Carnitas, which translates into "little meats", is a beloved dish in Mexican cuisine usually reserved for big family gatherings and celebrations. We start our recipe with our sous vide pork shoulder slowly simmered in a 7-spice blend for 24 hours, preserving its juiciness and absolute tenderness. We serve it on a warm, handmade flour tortilla cooked on the spot, garnish it with fresh cilantro leaves and sliced onions, and top it all off with our signature avocado sauce.
