I made Thai chicken Buddha bowls for supper last night. It makes a really good left over lunch too. I posted the recipe in the comment section. I love serving mine with some quinoa and a lot of kale. My favourite veggies in this bowl are red peppers, carrots, cucumber, purple cabbage, sugar snap peas, green onions and cilatro. Our girls did find it a bit spicy but I think it’s the right amount of spice. If you are vegetarian, you could use tofu instead of chicken as a protein. I can’t say enough of the peanut sauce. It’s delicious.
Oatmeal is so good for you! I’ve posted a recipe in the comment section for making the perfect rolled oats. I love topping mine with banana, almond butter, honey and h**p seeds.

A delicious green smoothie to kick off Friday. In this smoothie, you will find 1/2 cup of water, 1/2 cup almond milk, 1 banana, some cucumber and fresh parsley, 2 handfuls of spinach, the juice of 1/2 lime, 2 tbsp ground flax, 1 tbsp h**p seeds, 1 tsp spirulina, 1 tsp coconut matcha, 1.5 tbsp of nuts and more, cinnamon and ice to make it cold. Blend and Enjoy! 💚

I know we are supposed to ”eat healthier” since it's the New Year after indulging over Christmas but this mom is going to enjoy a cinnamon roll with a coffee tomorrow with her book in hand and hope the first day of online schooling goes great! Good evening! If you need a yummy smoothie recipe for the morning, here’s a good one. I make a smoothie every morning so I don’t always measure every ingredient. In this one there is 1 cup coconut milk, 2 handfuls of spinach, 1 handful of kale, some cucumber, a little piece of fresh ginger, ground cinnamon, 1 tsp of matcha tea, 2 tbsp of ground flax, 1 tbsp h**p seeds, 1 tbsp almond butter and some frozen mango. Blend and enjoy!

I haven't posted in a while! I'm still cooking a lot. Tonight I'm roasting some broccoli stems with kale and carrots served with a pistachio-crusted salmon. This broccoli roasts beautifully at 400 for about 10 min: drizzle olive oil, salt and pepper.

Do you like squash soup? I made this soup today in the instant pot. It was delicious. I added the recipe in the comments. I also didn't add the bacon to it as the recipe suggested, and I thought it was perfect just like that.

It’s peach season, and they are delicious! Here is a green peach smoothie recipe! Grab some peaches and make this smoothie. You will need 1 cup of unsweetened coconut milk, one handful of spinach, a chunk of cucumber cut into pieces, one orange, 1.5 peaches ( leave the skin on! So much nutrition), 2 tbsp ground flax and some ice to make the smoothie cold. Blend and enjoy!
