EAT or PASS on these Skinny Buns Egg Sandwich?🍳🥑

These delicious skinny "buns" egg sandwiches for any meal this week! Loaded with nutrients, protein and satisfying healthy fats...all ready in about 10 minutes!

Makes 2 servings

Ingredients:
4 large free-range eggs
2-3 Tbsp. water
1 small ripe avocado, lightly mashed
2-3 slices nitrate-free bacon, cooked to your liking
2 Tbsps shredded cheese (optional)
coconut or avocado oil cooking spray

Instructions:
Place a medium nonstick pan over medium heat, then arrange inside 4 mason jar lids (centers removed). Lightly spray with
cooking spray. Very gently crack eggs into the centers of the lids and lightly whisk with a fork to break up the yolk.
Pour water around the lids and cover the pan. Cook on low heat for about 3-4 minutes, or until the egg is just set. Remove lid and top eggs with cheese if you like.
Cook until the cheese is slightly melted, about 1 minute more.
Gently flip the egg "bun" side without the cheese onto the plate. Top with mashed avocado and cooked bacon.
Assemble as shown, and enjoy!

Avocado Chicken Salad 🍅🌽🥑
makes 4 servings

Ingredients:
1 lb. boneless skinless chicken breasts
1 Tbsp ghee/clarified butter
2 cups cherry tomatoes, quartered
2 avocados, cubed
1/2 cup fresh or frozen organic corn, cut from the cob
1 medium red onion, thinly sliced
a handful of fresh cilantro leaves, chopped
juice of 1 large lime
1 Tbsp extra virgin olive oil
sea salt and fresh ground black pepper, to taste, about 1/4 teaspoon each

Instructions:

Melt ghee in a large skillet over medium-high heat. Add in the chicken and season with sea salt and pepper.
Sear for about 4 minutes on each side, or just until cooked through and no longer pink in the inside.
Set your cooked chicken aside on a cutting board to rest for a few minutes, then using a sharp knife cut it into bite sized cubes.

In a large bowl, add in your cubed chicken together with tomatoes, avocado, onion, cilantro and corn.

Squeeze fresh lime juice over and drizzle with olive oil.

Toss gently to combine, then taste test, and season with sea salt and pepper to taste.

Honey balsamic chicken with cheesy spaghetti squash & caprese salad 🍅
You just can’t go wrong with caprese anything!! I topped the caprese salad with a balsamic glaze, but you could also use balsamic vinegar instead- whichever you’re feelin😇


Honey balsamic chicken with cheesy spaghetti squash & caprese salad with balsamic glaze ⏩
4 chicken thighs
1 spaghetti squash
1 large beefsteak tomato
mozzarella
Basil
Balsamic glaze
Dressing:
1.5 tbsp balsamic vinegar
1 tbsp lemon juice
1/2 tbsp honey
1 tbsp garlic & herb olive oil (you can use regular olive oil if that’s what you have on hand)
1 tsp dried oregano
1 tsp dried basil
*Serves 2
DIRECTIONS
Chicken:
Combine all of the dressing ingredients + some salt. Cut up chicken thighs into bite-size pieces & put on a large pan on low/med heat. Pour the dressing on top (but save some to top your salads with!) & let the chicken sizzle in it. Once it’s more cooked through, up the heat so it starts to brown on the outside.
Spag squash:
Poke holes in the spaghetti squash with a fork and then I microwave it for about four minutes which makes it easier to cut into. Cut the stem off then cut longways and scoop the seeds out and then spray the inside with cooking spray (avocado oil, olive oil etc). Sprinkle some salt and pepper and put it facedown on a cookie sheet. Bake at 400 for about 30 min & then check it! That’s how long it took me for this one but you may need longer depending on the size. Once cooled, take some out with a fork, put in a bowl, & stir with a couple spoonfuls of pecorino romano.
Serve the chicken & spaghetti squash (top w a little more cheese) with caprese salad- tomato, basil, mozz, and drizzle of balsamic glaze. Top everything with salt!

My days usually consist of three big meals plus a handful of snacks. Here is a pretty good example of the main meals I’ll have during a day -⠀
☀️Breakfast: oats w. strawberries, banana, nut butter

🌤Lunch: hummus wraps w. veggies - roasted or raw is good

Stop Night Binge Eating

🌙 There’s a lot of guilt and shame tied up in night eating. It’s like after dinner your body is supposed to just shut off. Although it’s time to rest, our body never stops working, so if there’s a need that is not being met, it will let us know.

🍩This may show up as a binge in the middle of the night or right before bed. It may feel like a simple lack of willpower BUT it’s your body actually fighting you to let go of the willpower!

🍽If you feel unsatisfied after dinner frequently, assess if your meal needs some tweaks to leave you satisfied and ready for bedtime.

🍪If you eat dinner at 6 and go to bed at 10, that’s 4 hours! Your body may want a little snack after dinner and that’s ok!

☕️If the stress of the day is keeping you up at night, create a bedtime routine that helps you wind down and cope with your emotions from the day without using food

🥪If you’re not eating enough throughout the day, none of the other tips matter. Increase what you’re eating to satisfy your body’s needs!

🍫If the types of foods you binge on at night differ from what you would usually allow yourself to eat casually, this is likely a lack of permission causing the increased desire to binge these foods. Work on allowing these foods anytime—full unconditional permission!
