Happy Friday everyone! As we’re getting ready for Easter here’s a QUICK and DELICIOUS cheesecake recipe that I know a lot of you love:

Crust
- 1 Cup crushed Graham Crackers
- 3 TBS granulated sugar
- 3.5 TBS melted butter

•Mix ingredients and press firmly into 12 cupcake liners.

Filling
- 16 Oz cream cheese
- 1/3 cup sour cream (Room Temp)
- 1/2 cup granulated sugar
- 1 TBS vanilla extract
- 2 Large Eggs (Room Temp)

•Mix cream cheese and sour cream until creamy then add in the rest of the ingredients and mix slowly with mixer until combined!
• Fill the 12 cupcake liners to the top.
• Bake at 325 degrees for 17-20 min until tops are set.
• Remove and let cool in pan for an hour.
• Put in airtight container and move to fridge for 3 hours or more.
• Right before serving, put fresh fruit or whatever you want on top and garnish with whipped cream.
