Note to self. Don't take a glass stand mixer bowl out of a just finished dishwasher & run cold water in it. It doesn't end well.

What does 63 dozen mini cupcakes really look like? 120 cups of flour. 68 cups of powdered sugar. 5.5 lbs of butter. 2 lbs of cream cheese. 7 cups of oil. 42 eggs. 8 egg whites. 80 cups of sugar. 13 hrs in the kitchen over 2 days. Transported in 4 thirty one brand large utility totes. And almost time to serve them up! Thank you Brookside Church for allowing me to serve our community today!

Have you ever wondered what 60 dozen mini cupcakes looks like? I never really had but I'm honored to be doing a special service tomorrow at my church, Brookside Church, where I'm bringing 60 dozen mini cupcakes. I will post pictures of all of the cupcakes tomorrow!

Graduation season is winding down. 7 dozen cupcakes & 5 dozen dessert cups. And of course, I forgot to take pictures until halfway through the party 🤦‍♀️

Good news, I'm back & ready for action!! I will be cleared from the limitations from my foot surgery on Wednesday June 12!

Why do I always forget to take pictures?!🤦‍♀️

I delivered 2 dozen standard cupcakes Friday night & 7 dozen mini cupcakes tonight.

I'm having foot surgery on Thur April 11, so I will not be able to take any more orders from now until June 10.

Also, I'm completely booked on June 15 with 2 graduation parties so I can't take any more orders that day.

My 3 yr old kiddo on the spectrum decided to put his potty training seat over his head & it got stuck. 40 minutes later, after lathering him up in coconut oil, I had to call the fire department. 4 firemen cut him out of the potty training seat.

Having a kiddo on the spectrum is hard & full of a lot of unknowns. This experience could've been so much harder but the 4 firemen that helped him out were so patient and caring. I know they're trained to remain calm in all circumstances but they were AMAZING. So, to say thank you, I took them cupcakes today. And of course I forgot to take a picture of the cupcakes. I DID get a picture of my kiddo with the toilet seat stuck around his neck. And then one of the cut toilet seat to keep as a trophy. 🤦‍♀️

Whew, busy night last night. 4 dozen dessert cups & 5 dozen mini cupcakes made last night & being delivered today.

I have thought of expanding the menu with new items. I tried cookies and, for some reason, I can not make cookies. I tried 8 or 9 flavors and only one was good. So, cookies are out.

After cookies failed, I considered gourmet brownies but I'm not sure how many flavors of gourmet brownies there are out there.

So, what flavors of brownies are your favorite? What kind do you not like?

I tried Red Velvet brownies with a cream cheese glaze last night for a ladies event at my church and they were DELICIOUS.

I also made a new flavor of dessert cup that is now available - Red Velvet. It's a red velvet crust with a cream cheese mousse topped with white chocolate chips. So rich but so decadent!

2023 was a busy year, however, more often than not I forgot to take pictures. So, since It's been a while since I've posted anything, I want to reintroduce myself & what I do.

My name is Bridget & I make 2 types of desserts. Gourmet cupcakes and dessert cups.

My cupcakes are not your average flavors - 27 flavors to be precise. Almost all of my cupcakes are filled, however, if filling isn't for you, I do have some unfilled options available. They are available in standard & mini size. I have endless possibilities for colors of buttercream and sprinkles/toppings. I do not do any fondant work but I can do decorations with melted chocolates (in almost any color)

My dessert cups are a mousse type dessert. They are available in 2 oz or 4 oz servings. There are quite a few flavors available in the dessert cups as well.

I would be so honored if you let me celebrate your event with you. Anniversary, wedding, baby showers, bridal showers, Bachelorette party, birthdays, graduation parties (I already have 2 parties on the book for June), holiday gatherings, work parties, or just because it's a Tuesday and you want something sweet.

I get a lot of questions about dairy & gluten-free. So, I decided to try to get as much information out about dietary needs & my cupcakes. If you have any additional questions, feel free to comment or send me a PM.

GLUTEN FREE
- gluten-free cupcakes are ALWAYS made 1st thing before any gluten containing cupcakes are made. They get moved to a box as soon as possible & marked so they don't get confused or stored too close together until they are either picked up or delivered.
- gluten-free cupcakes are made with a different bowl & mixer.
- the frosting NEVER has gluten in it. Some of the toppings have gluten, but I can substitute the topping out for a gluten-free option (like sprinkles, sugar crystals, chocolate decorations, etc)
- my family has both intolerance & a full-blown allergy to gluten, so I understand how important being completely gluten-free is.
- there may be additional charges based on cost of products. This is due to the increasing prices of groceries & food items

DAIRY FREE
- dairy free options are also made 1st so there isn't any kind of cross contamination
- for the recipes that need milk, the dairy free options are made with rice, oat, almond or coconut milk. The type of milk I use is up to you & your preference or dietary needs
- the only flavor that CAN NOT be made dairy free is Pistachio. I am working to find a dairy free alternative.
- the dairy free cream cheese I use is coconut or coconut & potato based
- the dairy free butter I use is canola & olive oil based
- there will most likely be an upcharge for most dairy free options (not including buttercream) due to the cost of dairy free products. Specifically, dairy free cream cheese. This is due to the increasing prices of groceries & food items. However, dairy free buttercream frosting will currently have no additional charges. If this needs to be changed, I will create a post explaining the increase.

At this time, I am not offering keto or vegan options. It could be an option if requested, but there will be additional charges due to my time spent researching products & the cost of the products themselves.

Additional questions I get frequently:
- cupcakes keep longer in the fridge, usually lasting at least 6-7 days.
- all flavors EXCEPT peanut butter can be frozen for up to 3 months. It is not recommended to freeze the peanut butter flavor because the oils will separate in the freezer & it won’t taste the same.

I also made a couple chocolate cupcakes with buttercream that are completely dairy free for a little one that couldn't enjoy the cake pops (due to dairy)

I am able to make dairy & gluten free cupcakes!!

Every time I get a cake pop order I always say it's the last one & I'm not doing cake pops anymore...and then I get another order. Something always seems to go wrong! This time is no different but they turned out so good. (if I can say so myself) 60 cake pops in 3 different flavors: chocolate, chocolate peanut butter & chocolate chip. All decorated the same - navy geode! Super cute!!
