Braised Lamb Chops. I had a couple of leftover grilled lamb chops, so I decided to braise them in wine, chicken stock, and believe it or not, some Little Caesar’s pizza sauce, from the Crazy bread we got a couple of nights ago. Added onion’s, garlic, pepper, rosemary, thyme, and a tad bit of vinegar and brown sugar just to balance it all out. It was great!

Meatless lunch today, baked potato with cheese and sour cream, glazed carrots, and balsamic maple roasted Brussels sprouts. Of course for dinner I am having grilled lamb chops and chicken drumsticks, but it is all a matter of balance.

Panzanella, sort of…. I made croutons with a focaccia bread I made on Thursday. The plan was to make Panzanelle (bread, tomatoes, onions, dressing), but as I took the croutons out of the oven, I started eating them, and, well, not that many were left, so I threw in some lettuce and some grilled chicken, and shaved some Parmesan on top. Turned out pretty good!

The wedge salad updates! Small wedge of iceberg, on its side. The original has a way too big hunk of lettuce, and standing up is too hard to eat. The traditional toppings were updated to: roasted balsamic-maple Brussels sprouts, corn, carrots, roasted chicken, with a creamy lemon-honey vinaigrette, and topped with fried onions (the real thing, not the canned stuff). It was awesome!

Today’s breakfast was Parmesan hasselback potato, with a fried egg. My first time making the hasselback potato, and it turned out great, crispy on the outside and bottom, and soft inside. With the egg it was awesome.

Vegetable manicotti, with roasted butternut squash, mushrooms, and spinach. I am not a fan of ricotta cheese (at least not the store bought stuff), so I substituted feta, with mozzarella, and Parmesan. Quick homemade tomato sauce, made with whole canned tomatoes. Oh yeah, roasted garlic in both the cheese mixture and the sauce.

Guava BBQ glazed pork belly. Berkshire Pork belly from , slow roasted in the air fryer, then double glazed with guava bbq sauce. You have to try this, it is so good! Nourishing better lives!

This week we are celebrating gratitude week at . Today is s’more day! I am not much into the traditional s’more, but I roasted some marshmallows, and topped them with a peanut butter cup. It was awesome, so much so that I made a second one!

Red snapper fillets from , grilled with cilantro lime sauce. A little onion-garlic rice on the side, and petite green beans. Best fish I have had in a while!

Today´s quick meal. Pan fried-roasted red snapper with a wine-lemon-butter sauce, with some diced tomatoes. Rice a cheese casserole, made with leftover rice, mixed with half and half, chicken broth, butter and cheddar and Parmesan cheeses, topped with cheese and bread crumbs, and for the obligatory vegetable, steamed green beans from a couple of days ago. All was great.

Had some sirloin beef tips in the freezer and a leftover grilled lamb chop. I made an awesome stew and served it over mashed sweet potatoes. It was SO good!

Chicken Nachos using the last of the roasted chicken. I think this is meal four or five from one roasted chicken! Sautéed one garlic cubes and one onion cube (Darot cubes after the best!) in olive oil, added shredded chicken and cooked a few more minutes. Put the chicken on the tortilla chops, topped with some mozzarella cheese and put it under the broiler to melt the cheese. Topped with cilantro/cabbage slaw and a little salsa. Enjoy!

Awesome book by . Not really a cookbook, but it hads some recipes. It is more of a guide to help you improvise in your cooking, by understand the basic elements of cooking: Salt, Fat, Acid, and Heat. Also available as an audiobook- I think I am on my third time listening to it in the car, and I always pick up something new each time.

It is my bosses birthday today and he mentioned a few weeks ago that his favorite dessert was Pavlova. I had not made it before, but I looked up a couple of recipes, and came up with my version, topped with whipped cream, strawberries, blackberries, and drizzled with dulce de leche. The meringue base is a little tricky, but for the first try, it turned out pretty good.

Lunch today!
Berkshire pork chop that I grilled a couple of weeks ago, and vacuum sealed and put in the freezer. Quick and easy lunch, with a little salad on the side. Best lunch I had all day…

I had few peaches in the fridge from almost two weeks ago, when I was going to make peach cobbler, but didn’t get around to it. A couple of the peaches were way passed they prime, but the other looked ok, and I tried them and they tasted really good so I made this mini cobbler. Will not technically a cobbler, because the topping on a cobbler is a like doughier. The topping on this is like the pie crumble topping, so I guess it is more like a crust less pie. So good!

Sometimes dinner is a store bought roasted chicken, a baked sweet potato, and some frozen corn, and it was petty good dinner! Plus enough left over for lunch, and still some more left to make some enchiladas tomorrow!
