In the kitchen working on some new recipes for you all today. I had a crazy insane day yesterday and got all my errands done, so that I can spend the day in the kitchen. Bought a dress for my rehearsal dinner (finally!!!), went to the eye doctor and got new glasses, and went with my mom to her dress fitting. Got home late and was craving a martini. Had a dance party with my dog, Nelly, and went to bed on the early side after that long day. Needless to say, I am READY to be in the kitchen today.

SWEET AND SPICY CHICKEN SUMMER ROLLS

When you want something healthy, but with A LOT of flavor, eat these – my summer rolls will hit the spot! They're one of my favorite lunches, but I also like to serve them as small bites with cocktails.

I love summer rolls, because you can really mix and match what you put in them. Allergic to mango? Leave it out or add a different fruit instead. You get the idea, have some fun with it!

CARAMELIZED FENNEL AND DUCK SAUSAGE PASTA

This caramelized fennel and duck sausage pasta should be put on your dinner menu at least once a week. It’s just that good! Your friends and family who eat it will thank you. ⁠

I buy the delicious duck sausage from at the Union Square Farmer's Market. I love all their products: duck breast, duck fat, rillettes. Everything is good! Highly recommend you go check 'em out and buy something from them. ⁠

CLASSIC CHICKEN MILANESE WITH ROASTED TOMATOES, PARMESAN, AND ARUGULA⁠

MY GRANDMA'S FAMOUS IRAQI RED RICE

My grandma’s famous Iraqi red rice is THE rice that guests will come back for. Crispy on the outside, fluffy on the inside – YES!

I grew up with my grandma making this rice for my family every week, and I am so happy that she taught me how to make it before she passed. It’s one of many Iraqi Jewish dishes she showed me. Rice like this with a crispy crust is very typical in Iraqi and Iranian cuisines, and there are many different variations. Iranians call the crispy part Tahdig, but my Iraqi family calls it Hakaka, and it’s by far my favorite part of the rice.

IRAQI CHICKEN SCALLION PATTIES WITH PICKLED MANGO TAHINI⁠

These chicken scallion patties are one of my favorite recipes I learned from my grandma – basically my entire childhood!⁠

My grandma and her family grew up in Baghdad. We call these chicken scallion patties Beytha B’laham and the pickled mango condiment is called Amba, which is commonly used in other Middle Eastern cuisines. Have you tried it before?⁠

Have you ever cooked fish in parchment before? Now's the time to try with my recipe for Fluke Cooked in Parchment. It's one of my favorite ways to cook fish. The result is this beautifully tender and juicy fillet. Literally every time. The combination of extra-virgin olive oil, wine, and juices from the vegetables help to create this fabulous sauce as well. ⁠

If you don't like or can't eat some veggies used here, feel free to substitute with another. I wouldn't use harder vegetables, like carrots, since they require additional cook time, but mushrooms, bok choy, fennel, and corn are some good options. Just cut them (minus the corn) into similar-sized pieces as I do for the vegetables in this recipe.⁠

I've mentioned it before, and you'll hear it again and again, but I'm currently doing the diet. a.k.a. no sugar (sigh). One day I woke up craving something sweet. I did a little research on what keto-friendly sugar substitutes there are and found monk fruit sweetener. Luckily my local grocery store had granulated and powdered - I bought both!⁠

Haven't worked with monk fruit sweetener before? I really like . So easy to find in most stores and they have other cool products like baking mixes and extracts. ⁠

For those of you who don’t know, I’m getting married in March! So naturally, I’m shedding for the wedding. I’m currently on the diet and it’s working really well so far. ROASTED TOMATO & CHICKPEA SOUP⁠

This roasted tomato and chickpea soup is fantastic, and the yogurt crema and crispy chickpea garnish make it a restaurant-quality dish that you can make right at home.⁠

This soup is everything you want to eat on a cold Fall or Winter day. It’s healthy and hearty, because of the chickpeas in the soup that give it substance. It’s herbaceous and tangy because of all the herbs and tomatoes. If you choose not to make the yogurt crema and crispy chickpeas, don’t worry – the soup is still a knock-out without them.⁠

SWEET AND SPICY SOY-MARINATED RIB-EYE WITH DAIKON RELISH⁠

Sick of your regular steak marinade? Try this Sweet and Spicy Soy Marinade that’s a little bit different than using plain soy sauce. It packs a ton of flavor into the meat - a little umami, a bit spicy, a hint of sweetness. If you'd like to just use the recipe for the marinade and not make the slaw, that's totally fine. It will still be AMAZING. And if you can't find daikon you can sub in regular white turnips, radishes, or jicama!⁠

Serving Suggestion: A side of roasted broccoli, braised bok choy (YUM), white rice, or spicy rice noodles. If you don't want to make the relish, the steak will be fantastic on its own, or you can whip up a simple Sriracha aioli (Sriracha + mayo = perfection). ⁠

Don't want to use rib-eye? Feel free to use any cut of steak you'd like! Skirt steak and flank steak are two excellent choices. I got my steak from , a local farm that's based in Dutchess County, NY, and it was amazing! ⁠
