Ingredients:
For the dough:
2 cups almond flour
1/4 cup coconut flour
1/4 cup unsweetened whey protein powder
2 tsp baking powder
1/4 tsp salt
1/4 cup unsalted butter, melted
2 large eggs
1 tsp vanilla extract
1/4 cup almond milk (unsweetened)
For the cinnamon filling:
1/4 cup unsalted butter, softened
3 tbsp granulated erythritol or your preferred keto-friendly sweetener
2 tsp ground cinnamon
For the cream cheese frosting:
4 oz cream cheese, softened
2 tbsp powdered erythritol or your preferred keto-friendly sweetener
1/2 tsp vanilla extract
Cooking Time:
Prep Time: 20 minutes
Cook Time: 20 minutes
Total Time: 40 minutes
Yield: 8 servings

Protein: 8g
Carbs: 8g
Sugar: 1g
Fats: 26g
Fiber: 6g

Instructions:
Preheat your oven to 350Β°F (175Β°C). Grease a baking dish or line it with parchment paper.
In a mixing bowl, whisk together the almond flour, coconut flour, whey protein powder, baking powder, and salt.
In a separate bowl, whisk together the melted butter, eggs, vanilla extract, and almond milk.
Add the wet ingredients to the dry ingredients and mix until a dough forms. If the dough is too sticky, you can add a bit more almond flour.
Roll out the dough between two sheets of parchment paper into a rectangle, about 12x8 inches.
In a small bowl, mix together the softened butter, erythritol, and ground cinnamon for the filling.
Spread the cinnamon filling evenly over the dough.
Carefully roll up the dough, starting from the long side, to form a log. Slice the log into 8 equal-sized rolls.
Place the rolls in the prepared baking dish and bake in the preheated oven for about 20 minutes or until they are golden brown.
While the rolls are baking, prepare the cream cheese frosting. In a bowl, beat together the softened cream cheese, powdered erythritol, and vanilla extract until smooth.
Once the rolls are done baking, let them cool for a few minutes, then spread the cream cheese frosting over the top.
Serve warm and enjoy your keto cinnamon rolls!
