Soft Pumpkin Snickerdoodles 🎃

Delicious and easy Pumpkin Snickerdoodles infused with pumpkin puree and warming spices!

Ingredients:

1/2 cup butter, softened
1 1/2 cups sugar
1 egg
1/2 cup pumpkin puree*
3 cups all-purpose flour
1 teaspoon cream of tartar
2 teaspoons baking soda
1/4 teaspoon salt
1 teaspoon pumpkin pie spice or 1/2 teaspoon cinnamon, 1/4 teaspoon allspice, 1/4 teaspoon nutmeg, 1/4 teaspoon ginger

Cinnamon Sugar Mixture:
2 tablespoons sugar
2 teaspoons cinnamon

Instructions:

Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius). Line a baking sheet with parchment paper. In a large mixing bowl, cream together the softened butter, sugar, egg, and pumpkin puree until smooth. Add the flour, cream of tartar, baking soda, salt, and pumpkin pie spice (or individual spices). Mix until a dough forms. In a small bowl, mix together the sugar and cinnamon for the cinnamon sugar coating. Roll the dough into 1-inch balls, then roll each ball in the cinnamon sugar mixture until coated evenly. Place the coated dough balls on the prepared baking sheet, spacing them evenly. Lightly press down on each dough ball with the back of a spoon or your fingers to slightly flatten. Bake in the preheated oven for 8-10 minutes, or until the edges are set and the cookies are just beginning to crack on top. Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. Enjoy these soft and flavorful Pumpkin Snickerdoodles!

A section of the new platform, titled “Empower American Families,” says “Republicans will promote a Culture that values the Sanctity of Marriage, the blessings of childhood, the foundational role of families, and supports working parents. We will end policies that punish families.”

Many took this to mean the party was softening its stance on gay nuptials in a nod to growing public support for same-sex marriage, even among Republicans. However, some academics and critics say the language in the new platform is nearly synonymous with the previous “one man and one woman” references and doesn’t mark a shift at all.

Cinnamon-Sugar Snickerdoodle Donut Muffins

Ingredients:

1/2 cup unsalted butter, softened 🧈
1/2 cup granulated sugar 🍚
1/2 cup brown sugar 🍯
2 large eggs 🥚
1 teaspoon vanilla extract 🌼
1 1/2 cups all-purpose flour 🍚
1 teaspoon baking powder 🌟
1/2 teaspoon baking soda 🌟
1/2 teaspoon salt 🧂
1 teaspoon ground cinnamon 🌟
1/2 cup buttermilk 🥛

Cinnamon-Sugar Coating:

1/2 cup granulated sugar 🍚
1 teaspoon ground cinnamon 🌟
1/4 cup unsalted butter, melted 🧈

Directions:

Preheat oven to 350°F (175°C) and grease a muffin tin or line with paper liners.
In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
Beat in the eggs, one at a time, then stir in the vanilla extract.
In a separate bowl, whisk together the flour, baking powder, baking soda, salt, and ground cinnamon.
Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk, beginning and ending with the dry ingredients. Mix until just combined.
Fill the muffin cups about 2/3 full with batter.
Bake for 15-20 minutes, or until a toothpick inserted into the center comes out clean.
Allow muffins to cool for a few minutes in the tin, then transfer to a wire rack.
While the muffins are still warm, prepare the cinnamon-sugar coating. In a small bowl, mix together the granulated sugar and ground cinnamon.
Dip each muffin top into the melted butter, then roll in the cinnamon-sugar mixture until well coated. Enjoy! 😋
