Day 20 of 31 Soup Recipes: Turkey & Wild Rice
INGREDIENTS
1 cup grated carrots
1 cup sliced mushrooms
1/2 cup coarsely chopped celery
1/2 cup chopped onion
1 tablespoon butter or margarine
1/2 cup all-purpose flour
2 cans (14-14 1/2 ounces each) chicken broth
1 can (12 ounces) low-fat evaporated milk
1 1/2 cups cooked wild rice
1 cup diced cooked turkey
1/4 cup slivered almonds, toasted
DIRECTIONS
✅ Grate carrots using Rapid-Prep Mandoline. Slice mushrooms using Egg Slicer Plus®. Chop celery and onion using Food Chopper.
✅ Melt butter in (3-qt.) Saucepan over medium heat. Add carrots, mushrooms, celery, and onion; cook and stir 3-4 minutes or until vegetables are crisp-tender.
✅ Stir in flour. Gradually add broth and milk, whisking until blended using Silicone Sauce Whisk. Bring to a boil. Stir in cooked rice and turkey. Reduce heat; simmer, uncovered, 5 minutes.
✅ Meanwhile, place almonds in (8-in.) Sauté Pan. Heat over medium heat 3-5 minutes or until almonds begin to brown, stirring frequently. Remove from pan; cool slightly. Stir almonds into soup just before serving.
*If using frozen wild rice, prepare according to package before stirring into the soup.

INGREDIENTS
8 oz (250 g) fully cooked smoked turkey sausage
2 medium carrots, peeled
1/2 cup (125 mL) chopped onion
2 garlic cloves, pressed
1/4 tsp (1 mL) ground black pepper
3 cans (14.5 oz/398 mL each) reduced-sodium chicken broth (about 6 cups/1.5 L)
2 cans (15 oz/398 mL each) Great Northern or cannellini beans, drained and rinsed
4 cups (1 L) loosely packed fresh baby spinach leaves
DIRECTIONS
✳️ Slice sausage in half lengthwise and then crosswise into 1/4-inch (6-mm) slices. Slice carrots crosswise into 1/4-inch (6-mm) rounds.
✳️ In the Rockcrok® Dutch Oven, cook sausage, carrots, onion, garlic and black pepper over medium-high heat 5-6 minutes or until vegetables are crisp-tender, stirring frequently. Add chicken broth; cover and bring to a boil. Remove from heat; stir in beans and spinach. Cover soup and let stand 3 minutes before serving.
