Homemade Mushroom Meatballs
This week I batch made mushroom meatballs thanks to a recipe of Deliciously Ella’s I found (I can’t take credit for this one!)
Some I froze and some I had throughout the week on top of salads such as this yuzu salad made with lettuce, cucumber, tomatoes, kidney beans, bortolli beans and fresh parsley - yum yum!

I just made such a healthy habits salad that’s I had to share it!
It’s all about the toppings and the dressing and here we have activated nuts and seeds with a tahini dressing!
This dressing is which is stocked on Greedy Vegan along with the activated nuts and seeds and hummus

Roast Fennel topped with delivered Plant-Based Parmesan 🧀
This Parmesan is insane as it includes nutritional yeast, truffle oil and cashew! Yumm!!!

With such a focus being on eat locally and seasonally I’ve been trying to find an alternative for avo 🥑
I find myself regularly buying one in the supermarket when actually I don’t want to always be supporting the crazy air miles!
I finally found an unreal alternative this is pea, lemon and basil blitzed together in a blender to produce this fresh toast topping! It’ll be delicious as a smashed avo alternative any day!!

PSA: Although I’m Vegan I do still eat eggs! I don’t have a problem with Eggs and I always believe you’ve got to know your why when your cutting things out your diet!
Whether it’s health, environment or animal welfare! You’ve got to have a reason you believe in!
I believe eggs are good for you and as long as your buying organic eggs then in terms of animal cruelty it doesn’t offend me 😊

Shakshuka Greedy Vegan Style
This was a winner 🤩 using three of the Greedy Vegan products I made this Shakshuka with mushroom meatballs, chickpeas and plant-based Feta!

Mixed Greek Cous Cous with Roast Bites thanks to , kale and rocket
I’ve never liked Feta but this plant-based Feta from is insane, made from cashews and lemon it’s so fresh and light and tastes delicious and a olive, fresh mint, tomato, cucumber and capers cous cous
I like to make a big batch of cous cous for the week so I can add it with different proteins!
I know im biased but Greedy Vegan is sorting me out for my proteins for the week and trying new cheeses is so exciting too!
Cacao and Ginger Smoothie
Wow what a start to the day! This smoothie tastes like heaven but it’s full of superfoods!
Cacao is so good for you and mix 1 Tbsp of that with 2 medjool dates, a frozen banana, a thumb sized piece of fresh ginger, chia seeds, linseeds and coconut milk
I also added 1 tbsp of protein but you could also add almond butter instead

My lunch today was homemade baked beans and sautéed mushrooms 🍄
I’m really not a baked bean kind of girl but homemade ones are heaven!
I made these with cannellini beans and chopped tomatoes and you just let it simmer until you get the right consistency, whilst adding in some spice and paprika to give it a bit of sparkle ✨
Cannellini beans are so high in fibre and vitamin C they are great to incorporate into our diets whenever we can, especially being plant-based
Buckwheat Porridge ❤️
If your a porridge lover then this one is for you, using buckwheat groats instead of oats adds more protein to your bowl as well as a bite!
Simmer the buckwheat in water with a splash of vanilla essence and cinnamon for 20 mins until soft and then add your plant-based milk and stir until warm!
It’s so yummy with a great texture - give it a go!
Cannellini Bean Risotto with Spinach and Slow Roasted Tomatoes
This is a real winner for a quick, easy, lean and tasty dinner!
Slight twist on a dish as I added spinach but using cannellini beans instead of risotto rice is super tasty and the beans can get really creamy!
Slow roasting the tomatoes and adding them on top is also a real winner and can also be done with normal risotto too ❣️
If I did this again I think it would be as a side dish!
Playing around with a new recipe for Greedy Vegan and this was my first attempt at this dish and it was a winner
A creamy noodle soup which oozed with flavour with crispy tofu on top! I did the Tofu differently here and it was insane!

Shakshuka in the Alps 🏔
I do love a shakshuka, although I normally would have it for brunch my family really fancied it so I did it for dinner! It really is perfect any time of day!

Butternut Squash Dahl
I have never eaten so much Butternut Squash in one month! This vegetable is definitely in season and there is clearly surplus as there is so much of it at the moment
So I decided to batch make this delicious butternut squash Dahl with red lentils
Recipe:
1 red onion
3 Garlic Cloves
300g red lentils
1 large butternut squash
1 tsp cinnamon
1 tsp ground cumin
1 tsp tumeric
1 tbsp curry powder
1 thumb sized piece of ginger
Bag of fresh spinach
Can of coconut milk
125ml almond milk
Juice of 1 lime
Coconut yogurt
Method:
1. Start by peeling and chopping your butternut squash and roasting it at 200C with olive oil, cumin, cinnamon, salt and pepper
2. Chop onion, garlic and ginger and fry for 5 mins
3. Add in all the spices and mix well
4. Add in the red lentils and coconut milk and let it simmer until all the liquid is absorbed
5. Add in almond milk a bit at a time until it is the correct consistency and the red lentils have cooked through
6. Add in the lime and fresh spinach and stir well
7. Once the butternut squash has cooked add it to the saucepan
8. Serve with coconut yogurt and fresh parsley and chilli if you would like

A few dishes here have been seen on Healthy Habits before! The tuna cucumber sandwiches are a favourite of mine, also the chicken satay skewers are very popular too!
Everything the eye can see is plant-based! So impressive where the industry is heading!
I’ve found a new love, Flax Seed Bread 😍
I’ve never been huge into bread, always found it quite dry and plain (I know this sounds strange) but flaxseed bread is amazing, so light, with incredible flavours from the roasted seeds and additional herbs!
I bought this from a local bakery but will be on the hunt for some others!
Any recommendations welcome 😊

Mixed together with kale, puy lentils, cucumber and a miso tahini dressing 😍
Lean but super tasty lunch!
Got the protein, the fresh vegetables and a heavenly dressing
Dressing recipe:
1 tsp tahini
1 tsp brown miso paste
1/2 tsp honey
Squeeze of lemon
Water to make it runny

Having turned vegan sushi was definitely one of the things I missed the most and now with this salmon from I don’t have to worry anymore!

Porridge Season 🍂
Porridge toppings are endless but for me I just like the classics, banana and blueberries with honey
Let’s talk 🍯
This honey I’ve used is local honey from a family friends bee hive and this is the best way to eat honey
Although it’s not really runny which is what we’re used to - honey isn’t supposed to be like that and it gets mixed with other sugars and additives to get it to that consistency
So if your conscious of what you eat, make sure your eating the right honey and stay away from main brands such as Rowse
Although you may argue it’s more expensive you don’t need as much of it and it lasts a lot longer

Egg and spinach wrap!
So lean and high in protein 💪🏻🤎
Recipe:
•2 eggs, whisked together and poured into a hot pan with a tsp of coconut oil
• Place spinach leaves on top
• Cook on a medium heat for 2/3 mins on each side
• Top with your favourite toppings ❤️
