Been trying to get back on track and stick with it, which has meant bringing back old favorites. This pepperoni pizza bubble up is soooo good and we can enjoy guilt free pizza night and stay on track too. 🍕 This is my version of the recipe, using unsweetened almond milk instead of yogurt.
2 cups self rising flour
3/4-1 cup unsweetened almond milk *can use Greek yogurt too
Garlic and onion powder
Italian seasoning
Salt and pepper
7 oz Fat free mozzarella cheese
14 slices turkey pepperoni
A sprinkle of Parmesan cheese
1 egg* optional
Combine seasonings, flour, then add almond milk and egg and mix until a dough forms. Form into tablespoon size balls and toss into a baking pan or skillet that’s been sprayed with nonstick spray. Spoon pasta sauce over the dough balls then top with cheese, pepperoni, then more cheese. Bake at 375 for 30 minutes then enjoy! 8 “slices” approximately 4 points each.

Tonight’s twist on Taco Tuesday was a Shrimp Fajita Bowl! I used the Instant Pot/Ninja Foodi to make this a one-pot meal, and bonus points for making the brown rice in there too! The base for this recipe is 0 points, and then the toppings you choose would add points, so this is a great low-point meal option too. Add in a low point tortilla (I like Ole Extreme Wellness ones!) and you can use this in tacos, too. Enjoy!
*My bowl was 6 points and had: 1/2 cup cooked brown rice, a single serve avocado cup, and 1/2 cup fat-free shredded cheddar cheese. I also had lettuce, salsa, Greek yogurt, chopped onions, and the shrimp base.*
Ingredients for the base:
- 12 oz shrimp
- 1 cup onions
- 1 cup sweet peppers
- 1 can black beans
- 1 can corn
- Seasonings to taste: I used ancho Chile powder, cumin, fajita seasoning, onion powder, garlic powder, salt and pepper
Optional Ingredients:
- 1/2 cup - 1 cup cooked brown rice (per serving)
- Lettuce
- Chopped onions
- Fat free shredded cheddar cheese
- Non-fat Greek yogurt/non-fat sour cream
- Avocado/Guacamole single-serve cups
- Salsa
- Hot sauce
Directions:
- If you want to make rice in the Instant Pot/Ninja Food, just add one cup of dry rice and one cup of water to the pot, cover and seal, and cook at high pressure for 15 minutes. Once done, release the pressure and set aside!
- For the base, add in the onions and peppers and sauce until just tender. Then add in the shrimp and seasonings.
- Open and drain your canned corn and beans, and I like to give them a rinse as well. Once the shrimp is just turning pink, add in the beans and corn, mix everything together, then place the lid on in the sealed position and cook on high for 3 minutes. Once done, release the pressure and immediately remove the lid.
- You can also cook the rice AFTER your base is done if you’re using a meat like chicken or beef. Just add in your rice, make sure you add 1 cup of liquid (water or stock) to just cover the rice, then cover and seal and cook on high pressure for 15 minutes.
- Put everything together however you want it (bowl, taco, burrito) and enjoy!

We went on a cruise for my bday weekend. Left at 195 and came back at 202. It was hard to see the 200s again, but I know that most of it is water weight and will drop off again quickly now that I’m back on track. It was nice to hit pause on WW for a few days and just enjoy all the yummy food, but I am happy to be back to my normally scheduled programming!
So many people ask what you can make with Carba-Nada noodles and the answer is - anything! I made a Shrimp Alfredo with Carba-Nada noodles and it was so yummy and filling. I used the whole bag to make two huge servings and each serving was only 9 points (the whole bag of pasta alone is only 8 points)!
Ingredients:
- 1 bag of Carba-Nada pasta
- 12 oz shrimp
- 1 cup of baby spinach
- 1 Tbsp margarine
- 1 cup chopped onions
- 1/4-1/2 cup unsweetened almond milk (or fat free milk)
- 1/2 cup reduced fat mozzarella
- 2 Tbsp grated Parmesan cheese
- Seasonings - I use garlic powder, onion powder, salt, pepper, and Italian seasoning
Directions:
- Bring a pot of salted water to a boil. Once boiling, add the pasta and cook until tender.
- In a separate pan, sauté the chopped onions until soft. Add the shrimp, minced garlic, and seasonings. Cook until the shrimp are pink. Add the spinach and cook until wilted.
- Drain the pasta, saving about 1/2 cup of pasta water. Return to the pot, off the heat and add in the shrimp mixture.
- In the same pan add in the almond milk and bring to a simmer. Add the margarine and the mozzarella and Parmesan cheese and mix until melted and combined. If it is too thick, add some of the pasta water to get the consistency you need. It will thicken slightly once you remove from the heat.
- I also sprinkled a little extra cheese on top. Enjoy!

