Chicken Sweet & Sour Recipe

INGREDIENTS CHICKEN:
* Chicken breasts (into chunks & fry for 6 minutes)
* Pinch of salt & pepper for seasoning
* 1 cup rice flour plus extra for coating chicken
* 1/4 cup tapioca flour
* 1/2 tsp baking powder
* 1 cup cold water (add more if too thick)

SWEET & SOUR SAUCE:
* 1 cup brown sugar
* 1/2 cup white vinegar
* 1 tbsp minced garlic
* 1 tbsp minced Ginger
* 1/2 tsp sesame oil
* 1/2 tsp Sea salt
* 1/2 tsp Chinese 5 spice
* 1/2 tsp Ground black pepper
* 200g tinned pineapple chunks (1/4 cup juice)
* 1/2 red & yellow capsicum (into chunks)
* Sesame seeds
* 6 tbsp tomato paste
* Oil for frying
* 2 tbsp gluten-free light soy sauce

Chicken marinade:
* Gluten-free corn flour
* 2 tbsp cold water
* 3 tbsp Gluten-free light soy sauce

TO SERVE:
* Sesame seeds
* Rice

INSTRUCTIONS
Cut chicken into 1-inch chunks and pop on the marinade ingredients and rub into the chicken and leave in the fridge for 30 minutes, longer the better.

Mix the rice flour, tapioca flour, baking powder and season with salt and pepper and add the water.

Pop the chicken into the seasoned rice flour, salt & pepper and leave to one side.

Heat up oil for frying to 180C.

Once the oil is ready coat your chicken in the batter and then fry for around 6 minutes until cook and set aside.

Put a wok on a high/medium heat.

Next, add the red capsicum, spring onion and cook for another 1 minute, now combine sauce ingredients bring to a boil over medium heat cook until thickened, next add the chicken.

Serve with rice and garnish with sesame seeds , now enjoy!

Gluten-Free Yorkshire Puddings Recipe
Here you go guys, enjoy!

Ingredients
• 200g corn flour (if you are not gluten-free use normal plain flour instead)
• 6 eggs
• 300ml semi-skimmed milk (dairy free if needed)
• 50ml vegetable oil (to pour into each tin)

Instructions
• Heat your oven to 220C or 200C fan.
• Add just under a tbsp of oil to each of the holes in the muffin tin.
• Place your tin in the oven for 10-15 minutes until the oil is super-hot, basically spitting!
• Whilst your oil is heating, beat/whisk in your 6 eggs into your cornflour in a big mixing bowl.
• Once thoroughly combined, gradually add your milk a little at a time. Mix together - I use a non�electric whisk for this but you could use an electric hand mixer if you like.
• Pour your Yorkshire pudding batter into a jug so it's easier to pour into each hole.
• Next you need to be quick! Remove your muffin tray from the oven and immediately fill each hole with your mixture until just under 3/4 full. They should sizzle a little. Be very quick here and get them back in the oven asap!
• Place back in the oven and cook, still on 220C for around 15-20 minutes until golden and risen.
(NEVER open the oven door during their bake, this will ruin them!)
• Remove from your oven once cooked and serve up with a delicious roast dinner (lots of gravy!).

Tip: if the bottoms of your Yorkshire puddings are not crispy enough turn them slightly on their sides and pop back in the oven for a few mins minutes.
