Water chestnut, commonly known as singhara in Hindi, is a free-floating plant which grows in shallow water, fields, ponds or swampy land.

The kernels are itself delicious to eat and we can prepare so many healthy recipes .
*They are dried to make water chestnut flour whichis used to make Indian roti or Indian flatbread.
*The flour can also be used to make a batter for
making pakoras n puris.
*Using powder made by roasting and grinding thenut, make barfi, halwa and delicious fasting food (Vrat ka khana)
* Add simple oil, salt, pepper to boiled waternuts
and enjoy.
*Make a batter by taking nut flour, salt, and slowly
adding water until a paste forms. Dip in veggies such aspumpkin, yam, or sweet potatoes and deep fry.
*Whip up savory pancakes by adding water to the
nut flour, oil and spices.
* If boiling water chestnuts, add star anise, it will
highlight the nut’s sweetness and make the home smelllovely while cooking.

Kidney beans curry or in India, Rajma chawal.....best and healthiest brunch recipe....a perfect North Indian dish full of carbs and proteins..😋
Different flavours of chillies to onion and tomatoes..and of course great Indian spices and masalas..🍛
Before marriage, as I belonged to Maharashtra, never liked the taste of rajma curry...but after getting married to North Indian, my taste buds have changed I think..now it's one of our favourite  weekend lunch or dinner with a side salad...it can be a sprouts or vegetable..everything goes with this....

MY SOULMATE HUMMUS...!!😋

As we are all on the same page, let’s talk about what hummus is. If you aren’t familiar, hummus is a delicious spread or dip made from chickpeas, tahini, lemon, and spices. It’s lusciously smooth, with a bright lemon flavour and a little kick of garlic. I hope you’ll love it as much as I do!
It’s commonly consumed by people of the Middle East and the Mediterranean...
Nowadays, we can find store-bought versions at any grocery store. However, its best to make your own. Let me show you how!
Dressing:
*1 cup nicely cooked chickpeas
*½ lemon juiced
*1 clove garlic, roughly chopped
*½ tsp fine sea salt, to taste
*½ tsp ground cumin
*1 tbsp of tahini or 1 tsp of sesame seeds
*1 tsp extra-virgin olive oil.

Method:
*In a food processor, combine the lemon juice, garlic, tahini or sesame seeds and salt. Process until everything is mixed evenly.
*Add the cumin and the drained, over-cooked chickpeas to the food processor. While blending, drizzle in the olive oil. Blend until the mixture is super smooth...
This delicious hummus you can enjoy it with fresh veggies, slather it on a sandwich, or scoop it up with wedges of pita...I liked to make a healthy salad jar...do try guys it's yummmmn....

Love to eat homemade cheela's.. light, crisp and healthy... give basic moong dal cheela a yummy twist n wrap it with ur favourite stuffing...🌯
Cottage Cheese wraps - stuffed moong dal cheela...
Ingredients:

3/4 cup raw split yellow moong dal

1 tsp of finely chopped green chilli

1 tsp cumin seeds

1/2 tsp turmeric powder

1/2 cup grated paneer

1/4 cup finely chopped onion

1/4 cup finely chopped tomato

1 tsp chaat masala powder

4 tsps of cooking oil

4 tsps of green chutney

Handful of finely chopped coriander leaves

Salt to taste

Method:

To begin making the moong dal cheela, soak the moong dal for at least 6 hours/overnight.

Grind moong dal into a smooth batter by adding just enough water.

The consistency of the batter should be that of a regular pancake batter (do not add too much water).

Add salt, coriander leaves, cumin seeds, turmeric powder and green chillies to the batter.

In a bowl, combine all the ingredients for the paneer filling mixture and keep aside.

Heat a skillet and pour a ladle full of cheela batter in circular fashion from centre going outwards and drizzle a tsp of oil around the spread cheela batter.

