Weekend meals, dinner for 2 with big kids! Good old fashioned pasta with marinara sauce and sausage patty with peppers and onions. Made a cowboy caviar as a side no beans of course for Rob!

Kids said let’s get barbecue! I said I feel like cooking. Chicken thighs with homemade BBQ sauce, cowboy caviar, and garlic sautéd spinach. Was very yum. Recipe anyone?

Homemade meatballs, leftover meat sauce=yummy dinner. Ingredient list below. I was going to pickup some pasta salad as a side and it looked so sad just made my own see below . Meatball Ingredients: 1lb chopmeat, 1 egg, 2 tablespoons Italian seasoned breadcrumbs, 1 slice of white bread soaked in 1-2 tablespoons of milk, 1tsp salt, 1/2 tsp black pepper and granulated garlic, 1/4 cup grated Romano or Parmesan cheese, 1 tablespoon of dried parsley. Made 5 big meatballs. Pasta salad:1 package frozen cheese tortellini, 1 tablespoon shredded carrots chopped, 1/4 cup chopped onion and sweet pepper, used some balsamic salad dressing that’s it!

Spaghetti with cod (merluzzo), tomatoes, garlic, and lemon. Meatless meals during lent growing up included this amazing dish my mom made. So quick and easy and tastes amazing. Recipe in the comments.

Lemon chicken alfredo and chicken Parmigiano. When you have 2 kids at home with different tastes!
First time with lemon alfredo. Made my usual alfredo, then added juice of 1 lemon and lemon zest. Chicken is made francese style. Was really good!

Pomodori passati. Garden tomatoes boiled till the skin is peeling, then through the food mill (I used ), then onto the stove with 2-3 cloves of garlic minced then lightly browned, 1 can of tomato paste to have a thickened sauce, olive oil, salt, black pepper, and fresh basil. Nothing beats it! 🍅

. Italian Mac and cheese. Couldn't find a recipe that looked good so combined a few.

12oz spaghetti
1cup Romano cheese grated fresh
1/2 cup parmesan cheese grated fresh
2 tbl butter
2 tbl olive oil
1tsp pepper or to taste if too much
3 cloves garlic, pressed
Cook pasta according to directions. Drain but reserve 1/2 cup pasta water. While pasta is cooking, melt butter and 1tbl of oil in pan, add garlic and pepper and toast for 2-3 min. Add to a large bowl to cool down.
Once cool add the cheeses (reserve about 1tbl of Romano cheese to serve with) and stir till it looks like a paste. Add the pasta and stir then add the water and stir vigorously to mix and avoid the cheese clumping (it probably will but no worries 🙂). Once all melted add the rest of the olive oil and stir to give it a shine before plating. In the plate add the rest of the grated cheese and some black pepper. Nice Pino grigio wine goes well.
