Loco moco! Thinking about our visits to Hawaii inspired us to make our version of loco moco. A Mantis BBQ twist on the classic that is rich, juicy, savory and satisfying.
Here is how we made it:
- start with a few scoops of of sticky rice (rinsing the rice before cooking helps remove the starch)
- season the rice with Mantis Dust and add a mix of our BBQ sauce and Glaze
- top with a hamburger patty. We grilled ours. Then top the hamburger with Mantis Gold
- add a fried egg and sprinkle on Mantis Dust
- garnish with green onions and ENJOY!

Leftover pulled pork = pulled pork Mac n cheese! Layered with Mantis Dust, A Haunt of Ghost and just a bit of Ghostly Glaze - YUM!!!
BBQ Fusion; Beef rib ramen! The richness of slow smoked ribs paired with delicious broth and ramen noodles.
Here is how we made it:
- Plate ribs Mantis Dusted and marinated overnight with A Whisper of Chili then smoked 6 hours till they hit 205.
- we were too lazy to make our own ramen so sliced the beef ribs thinly and added to Shin Black spicy ramen then added a medium boiled egg
Monkfish Monday (yes it’s a thing at our house) or Taco Tuesday. Elevate/simplify by adding Mantis BBQ sauce & Dust. Mantis marinated and Dusted monkfish tacos! Here is how we made them:
- 1 lb monkfish filet (membrane removed) marinated for 2-3 hours in 1 tsp Mantis Dust, 2 tbs Mantis BBQ sauce of your choice and 1 tsp olive oil. - Cook in a hot pan with a little olive oil for 3-4 minutes on each side, until opaque (at least 145 degrees).
- Slice some avocado and dice some tomato and sweet onion.
- Warm up tacos. Place monkfish, avocado, tomato and onion in the taco, then top with some fresh cilantro. Enjoy!
Surprisingly great combination- bbq shrimp pizza with pico de gallo. Zesty yet refreshing. And here is the recipe:
- Pre cook (grill or in a pan) about 20 medium shrimp
- pour a coat of Mantis Whisper of Chili on the pizza crust
- sprinkle with a bit of Mantis Dust
- Add shredded and diced whole mozzarella and cook until the dough is crisp and the cheese is melted. - Remove and sprinkle with pico de gallo (tomato, onion, fresh cilantro and a squeeze of lime). Slice and enjoy!
Smoked, fried & Mantis Sauced savory bologna sandwich- yum! Recipe:
- cut bologna into 1-2” slices. - smoke 2 1/2 hours at 250
- fry in canola oil at 375 until golden brown - put on a rack and pat dry - add to thick sliced sourdough, add Mantis Haunt of Ghost and top with creamy slaw - ENJOY!
BBQ “cheeseburger” meatballs! Juicy, cheesy goodness and easy to make!
Recipe; take 1 lb ground beef, 2 tsp Mantis BBQ sauce, 1 tsp Mantis Dust, 1 tsp onion powder, 1 1/2 cups shredded sharp cheddar and one egg beaten. Mix it all together and form about 20 meatballs. Cook in covered grill or oven at 400 degrees until the internal temp hits 160. Garnish with pickles and cherry tomatoes. Enjoy!
Bourbon barrel smoked and Mantis Glazed ribs! Here is the recipe. - Bring smoker to 250 degrees
- Brush ribs with olive oil and rub with Mantis Dust and some brown sugar, cumin and chili powder to taste
- Add bourbon barrel chunks to the smoker fire box
- Cook for 2 hours periodically spraying with apple juice
- Spray with apple juice, brush with Mantis Glaze & wrap in foil
- Cook for another 1 1/2 to 2 hours until the internal temp hits 198-203
- rest for a bit and ENJOY!
