Dark, fudgy and moist Chocolate Banana Walnut Cake.
I wanted something more authentic than just mixing all ingredients for a chiffon cake, with ube as one of my favorite. I have ube halaya and macapuno in mind, which are the best combination, and thought of mixing it with the batter mixture. Very carefully folding the halaya and macapuno to keep it afloat during baking, and π is a slice that absolutely satisfied me. The taste: yummy! Tropical ube macapuno cake!

EMPANADA
Deep fried at left, is crispy and flacky. Frying time takes about 7 minutes. However, crispiness stays few hours only. Oven baked at right, for 30 minutes, and stays crisp even when refrigerated.
Rich in goodness. Buttery. Every bite has meaty chunks, topped with, and mixed with osterized fruit in buttermilk. It tastes better than it smells π .
Intense deep chocolate taste at first bite! And it is super moist! Then finish off with a freshly steeped Oolong tea. What a satisfying snack while in extended vacation. π€

Super soft and fluffy pizza roll...with the pizza sauce cooked in slow fire to allow the spices to blend well with the other ingredients. Banana coconut cupcakes...It is absolutely delicious! It has an enriched flavor of ripe bananas, and mixed with dessicated coconut, plus brewed coffee and milk. Yummy!

P**o are filipino steamed rice cakes, from fermented rice dough. It is eaten as is or as an accompaniment to a number of savory dishes (most notably, dinuguan). The fermented rice dough have evolved to the use of flour that we now call as p**o cake. As more opt to eat p**o with dinuguan, i thought of combining the two, with the dryer "tinumis" on top, with a slice of salted egg on the side, that i now call "p**onumis".
Ube,macapuno,and cheese are coordinate tastes that's been tried in cakes and icecreams. And i tried it in bread pudding with ube flavor, poured in my best custard recipe and topped with macapuno and cheese. And wow, the repeat orders speaks for the resultant taste. To this day, i cant say no to client's requests. And yes, served cold, they say it's like icecream too!
