Couscous Salad ​
This recipe is a favourite from an old Donna Hay magazine ​
Waight family - Max, Sam and Harvey ​

Prep time: 10 minutes ​
Cook time: ​
Serves: 6-8 ​

Ingredients:
Cous cous
Raw zucchini
Dill
Parsley
Pistachios
Dried cranberries
Orange zest
Lemon zest

Dressing:
Lemon juice
Orange juice
Olive oil
Honey ​

Method:
Prepare the cous cous according to the instructions on the packet.
Mix all ingredients with measurements to your liking.
Add dressing.

Olive Oil Granola With Pistachios and Dried Apricots ​
This recipe came from our dear friend Aine Tyrell who is Irish but had some family in America. She got this recipe from a New York newspaper.
Howard family - Leo, Henry and Audrey ​

Prep time: 10 minutes ​
Cook time: 45 minutes
Makes: 9 cups ​

3 cup old-fashioned rolled oats
1 ½ cups raw pistachios, hulled
1 cup raw pumpkin seeds, hulled
1 cup coconut chips
¾ cup pure maple syrup
½ cup extra virgin olive oil
½ cup packed light brown sugar
1 tsp kosher salt
½ tsp ground cinnamon
½ tsp ground cardamom
¾ cup chopped dried apricots
Fresh ricotta, for serving (optional)
Fresh berries, for serving (optional)

Preheat oven to 300°C. In a large bowl, combine oats, pistachios, pumpkin seeds, coconut chips, maple syrup, olive oil, brown sugar, salt, cinnamon and cardamom. Spread mixture on a rimmed baking sheet in an even layer and bake for 45 minutes, stirring every 10 minutes, until golden brown and well toasted.
Transfer granola to a large bowl and add apricots, tossing to combine. ​
Serve with berries, ricotta or yogurt.

The Ultimate Cheats Naked Cake ​

Serves: 12 ​

Ingredients;
2 x IGA plain vanilla sponges
Betty Crocker Vanilla Icing

Method;
Cut top from sponges
Ice one and place second on top (upside down so it's nice and level)
Ice the top and use a spatula to add to the sides, and smooth out.
The degree of nakedness is up to you!
Add fresh flowers, macarons, chocolate shards, sprinkles or lollies to decorate the top.

Porcupine Balls ​
This dish is a big family favourite in our household. It’s a recipe past down from Liam’s mum & he makes it for us. It’s a nice hearty meal that a lot of parents may remember from when they were children. ​
Mercer/Bellears family - Charlee ​

Prep time: 10 minutes ​
Cook time: 40 minutes
Serves: 4-6 ​

Ingredients;
750g beef mince
2 cloves garlic
1 egg (optional may use to bind balls together)
1 cup of uncooked rice (we prefer long grain)
1 tsp of seasoning (salt & pepper)
2 x 545ml cans of condensed tomato soup
1 cup of chopped basil ​

Method;
Combine mince, garlic, rice & seasoning in a large bowl.
Shape into balls (half a cup for each ball).
In a large pot on medium heat add tomato soup cans (cook soup as according to can as it will require water to be added) and chopped basil.
Once simmering add balls and simmer on low/medium heat for 40 minutes.
Serve & top with your choice of cheese.
Serve with mash potato or for a healthy option serve with a garden salad.

Cream Kisses ​
This recipe came from my high school cookbook 'Cookery The Australian Way’. A simple little cake, but has proven extremely popular over the years. My go-to recipe. No longer my secret go-to recipe! ​
Rhonda Cameron ​

Prep time:15 minutes ​
Cook time: 6-8 minutes
Makes: 30 ​

Ingredients;
3 eggs
¾ cup caster sugar
½ cup plain flour
½ cup cornflour
Pinch salt
1 tsp cream of tartar
½ tsp bi-carb Soda
Whipped cream and icing sugar

Method;
Preheat oven to 190°C.
Beat eggs for two minutes, add sugar gradually and continue beating for 10-15 minutes until mixture is light and fluffy.
Fold in sifted dry ingredients.
Place in teaspoonfuls on greased oven trays and bake.
These will keep well if packed in an airtight container when cold.
Sandwich together with whipped cream and dust with sifted icing sugar. ​ Lovely if blueberry jam is used as well as cream, or sliced strawberries and cream. ​​​​


Preheat oven to 180°C and line two trays with baking paper.
Place 125g of softened butter along with the brown sugar into the bowl of an electric mixture and beat for 8 minutes until pale and smooth.
Add 1 tsp of vanilla extract and the egg and mix to combine.
Add the self-raising flour, plain flour and desiccated coconut and mix on a low speed until just combined.
Use a tablespoon to scoop up the mixture and gently roll into little balls before placing on the baking trays. Repeat until you have used all of the mixture.
Gently press down on the top of the balls with the back of a fork to flatten, before placing the baking trays into the oven to bake for 10 - 12 minutes.
Let the Monte Carlo Biscuits cool on the baking trays for 10 minutes before carefully transferring to a wire rack to cool completely.

