Recipe below -
Kongguksu is a refreshing noodle dish in which noodles are served in savory soy milk, alongside some freshly sliced cucumber and tomatoes Perfect for those hot summer days!

Ingredients
Cold soy milk - 1 cup
Roasted chopped peanuts - 3 tsp
Roasted sesame seeds - 2 tsp
Freshly chopped cucumber
Freshly sliced tomatoes
Hard boiled egg- 1 no
Thin wheat flour noodles

Method
- Cook noodles as per the package instructions. Drain and rinse
- place the noodles in a bowl and top with cold soy milk, freshly chopped tomatoes and cucumber
- Add salt to taste
- place the hardboiled egg on the side and garnish with toasted sesame seeds and peanuts .

Serve with kimchi

Recipe below
Banana and date buns

Ripe bananas - 2 nos
Dates - 6 nos
Egg - 1 no
Salt - 1 tsp
Instant yeast - 1 tsp
Melted unsalted butter - 2 tbsp
Flour - 2.5 cups ( roughly)

Method
- Mash the bananas in a bowl to a paste.
- Then add in one egg, salt, instant yeast, chopped dates and mix well.
- Pour in the butter.
- Finally add the flour gradually and mix until you get a soft dough.
- Cover and Let the dough rise for half an hour
- split the dough into 9 equal parts and roll them into balls. Place in a well greased baking tray and let it rise for another 40 minutes.
- Preheat the oven to 200 C and bake for 15 - 20 minutes.

Now all you need to do is enjoy those lovely buns

Felafel is a very popular middle eastern dish. Usually felafel is served as a sandwich / roll in pita bread along with tahini sauce, ful, salad

Ingredients
Chickpeas ( soaked for 20 hours)- 1 cup
Parsley leaves - 80 gms
Coriander leaves - 50 gms
Medium onion - 1 no
Garlic - 5-6 cloves
Chilli powder -1 tsp
Salt - 1 tsp
Black pepper powder - 1 tsp
Cinnamon powder - 1/4 tsp
Cloves ( powdered) - 3 nos
Sesame seeds ( toasted ) - 2 tbsp
Vegetable oil - for frying

Method

1) Soak the chickpeas atleast for 20 hours
2) Grind together the chickpeas, parsley leaves, coriander leaves, onion, garlic, chilli powder, salt, black pepper powder, cinnamon powder, cloves in a food processor.
3) Add in the toasted sesame seeds
4) Let the mixture sit for half an hour
5) scoop out the mixture using an ice-cream scoop and shape by hand into a 3/4 inch thick cylinder
6) heat up oil to deep fry in a wok and fry until it starts to brown on both sides. You could also air fry the felafel as a healthy option

Serve with pita bread, hummus and tahini sauce or as a felafel sandwich

Ful Medames literally translates to slow cooked Fava beans. This is a classic middle eastern breakfast dish which is served along with Pita bread

Recipe

Ingredients
Fava beans - 200 gms
Large Onion ( Chopped)- 1 No
Small Tomatoes ( Chopped)- 2 Nos
Garlic ( Chopped) - 5 Cloves
Chillies ( Chopped) - 2 Nos
Tahini Paste - 2 - 2.5 Tbsp
Lime Juice - 1 Tsp
Cumin Powder - 1.5 - 2 Tsp
Pepper Powder - 3/4 Tsp
Fresh Parsley ( Chopped) - For Garnish
Salt - To taste
Olive Oil - 3 tbsp

I was unable to get my hands on Fava beans so i have used Butter beans instead. This too worked out really well.

Method
1) Soak the beans over night. Boil the beans with salt until it is soft and can be mashed easily. Separate the beans and water. We will use this water at a later point. Incase you are using canned beans, this step can be skipped.
2) Grind the beans into a smooth paste. Add in some water to loosen the mixture
3) In a Deep vessel, heat some olive oil. Add in chopped onions and cook until it starts to caramelize. add the chopped garlic and chilles and cook for a couple of minutes. Add the chopped tomatoes. Cook until the tomatoes are mashed into the mixture. At this point add the spices and let it cook for bit.
4) Add the Bean paste, the water separated after boiling the beans, some lime juice and salt and mix well. Bring it to a boil and let it simmer.
5) Once it starts to get thick add the tahini paste and let it continue to simmer until it becomes thick and creamy.
6) Garnish with olive oil and chopped parsley . Serve with pita bread

Steam baos or baozi is a very popular street food in china. This dish is actually really easy to prepare. The only tricky part I felt is wrapping the filling into the dough. Generally this is prepared with minced pork. I tried it out with chicken and I must say I really loved it.

Recipe
Ingredients

For the dough
All purpose flour / Maida - 300 gms
Instant yeast - 1 tsp
Sugar - 1 tsp
Cooking oil - 1 tbsp
Lukewarm water - 1/2 cup

For the filling
Chicken ( minced) - 250 gms
Purple cabbage ( chopped) - 2/3 cup
Spring onion - 1/4 cup
Ginger ( chopped) - 1/2 inch
Garlic ( chopped) - 4 Cloves
Soy sauce - 2-3 tbsp
Pepper - 1/2 tsp
Oyster sauce - 1 tbsp
Rice wine Vinegar - 1 tsp
Water - if required

Chilli oil dipping sauce

Method

- Mix flour, yeast, sugar and oil in a bowl. Pour in water little by little while mixing.
Combine and knead with your hands until a very smooth dough forms

- Cover the bowl and leave to rise in a warm place until doubled in size (It will take between 60 to 90 minutes).

