It’s almost the weekend and we are one day closer to Christmas 🎄 Do I love this time of the year ! And since the fog has been hitting the coast these past days, it feels nice and cozy to be inside tucked between all the Christmas lights ✨
Today I wanted to highlight one of the items that are in the Collection : Weihnachtspunsch 🍵 or Wassail 🍎
I know it’s not really known around here but it’s an absolute Christmas favorite and classic all over Central Europe 🇪🇺
The base of this hot beverage is usually a herbal and fruit mix, composed of hibiscus, chamomile, dried orange 🍊 and lemon 🍋 peel, rosehips 🌹 & cornflowers 🌼. Then, cinnamon sticks, cloves, star anise and cardamom are added, as well as fresh apple juice 🍏 and a hint of tart cherry juice 🍒- this needs to be cooked really slowly, for all the flavors to infuse.
After that, the Punsch is set to rest over night before being bottled to drink !
It’s served hot and not only kids enjoy it, but adults as well, with a little shot of alcohol added ! The perfect drink for a cold winter afternoon !

Summer is in full bloom and I am definitely enjoying it - the warmth, days at the beach taking naps in the sand, the refreshing jump in a pool and the overall excitement that is in the air ! 🏖

I really love summer and one of the main reasons is all the ripe, sweet and juicy fruits ! And I LOVE apricots ! They have a little tartness to them but when ripe - this is well balanced with the sweetness of the fruit flesh 🍑
And one of the best ways to capture all the fruit aroma while keeping it as pure as possible is by making pâte de fruits.

Have you ever tried this berry compote ? 🍓🍒 it’s a staple dessert in Denmark and Germany during the summer months, when all the berries are ripe - just choose your favorite berries and cook them with a few secret ingredient, then you’ll let it cool and it’s best served with vanilla sauce or ice cream, whipped cream or even with pannacotta, rice pudding or flan! 🍮🍦🍧🍨
