I keep reading this Myth. It seams to be all over the internet right now.
"It’s dangerous to use metal spoons with honey" or "You'll destroy your honey by using a metal spoon."
While honey is acidic, scooping your honey with a metal spoon will not hurt your spoon or your honey. (This is a quick process.)
However, storing a metal spoon within your honey for long periods of time can.
Most beekeeper use stainless steel in the process of extracting your honey. So if this was true your raw honey would already have ruined our equipment and the properties in the honey would also be gone.

The difference in colors has to do with what the bees were harvesting from.
The darker is from the spring and start of summer. (All those trees and wildflowers that made some of us sneeze.)
The lighter from just before sourwood started blooming till shortly after is stopped.
We have both still in stock and for local pickup.
