My Mr.Reliable.. this is the knife I reach for any and every time I'm not sure what I'm going to run into.

It's one of the few with a Tool steel that makes it very tough and bitey. Never really worried about chipping this one, although I have.

Did you know high quality bread knives can actually be sharpened?!? Depending on the style of teeth, and how much abuse your serrated knife has taken over the years. It can be saved!

What's your favorite style of knife to use?
One of my favourites is certainly the Nakiri! Looks like a clever but so light and versatile, it's amazing how much you can do with a straight blade.
A quick tear down and clean up on the ZT 0450 last night.
Customer hooked his clip on a seat belt, it's been sitting in a drawer collecting dust since then.
Don't let you tools sit just because they need work, bring them on over and I'll get then tuned up.
This guy will get a sharpening this week, and maybe even a new suit! I'm thinking purple ano with a acid washed blade!

Just a quick throwback to an awesome design. Recurves have great cutting ability. But can be a pain to sharpen for sure. Love they way they cone out!
Thank you for your patience everyone! We've been very quiet the past couple months. Spending that time to come up with ways to serve you better.
I'm liking to get more involved in the community, create a space we can all learn and grow.
For now the first step, it's unfortunate but inevitable, price changes..
I'm looming to offer 2 price lists now.
As most of you know, not every company has the same standards, or practices.
In my company, I hold my standards high and to do that, I use more specialized equipment than most small business's.
1 of those things is my Tormek. My pride and joy, and 1 GIANT reason my edges outcut the competition.
Tormek is a Swedish company that makes Powered, water cooled sharpening machines. A variety of machines, stones and jigs available from them.. with that being said, they aren't cheap, and they aren't local...
On the other hand, going from a watercooled stone, to a ceramic style belt abrasive. I also use my WorkShar p ken onion with bench grinder attachment. This thing makes quick work of hard steeland whips up a solid convex edge, but doesn't offer the same precision as a v grind edge.
My 2 price lists will reflect which techniques and equipment is being used and of course the task in hand... this is just one of many steps I'd like to take to creat more transparency with you, my customers..
No prejudice here :) I sharpen all makes and qualities. If you like using it, bring it by and see what can be done.
Heck, bring me a spoon and ill make it sharp! Just might not stay that way 😁

It was a love hate relationship when I worked in kitchens... the family, the camaraderie, the beer.. but then there was the 18 hour days back to back to back, to back.. the stress of did I prep enough for Easter weekend? Who's going to be sick?
Man, there was alot going on in kitchens.
1 thing I can eliminate from that list.. Did I sharpen my knives!?!? I've been so busy!

Consistency is key in sharpening... pressure, speed, angle, time.. procedure.. there's a reason everybody has their own systems, because they work for them. The key is to stick with it, and make ot work for you.
As always, from chipped and sad to shiny and sharp.

Sometimes all you need is something that works.. its doesn't need to be the fanciest.
Even better if you know how to maintain things yourself.. a knife is a tool, or a means of transportation it takes you through your life, It needs attention.
It was time for a cleanup on the bolster of this for a customer.
This is actually one of the first hundred or so knives I sharpened professionally about 5 years ago. It's super cool to see my own progress over the years aswell as see so many lives changing along the way.
From dull and chipped, to shiny and sharp.
Tips happen.. takes a little bit of material, but we can fix that.
Some tools, like this leatherman have certain parts that make it quite a challenge to get the entire blade. Sometimes this is the best I can do, and that's okay. At the end of the day, every tool that leaves my shop works.

Highly regarded as one the most "perfect" knives ever made. Simple, yet very very effective.
Love me some grind lines.
One huge detail in Cutlery just as in other things, is where materials come from. When it says Solingen Germany, I'm automatically excited!
Shears are quite a different animal than knives. It took me quite a bit longer to add shears to my services.
Yet here we are! What to learn next!?
Benchmade Griptillian, designed by the late Mel Pardue. Small, but powerful. The overall size and shape of this knife makes for a solid workhorse, with help from the lightweight scales it won't weigh you down like many others in this size and capability.
The Benchmade Anthem, one of the greatest production knives out there for sure. Had my chance to snag this very one and hesitated. At least I stoll get to play when I sharpen it for a good friend and customer.
This one needed a bit of the shoulder thinned out, after many years of use and sharpening.
And of course a touch up on the Gut hook.
Mmm mm m, something about that tormek edge 👌

New goals for the year, new things coming, and unfortunately with the way the world is changing... new pricing coming.
Can't wait until it warms up, get some mobile sharpening going. Where should I go first?
