What does it mean to nourish? “Provide with food or substances necessary for growth, health and good condition”.

I used to serve guests all the foods I don’t normally eat. Cakes, pastries, fried goods — Processed carbs, refined fats — foods conventionally considered as celebratory. I ate it too and paid the price by feeing sluggish and drained the next day. Nothing about this promoted health or good condition. Maybe a bit of growth of a belly ! I do not know how we came to the belief that serving that which is harmful to our bodies is what we serve our loved ones and guests.

Nowadays, serving only foods made of locally sourced or organic ingredients, with healthy fats and protein forward - time with guests is truly nourishing in all sense of the word. Body, mind and spirit.

These guidelines make me innovate. I love to take a classic recipe and reshape it into a completely nutritious alternative. Yesterday the result was these stuffed mushrooms. They were decadent in taste and every calorie was nourishing !

I took equal parts whole milk cottage cheese and and plant based beef combined with oregano, chive, basil, chili flakes, salt, raw Parmesan and tomato paste. Stuffed and baked until golden.

I really enjoy reworking recipes from non-food to real food.

Aldi's spicy no chicken burger in a wholemeal bun with UFO burger sauce, grilled pineapple, onion, tomato, 'bacon' & smoky cheese.

I've tried to make this meal healthier by air frying the burger, using a wholemeal bun & baking the wedges with the skins on.

I was so excited to receive a box of goodies from the lovely people .food

VFC are a game changing brand who make incredibly delicious vegan fried chicken. In the box was chick*n tenders, popcorn chick*n & chick*n fillets. Available from Tesco.

This is their new recipe which was great before but now a 10/10!

The fillet was served in a toasted brioche bun with Applewood cheese, UFO burger sauce, red onion, lettuce, tomato & gherkin.
