Are you looking for somewhere and something new to go check out? Do you have friends or family that don't drink but want to hang out? Do you have kiddos, but you can't find a sitter? Well, we have something for everyone. We are family and community driven and want to create a space for everyone. We are also BYOF, bring your own food. We do have a small space and occupancy for 35 people, but don't let that deter you from coming out and becoming a part of the Texas Longhouse family.
A Viking Longhouse was a place for the community to gather, connect, celebrate, mourn, and work (if need be). So stop on by for our soft opening Wednesday thru Saturday from 2pm to 8pm, until November 27th. Pull up a chair, grab a drink from our current limited menu, tell us your story, and we will tell you ours.

Come out Wednesday from 2-8 for our soft opening. We are also fortunate enough to have awesome neighbors. Wylie Urban Farm Co-Op will be opening soon and will bring you fresh from farm to table foods. Go check them out and follow them for their opening.

Nordic Jord is officially in the barrel! We added some fresh vanilla beans from out of Hawaii. This will add some deep rich vanilla notes while the barrel adds some other spice notes as well as some extra vanilla notes from the barrel. Hoping to have this ready for the grand opening in December since these barrels impart the barrel character rather quickly when compared to a traditional barrel.

Nordic Jord and Sukulathi Jord are still being worked on and are not available yet but we are getting ready for them to come out. We can't wait for you to pull up a seat and enjoy our meads.
As you know, or if you don't, we are a small-scale production meadery, and we do all our bottling and canning by hand, with a little help. Today, we did a small test run of our canning setup. We are letting these sit for a few days to evaluate the longevity of canning for our to-go sales of our session meads.
EXCITING NEWS! We passed our final inspection and have been approved to open for business. We will be starting our soft opening very soon. We will have a limited menu to start with as some of our meads require some time to fully develop their flavor profile. After all, we want to provide you with the best meads we can. Our soft opening hours will be Wednesday thru Saturday from 2 pm to 8 pm. Stay tuned in the coming days for when we are ready for you to come join us on our journey.
Got some bottling done today. Our first bottling run was Tyr’s Vindrue, which is a Chilean Malbec with Avocado Blossom honey and aged on a blend of American and Hungarian oak. Waiting for labels to be delivered, and then these will be ready for sale. This is the exact same recipe that we have won several awards for at different mead competitions. Keep an eye out for when these are ready for sale.
Double filtering day. Our Jungle Blossom traditional and our Bochet Acerglyn are being filtered and rest for a week before they go into our Amburana barrels. These make the meadery production space smell amazing. A couple months and these will be ready to bottle since Amburana wood imparts it's flavor rather quickly.
Hard at work here at the meadery. Still playing the waiting game with county but I think we might have it sorted out and back on track. We just got more honey delivered because we can never have too much. Our cans showed up today as well. Once the session meads are carbonated and labels approved from state we will start getting it canned up for you to enjoy. Also added some new parts to our tanks to get them all cleaned up and ready to make more meads. Just know we are trying as hard as we can to get this process moved along so we can get you in our seats.
It's filtering day! We start by aging in the tank, then getting the mead in the tank as cold as we can (also known as cold crashing) to get as much of the sediment in the mead to come out of suspension. Once that has happened, it is run through a corse filter to get the majority of the remaining sediment out. From there, it gets put through a final filter to clean it up and remove any microbes such as any remaining yeasts. This serves to help stabilize the mead to prevent any further fermentatio. For some of our meads, we also add some sulfite to retain color and to prevent any oxidation during any other moment of the mead such as bottling or canning. However, we try to minimize all oxygen exposure by using pumps, lenticular filters, and vacuum bottling, which are all sealed.
Drink more mead!
Steaming barrels today to make they are fully swelled, sealed, and ready for some meads to age in. First up will be our semi-sweet traditional that will age in one of the four Amburana barrels (also known as Brazilian oak). We also are getting the final pieces of our bottling and canning station. We will have 750 ml and 375 ml bottles for our still (non-carbonated) meads. We will also be doing cans for our session (under 7% carbonated) meads. Happy Mead Day! How did you spend your day? We spent the day making room for a new tank that is being delivered this coming week. Also got all the kegs taken apart and deep cleaned and ready for mead, that was just filtered, to go into them in the coming week. We are just waiting for final county occupancy approval so we can have yall fill the seats in the taproom. Enjoy any mead you can and remember...
DRINK WITH HONOR!
We had an amazing day. This was our first official event and pouring. I'd say I was super critical of our meads but we ended up pouring over 250 drinks. Thank you to everyone for your love and support.
Texas Mead Fest is almost here. Here is the list of our samplings that will be available. We unfortunately will not have any of the meads for sale at the moment, but we will have other merchandise for sale. So be sure to get your tickets now and we hope to see you there.

EXCITING NEWS!!! We have our state license. We just have to finish up inspections with county and integrate with our point of sale system, and we will be ready to go. We are working hard to get as many meads ready for yall to enjoy, such as this watermelon mead that is ready to be carbonated. We also have our first federal label approval for our Chilean Malbec with Avocado Blossom honey that is aged on a special mix of Hungarian and American oak. Once the state returns our label, we will be bottling it up and ready to sell. Day by day, we are getting closer.
We are out tonight supporting the first responders (I am a Paramedic after all) with 2 tables at the boxing matches tonight. So, consider donating to support your local first responders foundation if you have one. More pics to come later.
Do you like maple flavor? We just got an order of maple syrup from and it is a significant part of our award winning recipe for Nordic Jord. This is a bochet acerglyn (caramelized honey and maple syrup) that is aged on vanilla beans and then barrel aged. Nordic Jord will be a labor of love and patience as it will be several months before it is ready, but the wait is well worth it!
As of now we're planning on being there to advertise the meadery. If state comes in time we will have some limited meads to taste/buy. We are working hard to get more ready.
Just a reminder for local founding members, we will be at the meadery today from 12-4 if you would like to come pick up your rewards. Google Maps and Waze has location wrong on the map (currently being updated but can take 24 hours). If you don't see this entrance with signs for Texas Longhouse Meadery, then it's the wrong location. We are located on E Stone Rd that travels east and west, not Stone Rd, that travels north and south. Hope to see yall soon.
Great news. HATS ARE IN!!!! And we have started pouring the epoxy on the bar. Can't wait to show the final result. Stay tuned. If you are picking up your rewards, we now have everything ready to be picked up. Don't forget we are available for you to stop by this Saturday 12-4.

It's been a long process to get to this point. Over 800 tiles were painted, 135 names were written, and tiles had sealer coating applied. They were all laid out, picked up, laid out again in a different pattern design, and then individually glued down. Now, the prep work to pour the epoxy. The founding member cards have also arrived, so those backers who opted for a shirt with their glass will start getting shipped out. We are still waiting on the hats to arrive to ship out those rewards.
Mead number two is in the tank!. This was one of our award winning homebrewed meads. This was also one of the highest request meads by those in the know. Chilean Malbec mixed with a dark robust honey and aged on oak.
