“It’s all about passion.” That’s one of the impactful themes we hear when speaking with Martin Bernal-Hafner, winemaker from our family-owned wine partner, Topel and Orsa Wines. This passion is demonstrated in the renewable practices they utilize and in the variety of wine they produce. Now let the bragging begin! This man does it all – from growing the grapes, to making the wine, to selling the wine! Let’s dive right into some of the reason’s Martin and the team at Topel and Orsa Wines inspire us:
1. The Family test – In thinking of their environmental practices, Martin doesn’t want anything on the grapes that he wouldn’t want exposed to his kids, family, friends and co-workers. Words to live by!
2. The estate is planted on the hillside so that don’t use machinery and everything is done by hand – it doesn’t get any more intimate than that.
3. Martin’s path has taken him across 3 continents (Europe, South American and North America) upon landing him at the southern edge of California's Mendocino County, just above the Russian River. Talk about a global education!
4. Their focus is to connect with customers to ensure the quality of the wine from beginning to end – any customer’s dream!
5. Martin uses a minimalist approach in handcrafting the wine that aims for balance, complexity and elegance, aging most in French oak from 24-33 months before bottling. And sold!

This sparkling wine is made just like traditional champagne, so you know its good, but since its from New York state it can’t technically be called ‘champagne’ (Only wines from Champagne, France get that title). "Méthode Champenoise" is fermented twice in their own bottles, so they don’t mingle with other wines in a giant barrel to ferment – sounds exclusive like any New Yorker 😉.
