Healthy , delicious, vegan summer salad (Well it’s summer summer in the world at least ) 😀
MUNG BEAN SALAD
Ingredients:
1 cup of mung beans
YNUT walnuts
Sweet corn
Green pitted olives , sun dried tomatoes
Dill , parsley , olive oil, lemon juice
And pomegranate press - YNUT
Mung beans are one of the best plant-based sources of protein. They’re rich in essential amino acids, antioxidants, and nutrients that may help reduce blood pressure, LDL cholesterol levels, and heart disease risk. Therefore I cook mung beans quite often and most of the time have it as a salad.
I like to ferment the beans before cooking ; soak them for at least 24 hours then boil them till they are cooked , drain the water then add olive oil , lemon juice and pomegranate press immediately and leave it to cool down before adding the greens .
Crush some walnuts , chop the greens and rest of the ingredients and mix them all together and it’s ready to serve .
I sometimes add sun-dried tomatoes, fresh cucumbers or pickles so you can add the things you like too .

Hey everyone , it’s rainy and dull outside so it’s a bit quiet today in the shop. My popular pistachio butter which I made last week sold out straight away so it’s time to make some more !
I love pistachios and pistachios butter is so delicious and creamy .
Made it and enjoyed it on a toast already !
Use pistachio butter :
As a spread for sweet or savory crepes.
Spread dessert crepes with pistachio butter and honey, and fold and top with yogurt or vanilla ice cream.
As a topping for crostini
As a flavoring for ice cream, mousses, and buttercreams
As a croissant or Danish filling
As a filling for chocolate confections
In a frangipane filling for fruit tarts
Basic , VEGAN , full of protein beluga lentil salad !
I love easy and healthy salads for my lunch & dinner , here another one if you’d like to make it at home :)
Ingredients:
Beluga lentils ( boiled drained , you could use 1 pack of ready to eat ones )
Red & yellow pepper ( chopped )
Rocket salad
Olive oil & lemon or pomegranate press
Walnuts from
Goji berries
In a large bowl mix all the ingredients and enjoy your salad ! You can add feta cheese & avocado or any other greens you like , have it as your main dish or side salad ! Yummy 😋
I’d like to play with ingredients when I am cooking and use substitutes products and make them healthier/ vegan / low calorie . I’d like to share my semolina vegan halva recipe with you today , easy to make and delicious!!!
NO ADDED SUGAR AND VEGAN HELVA / HALVA
Irmik Helvasi (Turkish Semolina Halva) is a traditional dessert widely popular in the Mediterranean and Middle Eastern countries.
Ingredients:
250 gr semolina
Pine nuts from
4tb olive oil ( originally butter)
500ml Water ( milk can be used )
I’ve used around 200ml of no added sugar grape molasses ( you can use sugar or any other substitutes)
Orange zest ( optional)
Ice cream ( optional )
How to make it :
Add some olive oil to a deep pan on medium / low heat , then add some pine nuts sauté for a few minutes until it starts changing colour.
Lower the heat, and add the semolina to the pan.
Cook the semolina for approximately 15 minutes, until it is golden brown, stirring to prevent the mixture from burning.
Allow the semolina to brown and get fragrant without burning it, or else the halva will become bitter.
When you notice the color of the semolina begins to brown, add water and grape molasses ( if you are using sugar boil the water and add the sugar in it stir it until the sugar dissolves and add milk ) and stir .
Cook the halva over low heat until the syrup is absorbed and the helva is thickened, then remove the pan from the heat.
Let the helva rest until all the liquid is absorbed and it's cool enough to eat 🤤😀 or to serve it with ice cream like did at a dinner party in the past :)
I’ve shaped it with a bowl and added some more pine nuts& pistachios! Love them 🤣🤤
You can decorate it with some coconut or nuts even cinnamon too .

It’s Sunday and it’s my off day so at home did some cooking that I’d like to share with you guys .
FLOURLESS AND NO ADDED SUGAR BROWNIE! Yummy !
For vegan version instead of eggs you can use aquafaba which is basically chickpea water that you can buy either from the supermarkets or make it yourself .
Here is the ingredients & recipe ;
- 4 eggs,
- half a pack of baking powder,
- 5-6 tablespoons of tahini / freshly made tahini
- 6 dates , if you want t make it sweeter then use 10 dates / you can buy them ,
- dark cocoa,
- walnuts again you can find the best quality walnuts
- 2-3 drops of lemon juice
First of all, we foam the eggs thoroughly, then put all the ingredients in a rondo and pour them into the mold and cook them in an oven at 160 degrees for 40 minutes.
It takes 5 minutes to prepare, it’s texture and taste is amazing 😊

Here is another health salad that I made yesterday with walnuts , salad lovers and my vegan followers will love it !
Ingredients:
3pc of beetroot
Lemon juice
Ynut - pomegranate molasses
Ynut walnut
Ynut cranberry ( optional )
Vinegar
Handful of dill
Handful of parsley
Sumac , cumin and chilli flakes ( optional)
How to make :
Peel the beetroots ( don’t forget to use gloves otherwise your hands might go red) , wash and boil them about 20 min until they are soft . Drain the water and chop them into small pieces , add Ynut walnuts and the rest of the ingredients and your vegan salad is ready!
Hey everyone , so you know I’ve made the flourless bread yesterday and today cauliflower salad ( cauliflower kisir ) , in the original recipe there is bulgur wheat but I’ve used cauliflower instead .
Ingredients:
1 medium size cauliflower
1 small size onion
4 tablespoons olive oil
1 tablespoon tomato paste
½ bunch of fresh mint
½ bunch of parsley
1 teaspoon of cumin
1 teaspoon of red pepper paste
2 teaspoons of salt
Juice of 1 lemon
Fresh Mint and
Pomegranate molasses - Ynut
Walnut - Ynut
HOW TO MAKE IT!
Take away the leaves of cauliflower and wash.
Chop the cauliflower into small pieces and put the pieces into a food processor and process until they get the size of bulgur.
Saute the chopped onion, olive oil and tomato & red pepper paste.
Then add the cauliflower and keep on sauteing.
Let the cauliflower cool for 15 minutes.
Add chopped greens, spices, salt, lemon juice and plenty of pomegranate molasses , handful of walnut and mix.
It’s ready to eat and no one will believe you it’s not bulgur !

Since it’s bank holiday will be open at 11am so I am at home cooking for the week ! I’ve made no flour keto bread this morning and want to share the recipe with you guys ! I’ve used the tahini I make in the shop which is natural 100% sesame seeds !
Flourless bread with cheese :
4 eggs, half a pack of baking powder, 5-6 tablespoons of tahini & cheese .
Beat the eggs thoroughly, then add the tahini ( I’ve used the one from Ynut ) and your choice of cheese and some parsley and baking powder then cook it in the oven at 160 degrees for about 30 minutes. You can also add some walnuts or your choice of herbs too .
It takes literally 5 minutes to prepare .
