Dan's birthday cake this year was a little different from last year's Homer Simpson.

This Tiramisu is a popular version that you can find in a few cafe’s in Malaysia. (Hello all you China House and Alexis fans!) When I met Dan, one of our first dates (where he knocked over my cup of coffee by accident) was at a cafe, where they served this particular type of Tiramisu. Since then, we have gone back and had it time and time again over many more unspilt coffees!

Until Dan had asked if I could try and replicate it, I honestly never really considered it assuming it would be complicated. Now that I have, it is definitely going to be a recipe that I will use again as it is a lot easier than it looks.

Built on top of a simple Italian sponge cake – this cake is creamy with hints of coffee, chocolate and Amaretto, coated with caramelised almonds for an added crunch.

It’s St. Patrick’s Day! ☘
Even though I only lived in Ireland for under 3 years, the people I met (who I call friends till this day) and the country made me feel very much at home. Needless to say I have fond memories of my time there and of course the celebrations and festivities on St Paddy’s Day!
So in honour of St Paddy’s Day and thanks to challenging me to a very random bake off, I decided to make my chocolate cupcakes spiked with some Guinness and topped with Cream cheese frosting coloured in green and white.
While I do not drink Guinness (unless I am in Ireland as it tastes different and is actually yummy!) I love Guinness in baking and ice cream as it really brings out the chocolate flavours and adds a malty flavour to it.
And as if this didn’t make it rich enough, it also has sour cream - ensuring that it isn’t too sweet but very chocolatey and moist.
To all my friends in Ireland - I hope you’re havin a bit of craic - despite the restrictions this Paddy’s day!

Sambar is a South Indian lentil based dish (curry/stew?) which is vegetarian and has a little sour kick to it. It usually has vegetables like moringa (drumsticks) and eggplant, is flavoured with tamarind making it a little sour and is served with idli, dosa or rice. While traditionally it takes a bit more time and is a little tedious, it can also be made as a one pot meal and is something my mum started doing for weeknight dinners....