To make the buttercream filling, place 60g of softened butter, 1/2 teaspoon of vanilla extract and the icing sugar mixture into the bowl of an electric mixer and beat for 3 - 4 minutes or until pale and combined.
Smear a teaspoon of the buttercream onto the back of one biscuit and a teaspoon of raspberry jam onto the back of another biscuit and sandwich together. Repeat until you have used all of the biscuits.

Chocolate and Coconut Bliss Balls .

On a school cooking day, the children made these bliss balls and were able to take some home to share with their families.
They were so yummy, that not many made it home to share. ​
Ireland family - Lenny, Herb ​and Clem

Prep time: 15 minutes ​
Cook time: 10 minutes
Makes: 20 ​

Ingredients;
1 cup rolled oats
2 tbsp cocoa
12 pitted dates – soaked for two hours
1 cup desiccated coconut
2 tbsp maple syrup
2 tbsp shredded coconut

Method;
Place the rolled oats, cocoa, dates, desiccated coconut and maple syrup into a food processor and process until smooth.
Roll into tablespoon sized balls and roll in the shredded coconut.
Place on a lined tray in the fridge for an hour to set.
Store in the fridge in an air tight container for up to two weeks. ​
The cocoa could be swapped for cacao powder for an alternative option. For a gluten free option, we have swapped the rolled oats for quinoa flakes.

Throw-in-a-bowl Date Loaf​
This is a classic recipe that my Nanna frequently whipped up. It that takes five minutes to create, and is always a hit. It’s healthy delicious and easy.
Hovey family - Angus & Emmy​

Prep time: 5 minutes ​
Cook time: 40-45 minutes ​
Serves: 8 ​

Ingredients;
1 cup cold tea
1 ½ cups Self raising flour
½ cup brown sugar
1 cup chopped dates (can add raisins, apricots, sultanas)
½ cup coconut
Handful of pepita & sesame seeds
Sprinkle of Cinnamon

Method;
Preheat oven to 180°C.
Place all ingredients in a bowl.
Mix & combine well.
Pour in to a lined loaf tin.
Sprinkle with seeds & cinnamon.
Bake in a moderate oven for 40 minutes. ​
Slice and serve with butter

Zucchini and Corn Fritters (gf) ​
I once worked with a chef, who worked with another chef... and this recipe was passed on. So technically, not stolen, just handed on. ​
Anderson family - Percy and Henry ​

Prep time: 20 minutes ​
Cook time: 10 minutes
Serves: lots ​

Ingredients;
500g zucchini
½ red onion
1 x 420g tin corn kernels
1 tsp crushed garlic
½ tsp chili flakes
½ tsp each of salt & ground black pepper
1 tsp ground cumin
2 tsp chopped fresh coriander
½ tsp turmeric
¼ tsp smoked paprika
2 eggs
2 tbsp Greek yoghurt
1½ cups of chick pea flour

Method;

Grate or finely chop the red onion and zucchini.
Place in a large bowl and add the corn, garlic, chili, salt, pepper, cumin, coriander, turmeric & smoked paprika.
Beat the eggs with a fork and add to mix, along with the yoghurt and chick pea flour.
Mix well until all is blended.
Use a hot frying pan or griddle to cook - place a large spoonful onto pan/griddle and cook each side for approximately 4-5 minutes, or until golden brown.
Serve warm, with a poached egg, spinach, bacon or whatever you fancy. ​ You can use plain flour instead of the chick pea flour; the texture will be lighter and cooking time slightly less.

Rack of Lamb ​
A favourite in the Chatham household!! ​ Chatham family - Tess and Isaac ​

Prep time: 10 minutes ​
Cook time: 60 minutes
Serves: 4 ​

Ingredients;
Lamb Rack (as many cutlets as you need!)
½ cup tomato sauce
2 tbsp brown sugar
2 tbsp vinegar
2 tbsp mint jelly
½ cup water ​

Method;
Preheat oven to 200°C.
Trim excess fat from lamb.
Put lamb in baking dish and bake in hot oven for 15 minutes.
Combine tomato sauce, brown sugar, vinegar, mint jelly and water in a saucepan and bring to a boil.
Remove from heat then pour sauce over lamb.
Reduce heat to 180°C and bake a further 40-45 minutes or until meat is tender, basting frequently with sauce.
Sprinkle with rosemary if desired.
Serve with mashed potato and your favourite greens.

