Spanish Garlic Toast
"The best healthy snack fast and yummy."

Ingredients
 1 (1 pound) loaf bread, thickly sliced
 5 cloves garlic, peeled, or more to taste
 1 fresh tomato, halved, or more to taste
 1/4 cup extra-virgin olive oil, or as needed
Instructions:
1. Set oven rack about 6 inches from the heat source and preheat the oven's broiler.
2. Toast bread slices until golden and crunchy, 3 to 5 minutes.
3. Rub toasted bread with garlic cloves until evenly covered; rub with cut side of tomato until evenly covered. Spread olive oil evenly over slices with a pastry brush or by hand. Season with salt and pepper.

Air Fryer Breaded Sea Scallops

A quick and easy main dish with low carbs and less time. Lightly breaded sea scallops cooked in the air fryer with the same results as deep frying!

Ingredients:
 1/2 cup finely crushed buttery crackers
 1/2 teaspoon garlic powder
 1/2 teaspoon seafood seasoning
 2 tablespoons butter, melted
 1-pound sea scallops, patted dry
Directions:
1. Mix cracker crumbs, garlic powder, and seafood seasoning together in a shallow bowl. Place melted butter in a second shallow bowl.
2. Dip each scallop in the melted butter and then roll in the breading until completely coated. Set on a plate and repeat with the remaining scallops.
3. Lightly spray the air fryer basket with cooking spray. Arrange scallops in the prepared basket so that they are not touching each other; you may need to work in batches.
4. Cook in the preheated air fryer for 2 minutes. Turn scallops over gently with a small spatula and cook until opaque, about 2 more minutes.

Air Fryer Stuffed Mushrooms

"These low-carb mushrooms are easy to make and cook in under 10 minutes in your air fryer. They make the perfect game-day snack."

Ingredients
 1 (16 ounce) package whole white button mushrooms
 1/4 teaspoon ground paprika
 2 scallions
 1 pinch salt
 4 ounces cream cheese, softened
 1/4 cup finely shredded sharp Cheddar cheese
Instructions:
Mince scallions and separate white and green parts.Preheat an air fryer to 360 degrees F (182 degrees C).
Combine cream cheese, Cheddar cheese, the white parts from the scallions, paprika, and salt in a small bowl. Stuff filling into the mushrooms, pressing it in to fill the cavity with the back of a small spoon.
Spray the air fryer basket with cooking spray and set mushrooms inside. Depending on the size of your air fryer, you may have to do 2 batches.
Cook mushrooms until filling is lightly browned, about 8 minutes. Repeat with remaining mushrooms.Sprinkle mushrooms with scallion greens and let cool for 5 minutes before serving.
