Vegan spiced coconut baileys!
This is my recipe, you can add more whiskey or syrup to taste as I play around with it.
It's a great gift or a lovely pudding for after your Christmas dinner 🎄🎁
Ingredients,
600ml coconut milk
200g coconut cream
50g cocoa powder
4 sticks of cinnamon
3 star anise
6 whole cloves
250ml whiskey or more to taste
100ml maple syrup
2 tbsp vanilla
1 tbsp sweet cinnamon
*Optional* 50ml espresso coffee
In a large pan add your coconut milk & cream. Add your spices, maple syrup, vanilla and sweet cinnamon, cocoa powder and stir with a whisk. Bring to a gentle simmer.
Simmer for 10 minutes and taste.
At this point taste and add anymore spices or syrup if you feel it needs a little more.
Turn off the heat and add your whiskey of choice.
Carefully with a jug pour your baileys into a glass bottle and seal.
Depending on the type of coconut you use it may start to set while cooling. A way to combine the fat/cream with your drink is to keep shaking while it cools down. That way you won't have a ring of thick cream setting on top of your baileys.
Chill and shake before serving.

Fi sent me this Korean tofu recipe from a box she got and I added hofun noodles, kimchi, cucumber salad, soy carrots, salt and chilli broccoli and air fried oysters and I eye balled the ingredients in the recipe because I obviously didn’t get the sachets.
It was delicious. Give it a bash ! Sometimes not having exact measurements can be fun.

Tom kha soup!
An easy Thursday night dinner. Full of flavour and delicious. I added wild mushrooms and spring onion. It was delicious. Tried and tested, super easy and fast!

Added cashew cream and tofu & broccoli plus roasted garlic.
Vegan stovies
Simple, easy food.
2 onions
3/4 medium size potatoes
6x vegan sausages
1x veg stock cube (I used the no meat oxo beef cube, available in sainsburies)
400ml water
1 tbsp oil
Pepper to season
Method.
Chop your onions in half and slice, add to pan with oil. Sauté and add your sausages. Brown sausages. You can skip this part by grilling or cooking them in the oven but in my opinion they reduce down anyway so I don't bother.
Cut your potatoes in half then slice or cube. Add these to the pan. Boil 400ml of water and mix with stock cube before adding to your pan. Cook all with the pan lid on for 10 minutes then without for a further 20/30 minutes. Add pepper and serve with veggies and buttered bread. I had no bread so I had potato scones. Don't judge. It's actually banging.
I haven't posted in a while. I've taken a break while getting myself sorted with my new job and doing other projects. A dear friend of mine lost his life to depression at the weekend and his family have set up a fund page for his funeral arrangements. If you can donate that would be super helpful.
Mark was a compassionate and talented human. He was the first person to challenge my views on animal agriculture and the welfare of animals and the ability to survive on plants. I admired him so much. I wish I told him that.
I hope he's at peace now.

Miso soup with spinach & sweetcorn
A healthy delicious soup that will warm up your bones.
No oil, vegan & healthy
Ingredients
1.5 vegetable broth
1 cup of (frozen or tinned) sweetcorn
6 skiitake mushrooms thinly Sliced
3 spring onions
1/4 cup or 55g miso paste
3 cups or 600g fresh spinach
1 pak choy
1 sheet of nori (seaweed) Sliced
2 portions of cooked Buckwheat noodles or I use konjac noodles *optional*
Add any other veg you need to use up *optional*
Method
Heat broth in a large saucepan over a high heat and bring to a boil. Add your sweetcorn and lower heat to medium. Stir in mushrooms and spring onions and simmer for 5 minutes. Reduce the heat to low. In a small bowl, mix together the miso and 1/3 cup of soup broth, blending well together. Add blended miso mixture to the soup and add your shredded nori, spinach and pak choy, stir and simmer for about 3 minutes. Do not boil. Serve hot.
Optional* add your cooked noodles at the end. Sprinkle with sesame seeds & spring onions.

Anyone for ginger spring greens? It's delicious and super quick!
All you need is
1/2 pack of spring greens
1/2 red onion
Small thumb of ginger grated
2 garlic cloves
1 tbsp of seseme seeds
1 tbsp soy sauce
1 tsp maple syrup
1/2 lemon juice
Method
Steam spring greens for 5/10 mins.
In a wok or pan add onion, sesame, ginger, garlic and maple syrup.
Cook for a few minutes and once the spring greens are cooked add to wok and stir with tongs and add soy sauce. Cook for 2 minutes then add juice of 1/2 a lemon and serve.
I had mine with some tomato & basil bruschetta and they were beautiful together ❤️

Anyone else just hibernating with lots of mince pies and mulled cider.
I love making mulled cider and sharing it to my friends and family.
I made some tonight using an easy recipe.
What do you add?
3 cans of cloudy cider
1 sliced Orange
5 cloves
2 star anise
3 cinnamon sticks
75cl spiced Rum (I used red leg)
2 tbsp of brown/coconut sugar
Mix together all of your ingredients and heat in a saucepan until simmering. Place a lid on and turn of the heat and leave for half an hour or however long you wish.
I use this time to do my dishes or do washing or pick a good Christmas movie.
That's it!

Vegan French toast.

Easy recipe for a delicious breakfast 😁🌱❤️
Ingredients 🌱
1 tbsp (whole or mulled) chai seeds
1 tsp sweet cinnamon
1 tsp of maple/date syrup
1 tsp of vanilla
1 cup of soy/oat/hemp milk
4/5 pieces of crusty bread or toasted bread
Method
Add your chai seeds & cinnamon to a large bowl.
Add a cup of milk, syrup and vanilla to dry mix and combine. Put to the side for 5 mins.
If you don't have crusty bread like me you can toast your bread at this time. Once your toast is ready.
Add a drop of oil or butter to your frying pan and get it hot. Soak your toast flipping it over and add to pan. Leave for 3 minutes or until the sides are golden then flip over and repeat.
These are delicious served with Coconut yoghurt and fresh fruit.
Enjoy!

Soba noodles, tofu & miso soup
This soup is pure comfort food, it's rich in flavour but light on your stomach. It's one of our family favourites. I make it most weeks :) and love how quick and easy it is to make.
Ingredients:
2 ltrs water
2 nori sheets
Slice thumb of ginger
1 silken tofu
2 portions of soba noodles
Broccoli
6x spring onions
2x tablespoons miso
Soy sauce to season
2 carrots Sliced
Sesame seeds
Optional: dried mushrooms, chilli oil, bean sprouts
In a large pot add water, nori, Sliced ginger bring to a simmer, add broccoli, 3x chopped spring onions, Sliced carrots and whatever veg you would like to add. *you could add mushrooms for extra flavour*
Cook broth for 10 mins
Add soy sauce to season
Chop your silken tofu into squares and add to broth.
Add soba noodles *and chilli oil if you want some heat*
Cook for a further 2 minutes or until noodles are cooked.
Turn hob off
Add some broth to a separate cup or bowl and add your miso paste and stir until smooth.
Add miso to your soup *make sure you add miso last as you do not want to cook the miso*
Serve with a sprinkle of Sesame seeds, chopped spring onion and a slice of chilli.

I loved making these although it is very much like a work out. The dough is quite dense so lots of kneading is needed.
I added soy sauce & sesame seeds & oil to bring out their flavour and cooked a simple veggie stir fry and homemade satay sauce.
They weren't as thin as id like them (more like udons) but they were great fun and delicious.
