Easy Fruitcake Recipe😍
Ingredients:
2 cups mixed dried fruits (such as raisins, currants, chopped dates, candied cherries, and candied citrus peel)
1 cup chopped nuts (such as walnuts or pecans)
1 cup all-purpose flour
1/2 cup unsalted butter, softened
1/2 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1/2 teaspoon baking powder
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon salt
Instructions:
Preheat your oven to 325Β°F (165Β°C). Grease and flour a loaf pan or line it with parchment paper.
In a bowl, combine the dried fruits and nuts. Toss them with 2 tablespoons of flour to coat evenly. Set aside.
In a separate bowl, cream together the butter and sugar until light and fluffy.
Beat in the eggs, one at a time, until well combined. Stir in the vanilla extract.
In another bowl, whisk together the remaining flour, baking powder, cinnamon, nutmeg, and salt.
Gradually add the dry ingredient mixture to the butter mixture, mixing well after each addition.
Fold in the dried fruit and nut mixture until evenly distributed throughout the batter.
Pour the batter into the prepared loaf pan and spread it evenly.
Bake in the preheated oven for about 60-70 minutes, or until a toothpick inserted into the center comes out clean.
Remove the fruitcake from the oven and let it cool in the pan for 10 minutes. Then, transfer it to a wire rack to cool completely.
Once cooled, you can wrap the fruitcake tightly in plastic wrap or foil and store it at room temperature for several days to allow the flavors to develop.

How to make Chin Chin

Ingredients for Nigerian Chin Chin

8 cups (1kg) plain flour (all purpose flour)
1 tin Peak Milk
250g margarine
Β½ cup granulated sugar
2 teaspoons ground nutmeg
2 eggs (optional)
Some water (only if necessary)
Vegetable oil (for frying)

Notes about the ingredients
For best results, use only plain flour (all purpose flour) for Nigerian Chin Chin. Do not use self raising flour nor gluten-free flour.
Peak Milk gives your Nigerian Chin Chin that rich, creamy yet crunchy texture.


For the classic taste of Nigerian Chin Chin, nutmeg is a must else you will be wondering what is wrong with your Chin Chin when you are done.
Use only tasteless and odourless vegetable oils such as sunflower oil and the vegetable oils sold in Nigeria when frying Nigerian Chin Chin.
The eggs are optional, only add them if you want your Chin Chin softer.

Directions
Sift the flour into a big enough bowl.
Add the granulated sugar and ground nutmeg and mix.
Add the margarine in small scoops. Then rub it into the flour till you get a good mix that feels like crumbs.
If you are using eggs, break and add them now and mix very well with the contents of the bowl.
Add the peak milk, mix with a spatula. Then knead by hand till a ball of dough is formed. It may feel dry during the mixing but do not be tempted to add more liquid because the liquid you have in the bowl should be enough. You just need a bit of arm power to mix it. But if you really really can't get it to form a dough, add a tiny quantity of water bit by bit till the dough is formed.

When done, cover the bowl and leave the dough to rest for about 15 minutes.
After 15 minutes, you will notice that the dough is softer. Knead very well.
Roll out small bits of dough and cut with a knife Do not use flour to dust Nigerian Chin Chin because this causes the oil to foam during frying. If you mixed the Chin Chin very well, there will be no need to for dusting while cutting the chin chin.

CHICKEN SHAWARMA RECIPE

Shawarma bread

Cabbage

Carrots

Lettuce

Chicken breast

Sausage

Spices(for marinating the chicken)

Shawarma dressing

Procedure

1)We will start by marinating the chicken with curry, thyme, ginger/garlic powder, pinch of salt, soy sauce and set aside

2)Cut all veggies which includes Cabbage, lettuce and carrots

3)Prepare the shawarma dressing by mixing mayonnaise, ketchup, black pepper, and few drops of sesame oil

4)Put a sauce pan on the heat and grease with butter and allow to melt.. Then pour in the marinated chicken breast and sausage and allow to stir fry for up to 10minutes.. Stir continuously till you achieve a golden brown color

5)Open up a shawarma bread into two through the perforated edge and layer on each other, mix all veggies together and pour them in neatly.. Add sausage and chicken.. (be generous with the chicken) then pour in the dressing to mix well with the chicken and veggies

6)Heat up your shawarma toaster and neatly roll up the mixture starting with the bread containing the mixture amd finish with the shawarma bread underneath and head for the toaster immediately

7)Cover and allow to toast for at least 10minutes and BOOOOM.. shawarma is ready 😘😘

Yam porridge.

Ingredients:
White yam (1kg)
Fresh pepper
2 tablespoonful crayfish
Smoked fish, meat, chicken or your preferred choice (optional)
1 medium size onion
Red oil (palm oil)
2 stock cube seasoning
salt to taste
Vegetables ( pumpkin or spinach)

Directions:

-Peel and cut the yam into desired cube sizes, wash and place in a pot

-Wash and cut the onion and vegetables into tiny pieces.

-Grind the pepper and debone the smoked fish.

-Add enough water to cover the yam cubes and cook at a medium heat.(please don't pack all the water in the river ooo)

-When the yam starts boiling, add the grounded crayfish, habanero pepper, onion, stock cubes and palm oil.(please try and put enough crayfish it will bring out the taste out)

-Add salt and continue cooking until the yam is soft as desired.

-When the yam is cooked, add the vegetable and stir very well with a wooden spoon until the liquid thickens.
