
The chilly Garlic Chicken is ready to serve
Today's Special: Chicken Tawa fry
Ingredients
500 grams boneless chicken
1.5 t spoon chilli powder
1.5 t spoon garam masala
Half spoon turmeric
Kasuri methi
Salt as per the taste
Curd 1 cup
1/2 t spoon lemon juice
Method
Take a bowl , put chilli powder,garam masala,salt, curd,kasuri methi & turmeric. Mix it well.
Next put the boneless chicken into the paste n mix well. Marinate it for an hour in fridge.
Now take pan and keep it on a medium flame. Put butter or Ghee. Shallow fry the marinated chicken
Chicken tawa fry is ready to serve.

Breakfast - Aalu Paratha
Ingredients
500 grams boiled Aalo
1t spoon chilli powder,
1t spoon garam masala
1t spoon jeera powder
Salt as per the taste.
Coriander leaves
Wheat flour
Butter or Ghee
Recipe
Take a bowl and mash the potatoes. Next mix the masala items and salt as per the taste and coriander leaves and prepare the stuffing.
Make a dough out of wheat flour. Make small balls of it. Fill the stuffing and prepare paratas . Keep fry pan on medium flame n shallow fry the paratas .
Hot hot Paratha are ready to eat. Serve with chilled curd with light sugar n sprinkle jeera powder on it
Mutton Kheema balls fry
Mutton Kheema Curry
Ingredients
Mutton Kheema ( I have used home made Kheema)
For masala
Ginger,garlic, coconut, coriander, cinnamon,clove,chardmom, onion and tomato.
Salt
Chilli powder
Turmeric
Chickpeas
Oil
Recipe
First grind all the masala items mentioned above.
Next add little grinded masala, chickpeas powder , chilli powder, turmeric and salt to the mutton Kheema and make small balls as shown in the pic. Apply little oil while making the Kheema balls.
Next take a pan and pour 3-4 spoons oil. Fry the Kheema balls untill they leave the pan. Next put chilli powder,the grinded masala, water as required,salt and boil until it cooks.
The Kheema Curry is ready to serve with rice, roti or chapati whichever you like.
