My heartery healthy food doesnāt always look wildly appetizing but it usually tastes pretty good, and if not itās nowt a pickled onion canāt sort out.
This beans on toast with added nutritional yeast, chia seeds and power greens is quite tasty on itās own, but Iām still going to add a pickle š
As I relax on a comfy chair in a candle lit room of lovely things, my daily Calm meditation today focused on gratitude. With so much to be grateful for and only ten minutes to fit it all in, it was interesting to see where my mind would take me, or should I say who my mind would take me to.
In the last ten minutes Iāve hugged my son, really hugged him tight and felt every ounce of love and appreciation for him, literally experiencing and feeling it as though it was happening in physical form rather than mind space. I did the same with my now 88 year old mum, Babsienoodles. They are both 5,000 miles away yet this morning we were together.
My mind then took me to my wonderful friends where I partied in both Liverpool and London with such joy and love for my Divas. Next I found myself sitting at a kitchen table chatting with oldest friends over a nice hot cuppa. Grateful for the nowment and our shared histories. That some of them first came in to my life before our teens and all these friendships continue, picking up from whichever decade we last left off as though it was yesterday, but with fuzzy memories š
My meditation then brought me closer to home, to friends made this side of the pond and deep appreciation of their acceptance of this foreign, tea-drinking, wine-swilling newcomer.
I next found myself with my newer family. My step children, my mother-in-law who has embraced me as her own and all my husbandās family, family time with lots of laughter on the beach in Puerto PeƱasco, temperature, breeze and loving company was perfect.
And finally my husband and dog Kora. We were cuddled together on our sofa watching a film, something we do most evenings yet here, in my wildest imagination of appreciation my mind highlighted this simplest of pleasures as one of my treasured gratitudes.
What a journey Iāve been on, and all before 6.00am
Be so very grateful for all you have, but if you have to squeeze it in to ten minutes, where would you find your deepest appreciation settles?
This learning curve on my quest for has me experimenting with foods and things Iāve never heard of. It can end in thankfully more delish than disaster and last nightās achievement left me drooling.
My most favourite food in the world is a chip butty (French fry sandwich definitely does not have the same ring to it) whatever you call it, they have been out of bounds for me since giving up oil. So yesterday I was THRILLED to discover how to make āno oil French friesā by
I tweaked the dead easy recipe a tiny bit to suit my oven and also reduced salt intake. The result was DELISH, especially when teamed with home made vegan chili and a side of More than satisfying for this chip-butty deprived lass.
They even looked like half decent chips, albeit a tad thinner than the local chippy but with a drizzle of vinegar and a dash of ketchup (still need to find a healthy one, it did the trick.
HOORAH! I can see a healthy future with chips in it which for me is definitely .
