Milestone alert! I recently made my first ever TV appearance, courtesy of Local Channel 4.
This was an emotional roller coaster for me as I was very nervous to be on TV. I had to rely on breath work, which is my specialty, to help me focus on the task at hand.
I reminded myself that I should be grateful for this opportunity rather than being scared of it.
It is easy for us to get caught up in our thoughts. That’s exactly what happened with me as well. I started overthinking every little aspect. What should I wear, how should I speak, so on and so forth.
I spent some time doing my breath work techniques and they calmed my nerves and helped me ace the interview.
The interview itself couldn’t have gone better. I spoke about superfoods and how they are changing lives across the world.
Another opportunity to share my passion AYU RVEDA! It has transformed my life and I am so grateful that the rest of the world is getting to see and value this ancient science, over 5000 years old. It is necessary at this time to integrate the best of modern medicine with natural remedies as people are struggling through mental emotional and physical.

Warm up with this delightful winter soup, perfect for those chilly days! 🍲
Recipe for the Veggie Noodle Soup
Ingredients:
- 2 tablespoons olive or coconut oil
- 1 medium onion, finely chopped
- 3 cloves of garlic, minced
- 1 inch fresh ginger, grated
- 1 teaspoon turmeric powder
- 1/2 teaspoon cumin seeds
- 1/2 teaspoon coriander powder
- 1/4 teaspoon black pepper
- 1 medium carrot, sliced
- 1 stalk of celery, chopped
- 1 small zucchini, chopped
- 1 cup of chopped kale or spinach
- 6 cups vegetable broth
- 1 cup of whole grain or rice noodles
- Salt to taste
- Fresh cilantro and a squeeze of lemon for garnish
Instructions:
1. Heat the oil in a large pot over medium heat. Add the chopped onion and sauté until translucent.
2. Add the minced garlic and grated ginger to the pot. Sauté for a minute until fragrant. Then, add the turmeric, cumin seeds, coriander powder, and black pepper. Stir well to combine with the onion, garlic, and ginger.
3. Add the chopped carrot, celery, and zucchini to the pot. Sauté for about 5 minutes until the vegetables start to soften.
4. Pour the vegetable broth into the pot and bring the mixture to a boil. Once boiling, reduce the heat and let it simmer for about 10 minutes.
5. Add the noodles to the pot and cook according to the package instructions until they are al dente.
6. Add the chopped kale or spinach and simmer for another 2-3 minutes until the greens are wilted and tender.
7. Taste the soup and adjust the salt as needed.
8. Ladle the soup into bowls. Garnish with fresh cilantro and a squeeze of lemon juice to enhance the flavors.
9. Your Ayurvedic Veggie Noodle Soup is ready to be enjoyed! This soup is not only nourishing and warming but also aligns with Ayurvedic principles, promoting balance and wellness during the colder months.

This pad thai recipe is full of color and flavor! I hope you love it as much as I do!
INGREDIENTS
2 medium zucchini
1 medium purple carrot
1 medium yellow carrot
1 medium orange carrot
40 g capsicum
Few handfuls of bean sprouts
½ cup peanuts
Sauce:
1/3 cup water
¼ cup lime juice
2 Kaffir lime leaves
2 tablespoons sesame oil
2 tablespoons fresh orange juice
2 tablespoons homemade almond butter
1 tablespoon + 1 teaspoon coconut sugar
2 scant teaspoon white miso
2 cloves garlic
2 teaspoons freshly minced ginger
¼ teaspoon chilli flakes
INSTRUCTIONS
Use a spiralizer to turn the zucchini into thin ‘noodles’. Peel, top and tail the carrots, then use a mandolin to thinly slice them lengthways into ribbons. Use a small knife to cut the ribbons into matchsticks. Slice the capsicum thinly, then combine all vegetables in a large bowl.
Thinly slice the Kaffir lime leaves and roughly mince the garlic. Combine all ingredients in a blender and whiz til smooth. Pour over the salad to serve. Decorate with a few extra handfuls of bean sprouts, peanuts, chilli flakes and lime wedges.
