Chilaquiles verdes

Chicken breast
Chicken flavor
Garlic
Boil then shred

Tomatillos
Jalapeños
Garlic
Boil till soft then put into blender with water and Salt

Tortillas cut into triangles and fried till crispy

Shredded cheese
Fried eggs

Pre heat oven to 350

Place chip on baking dish at Chicken on top then add salsa all over. Add Shredded cheese and place in oven until cheese is melted.
Serve with a fried egg on top

Birria Tacos

Ok first off I'll say this, Most real birria is thought to be goat meat. BUT Birria actually is the soup part not actually the meat. So you can make Birria from ant kind of meat. I do mine with Beef I do not like Goat.

Beef (you cam use a roast or brisket)
Beef flavor
Garlic
Oregano
Bay leaves
Salt pepper
Onion

Chile Guajillo
Chile ancho

Cut meat into chunks for more even cooking
Add to large pot with seasons and water cover a d boil until meat fall apart by pressing with a fork

Mean while devien and wash Chile's
Put them in a pot with garlic oil and onion toast slightly then add water to boil. Blend well.

When meat is done add Chile by sifting in a metal sifter and adding water through as pictured.
Cover and simmer 25 min.

Make tacos or quesabirria by dipping tortillas into soup and frying in oil.

Top with cilantro onion and lime dip into soup

Chicken wing soup

You can make chicken soup with whatever you want but this is what my husband wanted this time.

Chicken wings (the big ones)
Chicken flavor
Garlic
Potatoes
Carrots
Celery
Cabbage
Onion
Cilantro
Lime

Boil chicken with seasoning until chicken is cooked.
Add chopped veggies
Cook till tender

Put cilantro and lime on top
Also you can put rice in the bowl as well

Tenga de Chipotle

This one was quick I forgot to take pictures of it all

Chicken breast
Lots of chicken flavor and garlic
Bay leaves
Onion
Tomatoes
Canned Chipotle

Boil chicken with garlic and chicken flavor then shred save broth

Blend tomatoes and Chipotle in blender with broth

Chop Onion then fry till brown add chicken fry for about 3 min Add salsa and bay leaves stir and cover until salsa thickens into chicken.

Serve on tostadas or make gorditas or empanadas or tacos

I posted this yesterday but it's gone now so here it is again

Costilla en salsa Verde
Arroz blanco (don't come for me I ran out of mixed veggies)
Frijoles de la olla

Pork spare ribs
Pork flavor ( a lot of it)
Bay leaves
Garlic

2 cups of rice
Chicken flavor
Green beans (normally mixed veggies)

Tomatillos
Onion
Jalapeños
Garlic
Cilantro
Salt

Fry tomatillos onion Jalapeños and garlic in a small amount of oil. When toasted on the outside add water and boild until soft

Blend with cilantro and salt

Put ribs and season into a pot with a little water cover and boil until meant is tender. Remove the water and fry the ribs a little add salsa and simmer for 20 to 30 min

WASH YOUR RICE!
Add rice to hot pan with oil
Fry until a few pieces turn a little brown. Add 3tbs of chicken flavor mix.
Add 3 cups of HOT water bring to a boil cover and turn down to low add water if needed.

Wash and pick through beans
Add lots of garlic and salt cover and check periodically.

Chile relleno de queso fresco
Normally I do these in a soup but I decided to just do the sauce this time.

Chile poblano
Queso fresco
Eggs
Salt

Sauce
Tomatoes
Onion
Salt
Garlic
Bay leaves

Rinse peppers then You must burn the skin of the poblano. You can use a griddle or frying pan also don't over burn them because it will make the Chile too soft and it will fall apart.
Once they are well toasted put them into a plastic bag and tie shut so the peppers can sweat. After they cool peel the outside then rinse outside.
Take a spoon or butter knife to cut a small hole I use a spoon to cut the vienes from the stem on the inside then rinse out the seeds. Be carefull when doing this sometimes if you pull the views the pepper will rip as did some of mine (I had to use toothpicks to hold them together. Set Chile's aside to dry a little.
Take the eggs and separate egg whites add salt to egg whites and beat until fluffy while still beating add half of the yolks to the mix.

Heat oil in a pan

Put flour on a plate cover Chile with flour
Dip into egg mix
Put into HOT oil use spoon to put oil on to of pepper then turn over with tongs.

Let peppers rest on paper towels

Salsa
Blend tomatoes onion Salt and garlic and water
Heat a small amount of oil in a sauce pan then add mixer to the pan and bring to a boil until tomatoe color darkens.

Plate with salsa on top
Serve with rice and beans

Bistec a la Mexicana

Steak
Bell pepper or Jalapeños (preference)
Onion
Tomatoes
Garlic
Lawrys (just because it's my favorite seasoning for absolutely everything!)

Cut meat to bite size
Chop veggies in straps
Smash garlic (peal it and then lay your knife lay it on top and hit it)

Add meat to a hot pan with oil add lawrys to taste and garlic cook till meat is not longer pink add peppers and onions. Cook till brown on high heat add tomatoes and more lawrys cook until just soft.

Ready to eat!

Bistec con papa y salsa Verde
Steak with potatoes and green salsa.

Peal potatoes (you can leave skin if you prefer)
Cut potatoes to bite size
Rinse put in water with a good amount of salt boild until fork will go through but not so soft the fall apart drain and set aside

Salsa
Tomatillos
Jalapeños
Onion
Cilantro
Garlic
Salt

TOMATILLO IS NOT THE SAME AS GREEN TOMATOES!

Peel and wash tomatillos
Cut the head off of Jalapeños and rinse
Cut onion in half
Boil in a pot until soft
Put into the blender WITHOUT water Add cilantro garlic and salt to taste
Set aside

Cut skirt steak to bite size
Put about 3 tbs of oil (your preference)
Add meat, a good amount of lawery red salt, 4 garlic cloves (smashed) cook until meat is ot longer pink
Mean while Cut onions and Jalapeños I used red ones
Add to the meat cook on high until brown but not soft.
Add potatoes and cook for a couple of min
Add salsa
If needed Add some of the water from boiling the salsa. You don't want this to be super dry it needs to be full of salsa.

Rice
For 2 cups of uncooked rice
5 Roma tomatoes
1/2 onion
2 clove of garlic
Chicken flavor to taste (I use about 3 tbs)
Blend is all with 3.5 cups of hot water
Set aside
WASH YOUR RICE!!!!
Put a little oil in the frying pan on high. Once the oil is hot Add rice.
Fry the rice until it begins to turn a little brown (just a few pieces it will not all brown) Add tomatoe mixture and bring to a boil cover and turn down to simmer.
Leave for about 10 min and check on it. If there is still water cover and check again a fee min later. Do not stir the rice. If needed use a wooden spoon to move rice in the middle of the pan and add a small amount of water. Check a few pieces of rice to make sure rice is cooked through. Turn off and leave covered for atleast 10 min.

TIPS
I try to use wooden utensils unless It is my clay pots the ill use metal.

To make the food tasty but not so spicy you can remove seeds before cooking the peppers

I always make my own tortillas it takes a lot of practice. If you can't make your own I suggest the following

Go to your local Mexican store and sometimes they will sell fresh ones.

So I have had a bunch of people ask me to show them how I cook authentic Mexican food and will I teach them so here is my page. For now mostly pictures and descriptions but soon all get up the courage to flim myself. Please feel free to share my post. If you have any questions let me know !