Tandoori Chicken on Moroccan Cous Cous
This recipe is a solid family favourite. It is a really easy recipe that can be prepared in advance for more mature flavour or last minute when you get home from work. ​
Bullock family - Oscar and Hamish ​

Prep time: 15 minutes ​
Cook time: 15minutes ​
Serves: 6 ​

Ingredients;
1 kg Chicken (tenderloins, or sliced breast) or 2kg if using Chicken Legs
3 tsp Tandoori Paste (store bought is fine)
3 tbsp of Greek Yoghurt
Coriander for garnish (only if you like it!)

Method;
Cous Cous:
2 cups dry cous cous (1/2 cup per person)
½ tsp Ground Turmeric
1 tsp Ground Cinnamon
1½ tsp Ground Cumin
Salt and Pepper to taste
Olive Oil
2 Cups boiling water
Vegetables of your choice (Frozen pea, carrot corn mix is an easy choice)

Easy-Peasy Mousse ​
This recipe came from the Lola Berry recipe book: The 20/20 Diet Cookbook. ​

Prep time: 10 minutes ​
Serves: 4 ​

Ingredients;
2 large avocados
6 Medjool dates, pitted
2 frozen bananas, chopped
3 tbsp cacao powder
1/2 tsp ground cinnamon
Pinch pink salt

Method;
Put avocados, dates, bananas, cacao powder, cinnamon and salt into food processor; blend until smooth and silky (40-50 seconds).
Serve in bowls. ​ Serve chilled with chopped fresh strawberries and shaved coconut on top.

Cheats Sourdough Bread ​
I have had this recipe scrawled on a scrap piece of paper for years! Not a traditional sourdough, but super easy and delicious! ​
McDonald family - Harry and Eliza

Prep time: 10-18 hrs ​
Cook time: 50 minutes
Makes: 1 loaf ​

Ingredients;
3 cup plain flour
1½ cup warm water
1 tsp dried yeast
1½ tsp salt ​

Method;
In a large bowl, mix all ingredients together. The dough will seem a little wet, this is exactly what you want. Cover bowl with cling wrap and leave to prove on the bench for 10-18 hours. The dough will double in size and seem very wet.
After 10-18 hours, you will need a large heavy pot with a tight fitting lid. A Le Creuset pot or Dutch oven is perfect.

Decadent Chocolate Brownies ​
These brownies are simple to make and an absolute favourite sweet at our family gatherings. I often make double and freeze half.
Morris family - Henry

Prep time: 20 minutes ​
Cook time: 55 minutes
Makes: 20 squares ​

Ingredients;
150g butter
300g dark chocolate
1½ cups firm brown sugar
3 eggs
1 tsp vanilla extract
¾ plain flour
¾ cup chocolate chips
½ cup sour cream
¾ cup macadamia cups (optional)

Method;
Preheat oven to 160°C.
Prepare slice pan 19cm by 29cm.
Melt the butter and 300g chocolate slowly in a saucepan. Allow it to slightly cool.
Stir the brown sugar, eggs and vanilla extract into the chocolate mixture.
Sift in the flour and stir.
Add the sour cream, choc bits and macadamia nuts.
Pour into tray.
Bake for 35 minutes, and then cover with tin foil.
Bake for a further 20 minutes.
Cool in pan before slicing.

Muesli Slice
This recipe is a family favourite.
O’Loghlen family - Sarah, Maeve and Eleanor

Prep time: 10 minutes
Cook time: 20 minutes
Makes: 20 pieces

Ingredients;
2 cups rolled oats
1 cup plain flour
¾ cup castor sugar
1 tbsp coconut
1 cup chopped raisins, dates, apricots
170g butter
1 tbsp boiling water
1 tsp bi-carb soda
1 tbsp golden syrup

Method;
Measure and combine all dry ingredients.
Melt butter with golden syrup, bicarbonate and hot water.
Add the butter mix to dry mix.
Stir until well combined.
Press into lined slice tray.
Bake in moderate oven 15-20 minutes.
Vary the dried fruit depending on what you have.
Cool in fridge before cutting into slices.
