Filling ~ Chocolate ganache
100g whipping cream
70g dark chocolate chips
Chocolate dough
200g bread flour
10g cocoa powder
10g raw sugar
34g monkfruit sweetener (substitute with caster sugar)
6.2g milk powder
2g sea salt
2.5g instant dry yeast
20g softened butter
161g cold milk
Topping
50g cake flour
25.5g milk
20g sweetened condense milk
5g egg white
๐๐ป ganache ~ melt chocolate chips in whipping cream over a pot of simmering water. divide into 6 equal portions and pour into silicon mould. place into freezer
๐๐ป dough ~ mix all dough ingredients together (except butter) and knead till you get a rough dough. incorporate butter and knead till window pane stage
๐๐ป divide into 6 portions, shape into ball and rest for 15 mins
๐๐ป flatten a portion of chocolate dough and roll into a disc
๐๐ป place a portion of frozen chocolate ganache into the middle and seal seams
๐๐ป place into muffin liner and allow to proof till 1.5x in size
๐๐ป meantime, mix all topping ingredients together and scoop into piping bag
๐๐ป once buns are done proofing, pipe topping onto buns
๐๐ป bake in centre rack of 180C preheated oven for 20 mins
๐๐ป allow buns to cool and dust cocoa snow powder (substitute with cocoa powder) on top before serving

an excellent way of using leftover/expiring cream cheese โกโกโก
250g bread flour
15g raw sugar
5g sea salt
3g instant dry yeast
6g Hokkaido skim milk powder
125g softened cream cheese
31g egg (net weight)
74g cold water

๐๐ป mix all ingredients together and knead till window pane stage
๐๐ป divide dough into 3 portions. roll out and Swiss roll from top down. rest rough for 30 mins
๐๐ป roll dough out once again and swiss roll. seal seams well
๐๐ป place into 450g loaf pan and proof for about an hour in 35ยฐC environment or till dough reaches about 90% height of pan
๐๐ป bake in second lowest rack of 180ยฐC preheated oven for 30mins

and little love is starting off Halloween with shortbread bakes with her favourite KitchenAid appkiance๐ง๐ป whatโs yours?
๐ช
70g salted butter
2tsp vanilla paste
45g sugar free monk fruit powdered sweetener, sieved (or powdered sugar)
85g unbleached organic all purpose flour, sieved
18 chocolate balls (I used dark maltesers)
36 candy eyeballs
melted dark chocolate chips, as appropriate

๐ cream butter and vanilla paste till well mixed
๐ add sieved powdered sugar and incorporate well
๐ scrape bowl and add sieved flour. mix till crumbly. turn off mixer and fold manually till everything comes together. DO NOT OVERMIX ๐ป
๐ divide and shape dough into 10g balls
๐ make slight indentations with chocolate ball and chill dough for 15 mins
๐ bake in 180ยฐC preheated oven for 10-14 mins (I baked for 13 mins as we prefer slightly crunchier shortbread)
๐ allow cookies to chill
๐ pipe melted chocolate onto cookies and place in chocolate balls
๐ pipe spidey legs
๐ dot candy eyeball with melted chocolate and attach to chocolate ball
๐ enjoy (or chill before serving if making this is warm climate)

100g eggs (net weight)
90g coconut sugar
40g coconut oil
95g full cream milk
1 tsp vanilla paste
150g cake flour
40g cocoa powder
1 tsp baking powder

๐๐ป beat eggs and coconut sugar together
๐๐ป incorporate oil, milk and vanilla paste. Beat till well incorporated
๐๐ป sift in flour, cocoa powder and baking powder. mix till batter is no longer lumpy
๐๐ป heat takoyaki hot plate on medium and coat generously with coconut oil
๐๐ป bring heat down to medium-low and fill cavities with batter
๐๐ป allow batter to cook
๐๐ป flip baffles (waffle-balls) once surface of batter swells with bubbles and allow to continue cooking till entire surface looks crispy and dry
