per serving:
8 oz raw cut up chicken breast
1/4 cup broccoli
1/4 cup mushroom
1/2 cup red bell pepper
1/2 cup riced cauliflower
2 tbs soy sauce
1/4 tsp red pepper flakes

Cheesy Pepper Chicken and Rice Casserole
Preheat oven to 400
3 oz Grilled Chicken sliced/diced
2 oz Low-fat Greek Yogurt
1.5 oz Low-fat Pepper Jack Cheese, shredded or cubed
¾ C Riced Cauliflower
2 oz Diced Green Chilies
[This is for 1 serving multiply as needed]
Mix all together, place in a casserole dish and bake for 20 minutes or until slightly browned and bubbly. Serve with a side salad or other healthy veggie.

Crockpot Pizza Casserole 🍕
Ingredients:
1 lb uncooked 95 to 97% lean ground beef ~ 12 oz cooked
1 tsp garlic powder
3/4 tsp salt
1/4 tsp black pepper
1 tsp dried oregano leaves
1 tsp dried basil whole leaves
1/4 cup fresh grated parmesan cheese
2 cups (7.04 oz) roughly chopped fresh cauliflower
2 cups low carb marinara sauce
1 and 1/2 cups reduced fat shredded mozzarella cheese
2.5 oz turkey pepperoni slices, divided
Directions:
✨Over medium high heat, cook ground beef in a large skillet. Add garlic powder, salt, and pepper. Drain grease. Remove from heat.
Add dried oregano, dried basil, cauliflower, parmesan cheese, marinara sauce and 1 oz of turkey pepperoni that has been cut into fourths to the ground beef until combined. Pour into a slow cooker that has been sprayed lightly with cooking spray.
✨Cook on LOW for 4 to 6 hours.
Top with mozzarella cheese and additional 1 ounce of turkey pepperoni. Cook for an additional 30 min on HIGH or until cheese has melted.
Makes 4 servings

5 tbsp Fat-free half and half
1/2 teaspoon taco seasoning
2 cups reduced-fat Mexican cheese blend, shredded
Topping
35 oz 93% lean ground beef, uncooked ~ 24 oz cooked
5 teaspoons taco seasoning
1 cup tomato puree
4 ounces chopped green chilies
1 cup reduced-fat Mexican cheese blend, shredded