I’m all about using the ingredients we already have on hand and making up easy dinners that are family friendly. These Cheesy Crescent Hot Dogs were so fun and yummy, and Kennedy enjoyed helping me make them!
We used the Ballpark Smoked Turkey Franks, Pillsbury Reduced Fat Crescent Rolls, and Kraft Fat Free Shredded Cheddar Cheese. Each one ended up being 6 points. We doubled up on the hot dogs because they are only 1 point each but you could use 1, especially if you’re using a higher point hot dog!
Ingredients:
- 1 can Pillsbury Reduced Fat Crescent Rolls
- 8-16 hot dogs of your choice
- 1/2 cup Kraft Fat Free Shredded Cheddar Cheese
Directions:
- Open the crescent rolls and portion separate them. Sprinkle some cheese on the wide part of the crescent roll.
- Place hot dog(s) at the wide part of the crescent roll and roll up. I wrapped the excess dough from the wide side around the hot dogs again to make it even around the hot dogs.
- Place on a nonstick baking sheet and bake according to the crescent roll directions. I ended up baking mine a little longer until they were more golden on top.
- I also sprinkled a little extra cheese on top. Once done, remove and serve and of course, enjoy!

Time to shop for the week! Our typical shopping for the week is done at Costco, Publix, and Walmart. It wasn't a huge haul this time, but it got the job done and we had groceries for the week to stay on track on WW.
I broke my toe a few weeks prior to filming this video, so I had to use the electric cart because I couldn't quite make it around all the stores yet. I filmed this video back in June so I am much better now, hooray!

Saturday = “big breakfast” Day so I made everyone Kodiak Cakes pancakes of their choosing! Kennedy wanted a diamond and a stop sign, Jaxson asked for a cat wearing a crown and a jellyfish, Brandon asked for his name, and I made myself the Space Needle.
For my pancakes I just follow the box directions and I like to add an egg and use unsweetened almond milk to keep the points low on WW. Each regular size pancake (approximately 1/8th cup of batter) is 1 Point!
June 2 is National Donut Day and we didn’t want to miss celebrating! I found this 2 Ingredient Dough Donut recipe at https://recipesbycarina.com/2-ingredient-donuts-recipe/ and it did not disappoint!
Each donut hole came out to 2 WW Points, even with using lite coconut milk instead of Greek yogurt! My husband does not like yogurt at all so finding different ways to make 2 ingredient dough on WW has been a life-saver so he can enjoy good eats with us. (Side note: the coconut milk did NOT make these have a coconut flavor!)
I decided to have sugar free caramel sauce and Hershey’s zero sugar chocolate sauce as dips for our donuts, and topped some with cinnamon sugar (using sugar substitute for a 0 Point version) and sugar free frosting with sprinkles. Depending on your toppings chosen and how much you use, you may need to adjust the WW Points for your version! While I enjoy making things from scratch, I’m not against using a box mix either! I tried out the Pillsbury Zero Sugar Brownie Mix and decided to use Oreo pudding mix and fat-free cream cheese to make these into Oreo Cheesecake Brownies! The cream cheese wasn’t my favorite but the brownies themselves did not disappoint!

This Chocolate Bread is loaded with cocoa and chocolate chips. This load makes 10 slices at 5 WW Points each as I prepared it. I did use sugar substitute and sugar-free chocolate chips, but you can use regular versions of these ingredients if you want! This makes a great dessert or a sweet treat for breakfast! Love cookie dough? These No Bake Cookie Dough Bars are easy to make, packed with protein, and only 2 WW Points!
INGREDIENTS:
~ 3/4 cup oat flour
~ 1/2 cup almond butter
~ 1/2 cup water
~ 4 scoops (about 1 cup) vanilla protein powder
~ 1 oz Lily’s dark chocolate chips
DIRECTIONS:
Combine all ingredients except chocolate chips in a food processor until a dough forms. Fold in the chocolate chips and then put the dough into a parchment paper lined baking dish and smooth out. Top with some more chocolate chips and chill in the refrigerator for at least an hour. Cut into 18 equal size bars and enjoy! Keep these in the refrigerator in an airtight container for up to two weeks. Each bar is 2 WW Points with the ingredients I used.
