Bengali Mutton Curry Recipe | Kochi Patha'r Mangser Jhol |

The Home Kochi Patha'r Mangser Jhol, or Bengali Mutton Curry: Smaller the Goat tastier softer the curry and that’s why this runny Goat meat/ lamb curry from Bengal is known as Kochi Pathar Jhol! Kochi means “Small” and Patha depicted for “Goat.” This dish requires no introduction at all especially to the Bengalis! Call the runny Mutton Curry with big potato chunks by any name, Kochi Pathar Jhol or Mangshor Jhol or the Bengali Mutton Curry or Aloo diye Khasir Mangsher Jhol is a comfort food to the Bongs! We love to have it at part of our lethargic Sunday Lunch along with plain rice.

Bengali Mutton Curry Recipe
Preparation Time: 15 minutes
Cooking Time: 30-40 minutes
Serves: 4

INGREDIENTS LIST :-
For margination :
Mutton – 1 kg.
Onion paste – 2.
Chopped onion – 2 medium.
Ginger – 1 inch.
Garlic cloves – 10 to 15.
Green chilli – 4.
Curd / Dahi – 1 cup.
Turmeric powder – 1 tsp.
Red chilli powder – 1 tsp.
Cumin powder – 1 tsp.
Coriander powder – 2 tsp.
Garam masala powder – 1 tsp.
Salt to taste.
Mustard oil – 2 to 3 tbsp.

Whole spices for tempering :
Bay leaf – 2.
Green cardamom – 3.
Cloves – 7.
Cinnamon sticks – 1.
Cumin Seed 5 gm.
Whole black pepper – 5 gm.

For gravy :
Mustard oil
Salt to taste.
Finely sliced onion – 2 large.
Ginger garlic paste – 1½ tbsp.
Tomato paste – 1.
Fried potatoes – 2.

Roopchanda bhaape, also known as Roopchanda Shorshe bhapa (or bhaape) meaning steamed mustard Chinese Pomfret, is a Bengali recipe of Chinese Pomfret fish steamed in a potent mustard, doi (yoghurt) and coconut milk. Even though it looks very polished, it is a fairly easy recipe to execute, requiring few ingredients, no special technique, and very little time.

This steamed mustardy Chinese Pomfret a classic Bengali Fish dish – Roopchanda Shorshe bhapa. Maach/Fish is another way to celebrate our love for pairing fish with mustard. Steaming is a much loved cooking technique in the Bengali kitchen, especially with super fresh fish.

Roopchanda Shorshe bhapa
Preparation time: 10 minutes
Cooking time 20 minutes
Serves: 3
Course: Main

INGREDIENTS
500 g (or 6 pcs) Roopchanda machh (Chinese Pomfret, 3-cm-thick pieces)
40 g Mustard seeds (yellow, soaked for 2 hours)
7 pcs Green chillies
40 ml Coconut Milk
25 g Yoghurt (beaten)
22 g Salt
1 tsp Turmeric powder
20 g Mustard oil

If you've been to an Indian restaurant, chances are you've seen butter masala on the menu. It's a rich and delicious gravy curry with a sauce made creamy through the addition of milk or cream and butter. This vegan mushroom butter masala is a spicy, creamy and delicious dish

Ingredients
200grms mushrooms, chopped
Cloves, chopped
Chilis chopped
1-inch piece ginger, grated
2 onion, chopped
2 big or 3 small tomatoes
8 cashews
Red chili powder
Garam masala powder
Turmeric powder
Fresh milk
Butter
Refined oil
Kasuri methi/dried fenugreek leaves
Salt, to taste
Coriander leaves, for garnish