For the filling
-Put the minced chiken, spring onions, cabbage , soy sauce, oyster sauce vinegar and pepper in a mixing bowl.
- Swirl constantly and add some water if required.
- let the marinated chicken mince sit for about an hour in the refrigerator

Preparation and cooking of the steam buns

- once the dough has risen, divide it into 12 portions
- Place some filling in the middle of a wrapper then fold into a bao shape -leave all the assembled buns to rest for another about 15 minutes.
- Place the buns (with parchment paper underneath each one) in the steamer. Leave about 2 cm space between wash Bao in the steamer
-Start cooking with cold water over a high heat and let it steam away. Turn the heat down to medium-low when the water starts boiling.
- let it steam for about 15 - 20 minutes

Serve along with a chilli garlic oil

Spaghetti with chicken meatball

Recipe

Ingredients
Meatballs
onion ( chopped ) - 1 no
garlic ( chopped) - 4 Cloves
salt - to taste
pepper - 1 tsp
Bread crumbs ( from 2 slices of bread)
Brown sugar - 1 tsp
Parsley - 1 bunch
Minced chicken - 500 gms
Smoked paprika - 1 tsp
Thyme - 1/2 tap
1 egg

Pasta sauce
Red capsicum - 1 no ( roasted and de-skined)
Tomato puree - 200 gms
Onion- 1 no
Garlic - 4 Cloves
Chilli flakes - 1 tsp
Pepper 1/2 tsp
Salt - to taste
Milk - 1/2 cup
Oregano - 1 tsp
Basil - 1 tsp
Olive oil - 4 tbps

Method

1) Cook the pasta al dente. Drain out the water
2) Mix in all the ingredients for the meatball. Roll them into a ball shape and keep in the refrigerator for about an hour
3) For the pasta sauce, first grind together the onions and garlic and let it cook till it has slightly browned
4) Add in the pepper, salt, chilli flakes, oregano, basil.
5) seperately grind the de-skined red capsicum and add it in along with the onions.
6) Add in the tomato puree and let it simmer for 5 minutes
7) Add in the milk and let it simmer for another 10- 15 minutes . Add in some water if required to slightly loosen the sauce

To serve, plate the paste, top with meatballs and the sauce. Optionally Grate some parmesan cheese over the dish

Pesto Penne chicken Pasta with pistachios. -

This is one of the creamiest nutty pesto pasta I had.

Ingredients

Penne pasta - 300 gms

Button Mushrooms -200 gms
Boneless chicken ( cubed) - 250 gms

For the sauce
Fresh Basil leaves - 50 gms
Shelled Pistachio - 75 gms
Garlic cloves - 5-6 cloves
Chilli flakes - 1 1/2 tsp ( alter the spice to your taste )
Pepper - 1 tsp ( 1/2 tsp for the sauce and 1/2 tsp to marinate the chicken)
Salt - to taste
Milk - 1 1/2 cups
Olive oil - 2 tbsp
Water - 1 cup
Parmesan cheese - 1/4 cup

Grind together the basil leaves , pistachio, parmesan cheese, chilli flakes, pepper and garlic cloves. Add in the water to loosen the mixture

In a sauce pan, heat some olive oil.
Bring the ground ingredients to a boil. Add in the milk and simmer for a few minutes. Add in the salt and some water to loosen the sauce .

Marinate the chicken and mushroom with pepper and salt and let it rest for atleast half hour. Heat some oil in a pan and toss in the chicken and mushrooms and cook till it has browned well.

Cook and drain the pasta.

Add in the pasta and chicken into the sauce and mix well. Marinate with chilli flakes and parmesan cheese.

Today tried my hand at making Tfaya. An authentic Moroccan delicacy which includes couscous served with vegetables and chicken. The dish can also be prepared with either beef or mutton and has variety of vegetables like carrots , zucchini, potatoes, sweet potatoes, cabbage, onions and tomatoes which is cooked in a well seasoned broth.

Ratatouille is an authentic french dish. Every province in France has their own way of preparing this delicious dish. The dish is has a tangy flavour and very mild sweetness. I figured I would add a bit of spice as well. Served along side some garlic toast and I must say the dish really tasted out of this world.

Having lived in the middle East for most of my life , one of the things what made this time of the year really special was meeting up with friends when it was time to break their fast at iftar, the delicious spead laid out on the table never failed the amaze me and was truly a wonderful experience with everyone spending time together.

Hot cross buns were always one of my favourite go to snacks on good Friday from the time I was a kid. Here is a take on making whole wheat hot cross buns an boy they were delicious. Slightly crusty on the outside and soft on the inside, these mildly spiced and sweet buns are the best thing ever.

It is always the best thing to prepare a homemade Tahini Paste and Tahini Sauce Tahini is basically prepared with White sesame seeds as the base and is a very important condiment in middle eastern Cuisine

Ingredients
Tahini Paste
- Sesame Seeds - 200 gms
- Olive oil - 1/4 Cup

Tahini Sauce
-Tahini Paste - 3 Tbsp
- Lime Juice - 3/4 Tsp
- Olive oil - 1 Tbsp
- Salt - To taste
- Garlic (finely chopped) - 3 Cloves
- Water - 3 to 4 Tbsp
