AVOCADO TOMATO AND HERB SALAD✨

Ingredients:
2 avocados, larger diced
1 cup grape or cherry tomatoes, halved
handful of basil leaves
1/4 cup extra virgin olive oil
juice of 1 lemon
1 tbsp champagne vinegar
1 tsp honey
3/4 tsp grated ginger
salt and pepper to season
high quality olive oil for drizzling
flaky sea salt for serving

Directions:
Add your olive oil, lemon, vinegar, honey, ginger, salt and pepper to a bowl and whisk to combine
Gently toss your avocado with your dressing and set aside to marinate while you prepare the rest of your meal (I let it sit anywhere from 10-30 minutes)
When ready to eat, add your tomatoes and basil
Generously drizzle with olive oil and season with flaky sea salt
Serve and ENJOY!

This stuff never gets old! Topped with my fave Made it a few days ago and the leftovers are just as amazing. The holy grail of recipes, y’all! 🤣🤣🙌🏼🙌🏼 Have you tried it yet? I have a bubble highlight on my profile with step by step instruction videos. I now use 2lbs of ground beef and 3 bell peppers and I didn’t have kale this time. Cheesy Zucchini Tater Tots
Serves 4

Ingredients
4 zucchini’s, shredded
2 eggs
1/2 cup bread crumbs or Panko
1 tsp garlic powder
1 tsp onion powder
1 cup shredded cheese
1/2 cup Parmesan cheese
Salt & pepper
Lemon Aioli
1/2 cup lite mayo
1/2 lemon, juiced
Lemon zest
Black pepper

Directions
1. Shred zucchini and add to a bowl. Add 1 tsp of salt and mix together. Let sit for 20 minutes. Add shredded Zucchini to a towel or cheese cloth and drain out all of the water.
2. Add shredded zucchini to a bowl and add in cheese, eggs, bread crumbs and seasoning and mix together until combined. Using a teaspoon, spoon out the mixture and form into tater tots.
3. Spray Airfryer with cooking spray and add tater tots to the Airfryer. Do not overcrowd. Bake for 14-15 minutes at 350F degrees. Flip the tater tots half way.
4. Combine mayo, lemon juice, lemon zest and black pepper in a small bowl. Mix together and set aside.
5. Remove tater tots from air fryer and let cool for 5 minutes. Plate and top with Parmesan cheese and parsley. Serve with lemon aioli and enjoy!

9 out of 10 times I would choose a sweet breakfast over a savory one. But this morning I woke up with a niiiice craving for some smoked salmon! Seriously so goood with the runny poached egg, avocado🥑, mushroom🍄, and tomato🍅! Her savory bowls are insane 🤤
Smoked Salmon Bfast Bowl⏩
INGREDIENTS

1 egg
Tomato
Red onion
Mushrooms
Avocado
Capers
Spinach
White distilled vinegar
Salt & pepper
Lemon juice
DIRECTIONS
For the egg, bring water & 2 tbsp of vinegar to a boil. Crack the egg into a small dish. Use a spoon to swirl the water around & create a “vortex”. Pour the egg in the middle of the vortex & lower the heat. Take the egg out after 2 ish mins (just depends on how runny you want it).
Serve everything over a bed of spinach & top with lots of lemon juice, salt & pep.

Who doesn’t love a fresh flaky fatty piece of salmon for lunch! Well I definitely do! 🙋🏻‍♀️so today lunch is just that! Salmon is spiced with a little salt and pepper, turmeric and chili flakes then seared on pan with coconut oil! Some green beans and tomatoes to go with it and some 🍳 because I skipped breakfast!

Baked Salmon and Asparagus in Foil with Lemon Garlic Butter Sauce 😋😍 by

Ingredients:
2 slices of salmon fillet
2 tablespoons vegetable broth or chicken broth
1 1/2 tablespoon fresh lemon juice, or to taste
1 tablespoon of your favorite hot sauce (we used Sriracha)
4 teaspoons minced garlic (4 cloves)
Salt and fresh ground black pepper, to taste
3-4 tablespoons butter, diced into small cubes (or ghee)
2 tablespoons fresh chopped parsley or cilantro
1 lb (450g) medium-thick asparagus, woody ends trimmed

Instructions:
1. Preheat your oven to 425ºF (220ºC). Cut 2 sheets of 14 by 12-inch (35 x 30 cm) heavy duty aluminum foil then lay each piece separately on the countertop. In a small bowl, combine the ingredients for the sauce: broth, lemon juice, and hot sauce.
2. Divide salmon fillets onto the aluminum foil near the center then place trimmed asparagus to one side of the salmon, following the long direction of the foil.
3. Sprinkle over garlic and then season with salt and pepper. Drizzle the sauce generously over the salmon fillets.
4. Divide butter pieces evenly among the foil packets, layering them over the salmon and asparagus.
5. Wrap packets in and crimp edges together then wrap ends up. Don’t wrap too tight – keep a little extra space inside for heat to circulate.
6. Transfer to a baking sheet and bake in the oven, sealed side upward until salmon has cooked through, about 9 – 12 minute.
7. Carefully unwrap the baked salmon foil packets then drizzle with more lemon juice and garnish with fresh parsley or cilantro and a slice of lemon. Enjoy!

Notes:
1. You can double the amounts for a family meal.
2. In general, it is better to not overcook salmon. If you like salmon and asparagus a bit crispy, just open the foil packs and broil in the oven for 2 minutes.
3. If aluminum foil is a concern, you can use parchment paper to make the packets
4. For non-keto dieters, a teaspoon of honey over the salmon fillets is a must!

Ingredients (4 servings) - 700g broccoli - 4 eggs - 150g cheese (grated) - 50g almond flour - 250g low-fat quark - 2 handfuls of cashew nuts - 1 onion - 2 cloves of garlic - 1 bunch of chives - 4 tablespoons of carbonated water - 4 tablespoons of olive oil - 1/2 tsp salt - 1/2 tsp pepper preparation
Divide the broccoli into florets and chop or chop with a grater on the lowest level. Whisk 100g cheese, eggs, almond flour, quark and water in a bowl. Roughly chop the cashew nuts and add. Chop the onion, garlic and chives and add to the egg mixture. Season with salt and pepper. Chop the chives and fold into the batter together with the broccoli. Heat the olive oil in a pan (the bottom of the pan must be completely covered), heat (medium heat) and add 1-2 tablespoons of batter to the pan for each buffer. Fry crispy and golden brown on both sides. Place the buffer on a paper towel and allow to drain. Bake out the remaining batter. Sprinkle the pancakes with cheese and serve.
