Low carb jalapeño poppers.
They are messy but they are great and only 1 gram of carb for 2
Half your jalapeño stuff with 1/2 tbsp cream cheese and top with half a slice of turkey bacon and air fry or bake. (I use chicken bacon cause it’s less calories then turkey)

All of this for just under 200 cals
Mushroom Swiss vegetarian burger
Some marble cheese
Green peppers, red onion, mushroom and jalapeños all fried uo and served with a slice of tomato !

Cinnamon role casserole.

Have you tried monkey bread ? this is something similar but much better in my opinion. Perfect for a sweet side to breakfast or for breakfast itself. I make this in a larger portion because...house full of boys, enough said lol. It last a few days stored in an air tight container in the fridge or left out on the counter.

What you will need:
3 cans Pillsbury cinnamon rolls (12.4 ounces each)
1 cup heavy cream
4 large eggs
2 cinnamon
1 tsp nutmeg
1/3 cup maple syrup
1 tbsp vanilla extract
Cooking spray
10x15 glass baking dish ( you could use the aluminum throw away ones alternatively)

How to make it:
Preheat the oven to 350. Spray baking pan with cooking spray.

Cut cinnamon rolls into 6 pieces (you could also do 4)

Place the cinnamon rolls evenly in the baking pan.

In a mixing bowl, whisk together the cream, eggs, nutmeg, cinnamon and vanilla. Make sure the eggs are well mixed.

Pour the egg mixture over the cinnamon rolls.

Drizzle the syrup over the top.

Bake for 30-35 minutes until the top is golden brown and puffy.

Let cool for 10-15 mins

Heat up the icing from the cinnamon rolls in the microwave for 10 seconds or so and then drizzle over your casserole

I made pulled pork, dill pickle pasta salad, macaroni salad, homemade coleslaw and corn on the cob.

Dill pickle pasta salad.

I was introduced to this salad by my dads wonderful girlfriend, I didn't think I would like it but it was actually amazing and it has become a regular in the house. She was kind enough to share the recipe, and then I tweaked it a bit so here it is. Perfect for BBQ season !

What you will need:
1 box of rotini pasta (I use barilla)
1/2 cup hellmans mayo
1/2 cup sour cream
1/4 cup pickle juice
3 cups diced pickles
1 tbsp dried parsley
1/4 cup fresh dill
1 tsp onion powder
1 tsp lemon juice.

How to make it.
Cook your pasta till preferred softness

While pasta is cooking, in a bowl mix together mayo, sour cream, pickles juice, spices, and lemon juice and dill.

Once pasta is done, strain and run under cold water until cool.

Mix pasta with your sauce and add your diced pickles.

Store in the fridge for at least 2 hours, overnight is preferred.

Everyone enjoyed the ravioli, the kids are fed, richards lunch is made so time for me to eat. Not as stunning as everyone else’s dinner but I do love me a nice salad.

Chicken parmesan.

So now that we know how to make a super simple delicious sauce, how about we put it to some use and make some perfectly crispy, super juicy chicken parmesan. This recipe is a huge hit in our family, everyone always loves it when I make it.

What you will need.
Boneless skinless chicken breast
3 eggs
2 tbsp flour
2 cups of bread crumbs (plain or seasoned)
Italian seasoning
Dried oregano
Dried thyme
Parmesan (fresh is best but you can use the container stuff)
salt
pepper
cheese of your choice (I like to use provolone)
Marinara sauce (store bought is fine, or you could use my recipe down below)
Oil for frying ( I use extra virgin or canola )

What to do.
First you will want to butterfly your chicken breast and pound it out to about a quarter inch thick, I like to use a large zip lock bag or put it in between some plastic wrap. If you don't have a meat mallet the bottom of a heavy pot or frying pan works, you could also use a can good as well lol.

Once butterflied you can cut the chicken breast in half to make a smaller portion or leave it the way it is for a bigger portion.

In a large shallow bowl or container whisk your 3 eggs with the 2 tbsps of flour, salt and pepper together.

On a large plate put your breadcrumbs, seasoning and fresh grated parmesan (or substitute for the freeze dried shelf stable stuff) and mix well, I don't have use measurements for this part I just put as mush or as little as I want, id suggest starting with a table spoon of each seasoning and a quarter cup of parmesan.

Next you want to get your oil heating up, fill a large frying pan or skillet about half way with your oil, once the oil starts to have a little ripple look to it its ready.

Coat your chicken breast in the egg mixture, then into you're bread crumb mixture. Make sure to press firmly in the bread crumbs on each side to make sure they are nicely coated.

