We love this soup. Easy to throw together in the instant pot and really filling. Potatoes, lentils, kale, carrots, smoked paprika....but definitely needs some hot sauce to tie it all together.🔥
So easy and we love it: whole wheat pasta, roasted cauliflower, chopped red onion, black olives and chickpeas. Tossed in Frank's buffalo sauce and homemade vegan ranch. 😋

Hummus pasta is so easy and this one is whole foods plant based with no oil! 🙌🏽 I made the hummus myself and used tahini...and the sun dried tomatoes were dehydrated, not packed in oil. 4 cups of spinach in there too, along with whole wheat pasta. 🌱🌱🌱
Vegan is still easy and delicious. These oatmeal chocolate chip cookies are from thr website, "It Doesn't Taste Like Chicken." We added walnuts but other than that followed the recipe exactly. Yummy on this cold day.
Teacher lunch prep done for the week: oats with chia, h**p, flax, cinnamon and a little brown sugar. It might be boring, but it's filling, healthy, easy, and cheap! I have an electric tea kettle in the classroom, so I set the water to boil while I walk the students to the cafeteria. When I get back, I pour water onto my oats and also make a cup of green tea.
I haven't been posting bc honestly I haven't been on social media much....but I checked out some vegan cookbooks from the library and I'm trying some new recipes. This hummus was super easy easy, although I will say the instant pot blitzed the chick peas. (Fine for hummus but I wanted to use some of the leftover beans for other recipes). This recipe is oil free. 🙌🏽
We looked and looked and never found rice papers in Puerto Rico. Happy to have spring rolls in Texas! So fresh. 🌱

Super easy and quick lunch. Plain brown rice, black beans, corn, and pico de gallo. The pico I made using can of Mexican tomatoes, canned bell peppers, an onion and spices.

We eat nachos weekly! Taco flavored lentils, roasted cabbage, corn, pico de gallo, avocado sauce. Who needs cheese? 😝
Bring on the heat! 🔥 Buffalo pasta salad. Super simple....whole wheat pasta, black olives, diced celery and red onion, two chopped and roasted zucchini. Mix with your favorite buffalo sauce and top with ranch.
Vegan gumbo for Easter dinner. It was so good!
Baked buffalo cauliflower "wings" over a spinach salad. Chickpeas and homemade ranch to finish off this yummy salad. Served it with triangles of toasted pita bread.
Black eyed peas for good luck, greens for 💲 and cornbread for gold. Best wishes for the new year!

Vegan fluffy pancakes with sunbutter and apples....and a side of homemade super easy vegan sausage. They are literally just oats, chia, flax, and seasonings and taste so good!
This cheese sauce is nut free....blended carrots and potatoes! Grilled zucchini 😋
Pasta with cashew cream sauce. Always hot sauce on our meals. Always.
Canned jackfruit makes the easiest and tastiest "pulled pork" sandwiches. We also found these pumpkin buns at the local market. Side of cabbage and roasted potatoes.
Fresh pumpkin.....roast it, puree it, easy pumpkin curry!
No power. No water. But still cooking great meals in the aftermath of Hurricane Fiona. Thank you gas stoves!
