Easy Egg Breakfast Bowls

Creamy scrambled eggs made with sour cream, topped with cheese & bacon severed with toast.

Southern Slaw:

1 16oz package of cole slaw mix (or cut your own)
1 cup Mayonnaise
Dollop of sour cream
2 Tbs of white vinegar
1/2 a fresh lime squeezed
1 tbs yellow mustard
1 Tbs sugar
1 Tsp smoked paprika
1 Tsp ground cayenne pepper
1 tsp chili powder
Salt and pepper to taste

In medium bowl mix mayonnaise, sour cream, vinegar, lime juice, and all dry seasonings.
Mix well until all ingredients are well incorporated and no sugar granules remain. Taste and adjust seasons depending on preference. More spicy? Double the cayenne. Too spicy? Add more mayo or another dollop of sour cream.
Slowly pour over cabbage mixture stirring as you go. Stop when cabbage is well covered and has a creamy consistency.

Perfect as a side at the family BBQ or incorporated into a chicken tacos, or even pull pork sandwich’s.

Home Style Guacamole:

4 Avocados peeled and pitted
2 Roma Tomatoes
1/2 Red onion
1 Lime
2 TBS Fresh cilantro
Salt
Pepper
Garlic Powder
Ground Cayenne Red Pepper

In a medium bowl, mash together the avocados, lime juice, use spices to taste. Mix in onion, 3/4 of cilantro, tomatoes. Garnish with the rest of the cilantro
Refrigerate 1 hour for best flavor, and store up to 1 week.
