I have two spare 6 packs of peanut butter cupcakes leftover from yesterday!
One is gluten free, one is not. Both are dairy free, egg free, and 100% vegan as per usual :)

In case you missed my last post, I just finished making a gluten free chocolate & peanut butter cake, and it has to be one of my favourite cakes yet!
I don’t have any cake offcuts to make cake trash with, but I do have a LOT of peanut butter icing left (as pictured) so I’m thinking of making some peanut butter cupcakes so the icing doesn’t go to waste. Would anyone be interested in making an order?
$35 for a box of 6, I think I could make two or three boxes with the amount of icing I have left!
My kitchen is still coeliac friendly for the time being, so I could also make them gluten free!

✨ CAKE TRASH ✨
If you’ve ever made a cake before, you’ll probably know that there’s a lot of potential for food waste with offcuts and excess icing, and as much as my husband and I love the occasional scrappy pieces, there’s only so much cake two people can handle 😅
So in an effort to combat food waste, I’ve decided to start boxing up the offcuts & excess icing to create boxes of cake trash! They’re not pretty (despite my best efforts with the sprinkles) but they sure are tasty.
I’ve got two boxes of vanilla cake trash left over from today’s cake (photos of it to come soon!)
There’s about 250g in each box, or roughly the equivalent of two slices of cake.
$5 a box, pickup is in Glenfield park!

Box 3- cupcake 6 pack- 2 vanilla, one choc mint, one cookies and cream, one lemon, one choc hazelnut. $35 SOLD
Box 4- 12 mini brownie cups, 3 each of chocolate ganache, Biscoff, peanut butter, and chocolate hazelnut. $35 SOLD
Box 5- a 12 pack with 6 brownie cups- 3 chocolate ganache, two peanut butter, and one Biscoff, and 6 cupcakes- three peanut butter, one chocolate hazelnut, one chocolate, and one lemon. $65 SOLD
Box? 6- this isn’t actually a box but I have four gluten free cakes left over, two choc mint, one chocolate, and one choc vanilla. Normally $6.50 each, but because gluten free baked goods don’t stay fresh for as long, I’ll sell them for $5 each or all four for $15 to get them in someone’s belly asap 😂 SOLD

I have some more exciting news!!
My application for this month’s River & Wren Market was accepted, so I’ll be seeing you all at the Wagga Showgrounds on the 23rd June!
Now I need to plan a menu 🤔 do you have any requests? I’ll be sure to bring a lot more cupcakes this time!
I’ve been experimenting with marshmallows this week, so I’ve created some chocolate covered marshmallows & some new chocolate block flavours!
So far I’ve made-
Biscoff s’mores - Biscoff biscuits and mini marshmallow pieces in milk chocolate
Rocky road- mini marshmallows with chopped up vegan jelly lollies.
Do you have any other flavour combinations to suggest? I am very keen to experiment some more!
Also just as a side note- how great are chickpeas?! The marshmallows are made vegan by using aquafaba and agar agar, and I just think it’s so amazing that the liquid from a tin of chickpeas can do so many amazing things!

Absolutely obsessed with the colour scheme on this cake I made last weekend!
It’s time for part 3 of my brownie saga 😂
I ultimately decided to make some brownie cups (inside cupcake liners to be safe!!) and fill half of them with chocolate hazelnut, and the other half with a cookies and cream ganache. Then I topped them with tempered vegan milk chocolate!
I’m so happy with the way these turned out 😁

So this morning I experimented with a new brownie recipe, and they looked great in the pan… until I tried to take them out 🤦♀️ so I’m left with some boxes of deconstructed brownie.
They’re not beautiful, but they taste great- so there’s no way I can throw them out (especially considering there’s almost a kilo of Belgian chocolate in this batch and that stuff is not cheap 🥲) so if you love brownies and don’t care about their appearance, it’s your lucky day!
I’m selling the boxes for $15 each to try and recover the cost of ingredients. Each one contains the equivalent of four (big) brownies that are worth $6 each when they’re not deconstructed 😂