Place your chicken into the oil and fry for 3-5 minutes per side, or until it is nice and golden brown (times can very depending on thickness and size of the chicken)

Once the chicken is nice and golden you want to place it into a baking dish or casserole dish, a cookie sheet will also work.

Cover your cooked chicken with your sauce and some more fresh parmesan and put into a preheated 350 degree oven for about 20 minutes.

Remove your chicken from the oven and add on your cheese
(like I said I prefer to use provolone for the taste and the stretchiness, who doesn't love a good cheese pull)

Place back in the oven under broil this time for 1-3 minutes depending on your oven, until the cheese is nice and melted and golden brown. Make sure to keep an eye, when using the broiler things can burn very quickly

That's it ! its a very tedious task but it is absolutely delicious and always a crowd pleaser.

Of course every oven is different and cooking times can vary

Super easy homemade marinara sauce.

This simple sauce can be used for a wide variety of things, use it in pasta, meatball subs or even our family favourite chicken parmigiana. So lets kick those jarred sauces to the curb and make our own !

What you will need.
2 Tbsp extra virgin olive oil
1 small onion or 1/2 a medium onion diced
3 garlic cloves minced (get it as fine as you can)
28 oz or 1 large can of crushed tomatoes (the one with herbs and spices for extra flavour but plain is fine)
1/2 tsp dried oregano
1/2 tsp dried thyme
1/2 tsp dried parsley
1/2 tsp dried Italian seasoning
1/2 tsp sugar
1/2 tsp sea salt
1/4 tsp black pepper
1-2 tbsp fresh basil minced (optional but reccomended)

Instructions:
Place a medium saucepan over medium heat and add 2 Tbsp olive oil.

Once the oil is hot, add chopped onion stirring often until soft and golden (about 5 min).

Add minced garlic and cook for 1-2 minutes

Stir in crushed tomatoes and all the dried spices, salt, pepper and sugar.

Bring to a light boil then reduce heat and simmer partially covered for about 15 minutes.

For a smoother sauce you can use a blender or an immersion blender to get rid of all the chunks or for a chunkier consistency
mash up the chunks with a wooden spoon or utensil of your choice.

Add in your fresh basil and your done !

Super quick and easy, very simple but taste great.

Just recorded my first video making the Spanish rice for our burritos tonight. Here’s a sneak peek of the rice. This is my first time ever making a video so it’s not going to be the best. I’m waiting for my tripod to be delivered so once that gets here videos will be a lot more stable! I’m still learning and you guys get to watch me, how lucky are y’all !

Low carb Philly cheesesteak "sloppy joes"

I decided for my first post I would share something quick and easy, my family loves sloppy joes but sometimes we like to mix up a traditional dish. I eat fairly low carb, but my family doesn't so if you want to go the more traditional sloppy joe route you can serve the meat portion on a nice fresh brioche bun or bun of your choice just like I did for my family. Lets get into the recipe shall we,

What you will need.
1 pound ground beef (lean or extra lean)
2 tablespoons butter
1 small yellow onion diced
3 green peppers halved and cored
Half of a container of mushrooms diced
2 tablespoons ketchup
1 tablespoon worcestershire sauce
1/2 teaspoon salt
1/2 teaspoon pepper
1 tablespoon cornstarch
1 cup beef broth
8 ounces Provolone cheese Slices chopped
6 buns of your choice if you aren't interested in low carb.

Instructions :

Brown ground beef (cast iron pan preferred, normal skillet is fine)

Once nice and brown remove from pan leaving behind any grease

Add butter to the pan with your onions and mushrooms (and diced green pepper if your going the traditional route with buns)

Sautee until tender

Once tender return your beef into the pan with the veg

In a small bowl or cup mix cornstarch and beef broth together.

Add the ketchup, worcestershire, cornstarch mixture, salt and pepper to your beef

Cook until most of the liquid has evaporated (about a quarter of liquid left)

Mix in your provolone

If you are serving on buns, toast up your buns, top with meat mixture and serve.

For the low carb version you will fill your halved peppers with the meat mixture and place in a preheated oven at 350 for about 15-25 minutes depending on your desired softness of the pepper.

Top with some shredded cheese, because you can never have enough cheese and enjoy !

Welcome everyone !
Thank you for liking the page. I'm new to all of this stuff so you'll have to bare with me while I get the hang of everything. There isn't much here yet but soon enough I will have some recipes and videos up, I might even dip my toes into doing some lives as well we will see lol.
