The maturation wood is intrinsic to the final flavour and colour of Birch & Co. Our finishing casks are crafted from Sustainably Sourced European Oak, and heavily toasted to release deep vanilla notes, while the Oloroso Seasoning of the casks adds rich, sweet flavours of dried fruits, perfect for winter sipping.

Our whiskey is finished in European Oak, which has a less dense grain than American Oak. This finishing wood imparts silkier tannins, and irresistibly warm, spicy notes.
All our casks are crafted from Oak sourced from sustainably managed forests.