Allow the cheela to cook to medium heat. You will notice brown spots appearing inside and around the sides. Let it get crisp. Then flip and cook the cheela for a about a minute.

Place it on a platter with the bottom side facing down, apply some green chutney and fill about scoop of paneer filling along centre of the cheela and fold it tightly, lengthwise.

Cut the roll diagonally into two pieces and enjoy a good healthy snack/meal.

One of my good friend Mrs. Shivani Kakrania, has started her own YouTube channel (No Rule Kitchen) shared with us a healthy snack recipe, "Green Brunch - Spinach Curd Sandwich"....
Delicious and quick to make, ideal for brunch, breakfast or evening snack.🌯
Ingredients:
2 slices of bread (whole wheat/ multigrain/banana bread)
2 tbsp. finely chopped spinach
1 tbsp finely chopped onion
1 tbsp boiled sweet corn
1 tbsp chopped tomato
2-3 tsps. of hung curd
1 tsp of finely chopped green chilli
Salt and pepper to taste

Method:
In a bowl, mix all the above ingredients and make a nice spread.
Take a bread slice and evenly spread the mixture, cover it with the other slice.
Grill/toast the stuffed bread sandwich nicely from both the sides.
Serve it hot with sauce or green chutney.

Sweet Sunrise - Mango Falooda.🍧
Ingredients:

*2 tsps of sabja seeds (Basil seeds)- soak it in ½ cup of water

*Handful of falooda sev or thin vermicelli, boiled and strained

*2 tbsps. of mango puree or pulp without sugar

*3 tbsps. Milk of your choice (you can add ½ tsp of jaggery or honey to give sweet taste to milk. As mango is a sweet fruit, this step is optional)

*½ medium sized mango, peeled and chopped in small pieces

*1 tbsp of mixed dry fruits

*¼ cup of any other fruit. I took pomegranate, you can take strawberries, cherries, apple etc. (its optional)

Layering of Falooda:

*In a serving glass, first add soaked sabja seeds (only seeds, not the water it was soaked in).

*Then add chopped pieces of the mango fruit, and slowly add milk above this layer.

*Add boiled and strained vermicelli and fruit of your choice.

*Layer the top layer with mango pulp/puree and garnish your falooda with seeds and nuts, serve fresh..

“Cinnamon” also known as “Dalchini” in hindi, is one of the most important and common spices used daily all over the world. In India, most curries and gravies are incomplete without adding this spice. Due to its exotic flavour and aroma, it is a key kitchen ingredient in every household and is also commonly used in baking. Cinnamon is made by drying small strips of the inner bark of cinnamon tree stems, which are finally curled into rolls called “cinnamon sticks”. These sticks are then ground to produce cinnamon powder.

*Health Benefits of Cinnamon:

*Cinnamon primarily contains, vital oil like “cinnamaldehyde”, mostly used for its anti-microbial and anti -inflammatory activity.

*It not only has antioxidant, anticancer, cardiovascular disease lowering compound, but also has been reported to have activities against neurological disorders, such as Parkinson's and Alzheimer's diseases.

*Cinnamon is known to help lower the blood sugar level in diabetics patients.

*It is also known to aid in regularizing menstrual cycles in women suffering from PCOS.

*Cinnamon also helps to increase metabolism, thus promoting weight loss.
Cinnamon tea🍵 is an easy to prepare, soothing and extremely healthy beverage. It can easily substitute milk tea usually consumed with one’s morning or evening snacks. You can also add cinnamon sticks to your regular tea, green tea, ginger tea and so on.

Recipe:

For 1 tea cup serve (180ml):
Ingredients for Cinnamon Tea:
*1.25 cup of water
*1 medium sized cinnamon stick
*A healthy substitute of sugar like jaggery, honey or date syrup
Method:
*Take a saucepan and add water with cinnamon sticks to it.
*Bring it to boil for 5 minutes.
*Add sweetener of your choice to taste.
Enjoy it hot.
